Clean Caramel Popcorn

Friday is usually most people's favorite day of the week 
because it is also the start to the weekend!! 

My family and I look forward to Friday's too because my husband will be off of work for two days and Friday nights we usually try to watch a movie together as a family.  What better to pair with movie watching than POPCORN.  We got one of those old fashioned popcorn poppers and have been hooked on popcorn ever since.  I have looked for different recipes to add more flavor and I came upon this one from a friend.  Oh and it is CLEAN -  you know I love to keep it clean around my house.   


Clean Caramel Popcorn
Warning: This is soooo good you will have to limit yourself on how much you eat.  

Ingredients...
1/4 cup almond butter or peanut butter
1/2 cup honey
8-10 cups popped popcorn

Directions...
1.  In a double broiler, warm the honey over high heat. 
2.  Once honey starts to boil, continue boiling for 1 minute, lower heat to medium and then add in nut butter. Stir with a with a whisk until smooth.  Mixture should be pourable.  
3. Pour over popcorn and mix with a spoon. The mixture is hot and sticky, so don't mix with hands. 
4. Let popcorn sit and cool.

ENJOY!!

Seriously I had to have strong willpower with my portion because this Caramel Popcorn was delicious!! My family loved it and now always ask for it every Friday movie night.

Mediterranean Chickpea Salad

When you read a magazine do you tear out pages or dog ear things you like?  I tear out pages.  As I was reading my one magazine a few weeks ago I tore out this recipe that sounded right up my alley.  I loved all the ingredients and most I could get fresh.  I particularly loved that the recipe included Chickpeas. LOVE those little things!! and they are so darn good for you!!

Anyway, I have a huge stack of recipes that I find places and always plan on trying but have yet to do so.  Well not this one.  This one made it to the top of my pile.  I actually  made this for the first time last week but have been having it again for lunch this week.  It is a wham bam packed salad - complex carb and protein all in one!! Oh and this is vegetarian too!!

Mediterranean Chickpea Salad




Ingredients...
1 can low sodium chick peas, drained and rinses
1/2 pint cherry tomatoes, quartered
1 cucumber, seeded and chopped
4 ounces mozzarella cheese, cut into 1/2"' cubes
1/4 red onion, finely chopped
2 tablespoons coarsely chopped fresh parsley
1 tablespoon lemon juice
Adobo all purpose seasoning with pepper, to taste
1/4 cup EVOO

Directions...
1. In a medium mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, cheese, onions, and parsley until combined; set aside.
2. In a separate bowl, stir together lemon juice and Adobo. Using whisk, add olive oil in slow steady stream, whisking constantly until oil is well incorporated.
3. Toss olive oil-lemon dressing with reserved vegetables until coated completely.
Serve chilled or at room temperature.

Serves 4, Prep time 15 min, Total time 20 min

Today I had this over a bed of spinach and it was awesome!!

INSANITY and Shakeology Transformation Story

Meet Ashley who shed the weight of one whole person with the help of INSANITY and Shakeology.


This is Ashley's story as it was shared on Teambeachbody.com...

"The “old me” weighed 284 pounds, was always tired, really depressed, and thought it was my destiny to be fat, teased, and discriminated against for the rest of my life. For a long time I just accepted who I was and didn’t think I had the ability to change. It wasn’t until I was donating blood and found out that my blood pressure was in the prehypertension range that it hit me: Pretty soon I’d be very sick and it would be 100% MY FAULT! It finally clicked that food and physical activity were directly related to whether I’d live a long healthy life—or a short sick one. And for the first time, I realized that I could actually be in control of my weight—it was not pre-written in my cards to be fat. If I wanted to change my future, I needed to change my present! So I did.

I’ve always had a huge fear of exercising publicly. I’d been laughed at and made fun of so many times for trying to jog or play sports that I was terrified to do it as an adult. So I did INSANITY in my living room where no one could watch me. Because I weighed close to 300 pounds I really had to modify the program a lot, but the fact that I could kind of do what Shaun T. was doing was so incredibly empowering.

One thing I loved about INSANITY was that Shaun T. would tell me that MY goal was to do as many reps as I could, not "Do 50 jumping jacks!" And that really made me feel like I could go at my own pace. I never felt like I didn’t do enough as long as I was pushing myself during every workout. That also made it so no matter how many times I’d do the workouts (it’s been a year now and I’ve done them a trillion times) they never got easier.

In addition to doing INSANITY, I also started drinking Shakeology, which totally improved my life. I’ve always been SO TIRED and Shakeology gives me so much energy to get through my day and my workouts. Plus, Shakeology really helps me stay on track when I go out of town. Any time a healthy meal is NOT available, “I shake!”

One night after working out I got the courage to jog. It was dark out, no one would see me, and I did it. Now I run on the beach, in a sports bra, in the middle of the day, and I don’t care if anyone makes comments or doesn’t like my body. My confidence is so high that I can overlook weird glances and stares because I know how far I’ve come and that I deserve a high-5, not a dirty look.

“The new me” has lost 121 lbs. and 5 feet of flab off my body. My entire life is different—not because I’m skinny, but because I feel so empowered. Finally, I feel in control. I feel like a whole new person. I feel like I can do anything. Not only am I proud of the body I built, I’m MOST proud of all the people I’ve inspired. I’m now a Coach and have motivated more than 1,000 lbs. off of friends and family. I’m relishing in all my ex-fat girl glory!"

Tasty Naked Wonton Soup

OH MY GOODNESS this was one of the easiest soups to make and it was ooh sooo good.  My house smelled amazing all day even to the point when my husband came home from work he said he wanted to try the soup just based on the smell!!

This is another recipe from Tosca Reno's Eat Clean Diet Stripped Book and one for sure I will be repeating again and again!! 


Tasty Naked Wonton Soup



Ingredients...
8 cups low-sodium chicken broth
1 Tbsp thinly sliced ginger (heaping)
2 cloves garlic, thinly sliced
1 whole star anise
1 bunch green onions, chopped, dark green parts divided from the white and light green parts
1 tspsea salt, divided
1 lb extra lean ground chicken (i used ground Turkey)
1 tbsp reduced -sodium Tamari ( I used Soy sauce)
1 tsp  sesame oil
1/4 tsp Chinese five spice powder
1/4 tsp  freshly ground black pepper
4 baby bok choy, cut in half lengthwise
chilli sauce, to garnish (optional)

Directions
1. in a large saucepot, combine chicken broth ginger, garlic, star aniseed, and white and light green parts of green onions over high heat until boiling. Reduce heat o simmer until flavors combine, about 20 minutes. strain broth into la large bowl; pour broth back into saucepot and return to stove over low heat. Season with half a teaspoon salt.
2. In the meantime, combine chicken, tamari, sesame oil, Chinese five spice, remaining half-teaspoon salt, pepper and half of dark green port of green onions. Mix well.
3. Increase temperature under strained broth to bring to a brisk simmering broth to cook through, about 5 minutes. Lay baby bok choy on top of naked wntons cut side down, cover; steam for one minute.
4. Split soup evenly between fur large bowls. Top with remaining dark green onions and chili sauce, if desired.

Serving Size: 4 servings

Last but not least enjoy!! This was such a filling and tasty lunch today!! Rethinking my lunch for tomorrow - I want more Tasty Naked Wonton Soup!!
