Moist Yogurt Pancakes with Berries

My kids love pancakes and waffles so I am always searching for new ways to make these delicious breakfast dishes.  When I saw this recipe on the side of my whole wheat pastry flour package I knew it was right up my alley because I normally add Yogurt as a topping to my pancakes and waffles for Protein.  This recipe incorporates Yogurt into the mixture so my family will also get the added protein and I save myself a step. 




INGREDIENTS....
1 cup whole wheat pastry flour (I use Bob's Red Mills WW Pastry Flour) 
1/2 teaspoon baking soda
1 teaspoon baking powder
1 egg
1 cup milk
1/2 cup plain yogurt (I always use plain Greek yogurt)
fresh or frozen berries

DIRECTIONS...
1. Stir together Whole Wheat pastry flour, baking soda, baking powder. 
2. Combine in another bowl the egg, milk, and yogurt.  Whisk.
3. Pour liquid into dry mixture and stir until dry ingredients are blended with liquids. 
4. Pour batter onto hot griddle, add berries into batter mixture on griddle.  Turn once.  

If you prefer to have your berries on top rather than in the mixture, simply add berries to top of pancakes when finished cooking.
