Meal Planning for a successful Week!!

BLAH - that is what life has been like lately or should I say a BLUR!!

So much has been going on and most days I feel like I am barely staying afloat!!

You know what I mean?

Between working my 9-5 job, beachbody coaching, mom of 2 very involved kids, housework, volunteering, head chef at the Horcher house (only chef really!) and I am sure I could add a few more jobs onto the list but I think you get my point. I know I am not alone with the overcrowded schedule as this is how most of us live our lives anymore.



The good news is that there are a few tips and tricks I have learned and many I plan on continuing to learn that help me get it all done and well through it all....

First that has been my saving grace for quite some time - MEAL PLANNING and PREPPING for the week ahead. Let's face it - we all need to eat and drink to survive yet I know so many that forego eating because they are too busy. I also know many that REALLY want to eat healthier but say they don't have time to cook healthy meals. Meal planning and prepping helps me take care of both of these excuses!! YEEESSSSSSS - at first it takes time to find and get into your groove but once you do MY GOODNESS you are golden.

When you have a plan in place and the food prepped and ready to go it makes running out the door on time (or GAH - EARLIER!) easier. It also makes running home and warm up and eat a healthy dinner possible!!

This is how it worked in my house yesterday...
Let me back up when we arrived home late Saturday evening after being gone for a week..
Sunday came and piles of laundry had to be done, our fridge was empty, we were all tired, luggage and more was scattered all over our downstairs. I knew what I had to get done though and so I got started -
Step 1: The meal Plan
Step 2: Grocery shopping
Step 3: Cook food
Step 4: Portion Food
 and in between did my other daily duties as well but guess what I got it done.

Having a plan in place and food ready to go, meant putting our lunches together this morning was a breeze.
Coming home from work and then picking up kids I was able to quickly throw dinner on the stove to heat it up.

While dinner is heating I helped my kids with their homework. If I hadn't prepped our dinner I have no idea what we would have ate and I probably would not have had the time to help with homework.

Meal planning and prepping totally make my life easier and these days I will take whatever easy I can get!!

Peanut Butter Cup Overnight Oats


Yes, yes....I am still obsessed with Overnight Oats!!

There are so many great recipes out there that I have to keep on trying and creating my own healthy versions.

This recipe today was inspired by a coworker - she saw me with my overnight oats one day and decided to give it a try. Thankfully for her, she found a delish peanut butter cup recipe and shared!! 
My next step was taking that recipe, adding a few changes, and voila....

I give you...

Peanut Butter Cup Overnight Oats

Ingredients...
2/3 cup old fashioned oats
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 teaspoon - 1 tablespoon cocoa powder (all depends on how much chocolatey taste you like!)
2 teaspoon peanut butter
1/2 teaspoon pure maple syrup
3/4 cup water
1 tablespoon dark chocolate chips (optional)

Directions... 
Add all ingredients to a mason jar and mix a bit. 
Top with a lid and place in fridge overnight and enjoy the next day either cold or warmed up a bit!! 

Seriously this is a lick your mason jar good recipe!! Enjoy!!

Raspberry-Peach- Mango Smoothie Jar

I am all about snacks and meals that I can fit into a mason jar!! 
When I saw this recipe I am sharing with you today in the Eating Well magazine I knew I could make it into a mason jar recipe!! It was kind of a tight fit but I did it and now I get to share this awesome healthy tasty recipe with YOU!!

Raspberry-Peach- Mango Smoothie Jar

Ingredients...
1 cup frozen mango chunks
2/3 cup plain Greek Yogurt
1/4 cup reduced fat milk (I used water in place of the milk)
1 teaspoon vanilla extra

1 teaspoon chia seeds 
1/4 ripe peach, sliced
1/3 cup raspberries
1 tablespoon unsweetened coconut flakes

Directions...
1. In a food processor or blender combine mango, yogurt, milk/water, and vanilla. Blend until smooth
2. Transfer this mixture to a mason jar.
3. Add in chia seeds first and then top with peach, raspberries, and coconut flakes
4. Screw that lid on and save for later or Enjoy right now!!

Apple Pie Overnight Oats

Tasty Tuesday is here and I am in love love love with overnight oats in a mason jar!

Today's recipe comes from one of my favorite breakfasts - oatmeal, apples, and cinnamon. 
Oatmeal is so darn good for you - eating foods like whole oats are good for the heart. BUT, I gotta say making this fiber rich goodness is such a pain!! 
This is how I initially started on my kick of overnight oats - not having to make my oatmeal in the morning!! 

So I guess it was last week I wanted to try my favorite oatmeal recipes but in a mason jar and doing it as overnight oats. I gave it a stab and WOO HOO it turned out awesome!

Apple Pie Overnight Oats

Ingredients...
1/3 cup old fashioned oats
1 teaspoon chia seds
1/2 cup almond milk, skim milk, any milk you choose
1 teaspoon maple syrup
1/4 teaspoon cinnamon
1 cup apple sauce (nothing added, look for natural applesauce) or 1 apple diced
1 tablespoon chopped walnuts (optional)

Directions...
1. Add all ingredients in a bowl/jar (I used a mason jar) except for the walnuts.
2. Mix it up a little and put a lid over the bowl/jar. 
3. Place in fridge overnight.
4. In the morning eat cold or warm up for ~1minute in microwave. Top with walnuts before serving.

Last but not least - ENJOY!!

Vanilla Berry Cup

Well it wouldn't be Tuesday without a yummy recipe!! 

Normally I have been only sharing recipes on my facebook page but thought I should drop in here and share with you all too!! 

Today's recipe will not disappoint!!

It is packed with protein & complex carbs to give you that one two punch that you need to fill you up and give you the energy to continue on with your day!!

Plus you have the yummy sweetness of fresh berries!!

A ton of great recipes in this guide. It comes along with the Insanity Max 30 workout program. 

This recipe totally caught my eye when I was thumbing through the guide. I personally love plain Greek yogurt with fresh fruit but never thought to add in this recipes secret ingredient....

Vanilla Berry Cup

Ingredients...
3/4 cup plain Greek yogurt
1/2 cup fresh raspberries
1/2 cup fresh blackberries
1/4 teaspoon pure vanilla extract

Directions...
1. Combine yogurt and vanilla extract in small bowl; mix well.
2. Top with raspberries and blackberries
ENJOY!

Now if you want to make life even easier - get those cute mason jars and add your Greek Yogurt, vanilla extract, then berries. Screw that jar lid on and refrigerate. When you are ready to serve - shake it up in the jar and eat or empty from jar into a bowl. I am all for easy so I now eat right from the mason jar. 

The mason jars are super convenient for meal prepping and look super cute!!

Almond Butter Espresso Balls

Now this is a great snack to take on the go with you!! 
Perfect timing as the weekend is here and a lot of us will be out and about!


Almond Butter Espresso Balls

(Makes about 12 servings, 2 balls each)
Total Time: 5 min.
Prep Time: 15 min.
Cooking Time: None
almond butter espresso balls, cafe latte shakeology, shakeology no bake snacks, shakeology recipes

What You Need

  • 1 cup all-natural smooth almond butter
  • ¼ cup raw honey
  • ¾ cup dry old-fashioned rolled oats
  • 1 scoop Café Latte Shakeology
  • ½ cup raw sliced almonds

What You Do

  1. Combine almond butter, honey, oats, Shakeology, and almonds in a medium bowl; mix well with clean hands or a rubber spatula.
  2. Shape mixture into twenty four walnut size balls; place in airtight container.
  3. Refrigerate for at least 1 hour before serving.

  • Total Fat: 14 g
  • Saturated Fat: 1 g
  • Cholesterol: 0 mg

Unstuffed Halupki Soup

Growing up a family favorite was Halupkis and my Mom Mom made the best!! Heck anything my Mom Mom made was fabulous!! It was good ole Home cooking from scratch.

I personally have never attempted to make halupkis but I always thought about it. I still might down the road. 

BUT the reason why I bring up my childhood love of my Mom Mom's halupkis is because this recipe I have to share with you today totally reminds me of them!! 

Unstuffed Halupki Soup

Next time I make it I'll have to remember a pic!!
Ingredients...
2 teaspoons EVOO
1 pound ground turkey
1 medium onion, diced 
1 cup water
1.5 cup beef stock
3 garlic cloves minced
1 medium head of cabbage, sliced and diced
1 28 ounce can of tomato sauce
1 tablespoon Worchestire sauce
1 teaspoon dreid basil
1/2 teaspoon sea salt
1/4 teaspoon pepper
3/4 cups uncooked brown rice

Directions...
1. In a large pot, add EVOO and ground turkey. Heat over medium heat until ground turkey has browed.  
2. Add in onion and sauté' until onion is slightly translucent
3. Add garlic and mix for about 1 minute. 
4. Next add to the large pot water, beef stock, tomato sauce, Worchestire sauce, basil, salt, and pepper. Mix. 
5. Add in cabbage and rice and bring to a boil. Then simmer for 20 minutes. 

Voila your Unstuffed Cabbage Soup is ready! 

After I tasted the finished product I knew for sure this recipe would be sticking around with us for quite some time!

Not only does it taste great, hubby loves it too but it also reminds me of my Mom Mom - BONUS!!

Melt in Your Mouth Pork Tenderloin


I remember the day we would always get the pork tenderloin that was already flavored - some are okay but some have a lot of extra stuff in the ingredients.

Simply remove the package and pop in the oven and voila - yummy, moist pork tenderloin dinner!! 

I never thought I would be able to find a recipe that I could make at home to flavor pork tenderloin...
however I proved myself wrong and I found one!! 

Yummy, healthy, and super easy!! 

Melt in Your Pork Tenderloin
Ingredients...
2 pounds pork tenderloin cut into 2
1/2 cup soy sauce
1.5 tablespoons yellow mustard
2 tablespoons EVOO
3 tablespoons pure maple syrup
1 teaspoon onion powder
1.5 teaspoons garlic powder

Directions...
**includes marinade time**
1. In a large bag add all ingredients except pork and mix. Next place pork in bag and mix so pork is covered in marinade. Marinade overnight or at least for an hour. 
2. After marinade time is over preheat oven to 375 degrees
3. Place pork in roast pan and pour remaining marinade over top. 
4. Cook uncovered for 35-40 minutes or until the internal temperature reads 145 degrees. 
Last but not least - ENJOY!!

This was a dinner my whole family enjoyed so you know when that happens it gets added to the recipe book!!

Italian Wedding Soup

I think you know by now that I love good tasting yummy food!!

Yeah yeah I know not all the things I like to eat are healthy but I would say 80-90% of it is. I am in total agreement with the 80/20 rule for healthy eating!! I do like an occasional piece of chocolate, cookie, pizza, or cake and guess what I am totally okay with eating it!! No guilt, no over exercising, no nothing but simple enjoyment. 

I have found when I follow the 80/20 rule I don't get the feeling of deprivation. That feeling is DANGEROUS and will set you up for failure if you let it in!!

In order to live a healthier lifestyle we need to be following a nutrition plan that is going to fit our goals and our lifestyle.  I eat what I want and 80% of the time I choose healthy!! But don't let me fool you...I didn't always eat 80% healthy foods.  I had to teach myself how to eat healthy and I did it via a health and fitness group on FACEBOOK!! I know who would have thought right? 

Well I came here tonight to share with you a recipe and so I will get off my soap box but I leave you with this one last thought....when venturing into the 20% area - moderation and portion sizes are KEY!!

Okay  now let me share with you that Italian Wedding Soup Recipe

ITALIAN WEDDING SOUP
Ingredients...
1 pound ground turkey breast
1 cup whole wheat breadcrumbs
1 large egg, lightly beaten
1 tablespoon chopped parsley
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1/2 teaspoon ground pepper
1/4 teaspoon sea salt

1 tablespoon EVOO
1 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
8 cups low sodium chicken broth
1 15 ounce can cannelinni beans
4-6 cups chopped mixed greens (kale, spinach, chard, etc.)

Directions...
Meatballs
1. Preheat oven to 350 degrees. 
2. Combine Turkey, breadcrumbs, egg, parsley, garlic, Worcestershire sauce, pepper and salt in a large bowl. Shape mixture into small meatballs (~1 tablespoon or so each) to make approximately 36 meatballs.
3. Place meatballs on a lightly coated baking sheet in the oven for 20-25 minutes
4. When finished cooking, remove from oven and place off to the side 
Note: this can be done ahead of time if needed

Soup 
1. Heat 1 tablespoon EVOO in a large soup pot over medium heat. 
2. Add onion, celery, and carrots, and cook stirring until onion is translucent ~ 8-10 minutes
3. Stir in broth, beans, greens, and finished meatballs.
4. Bring to a boil, reduce heat to simmer and cook until vegetables are tender ~25-30 minutes

Tonight is was dreary and snowing and oh my some nice warm soup to warm the soul was perfect!!
