Greek Yogurt Cookie Dough

Hmmm, I am all about the clean "treats" this week! I didn't even realize it until now!! I guess it is a good thing I stopped counting calories and stick to good ole clean eating!! 

Tomorrow I am making Zucchini brownies so be sure to stop by and check out that one too!!



So this recipe I made tonight I have had  many times before but have not posted it.  This is so stinkin good and let me tell you your kids will LOVE it!! What is so great you can feel confident having it and giving it to your little ones because look at the ingredients - hello CLEAN!! 




Greek Yogurt Cookie Dough



Ingredients...
3/4 cup plain Greek yogurt
1 tablespoon natural peanut butter
1 tablespoon honey
1/4 teaspoon vanilla
1 tablespoon dark chocolate chips
pinch of sea salt

Directions...
Mix it all together and enjoy!!
and of course if you want to make it look pretty put a few extra chocolate chips on top!

Peanut Butter Chocolate Chip Cookie Dough Bites

Trying to find healthy snacks for my kids has been a bit of a challenge.  Actually the real challenge was weaning them off of all the unhealthy snacks they had been having. I know not the best mom moment for me but I too had been eating not so healthy for a long time and well my habits spilled over to my children.  I do all the food shopping, prepping, and cooking so I am responsible for what goes into my family's mouths.  I am happy to say we are moving in the right direction and when I find recipes like these today I get excited.  I get excited for two reasons 1. healthy "treats" 2. another step in the right direction




Ingredients: 
2 15 ounce cans of chickpeas, well-rinsed and patted dry with a paper towel
2 teaspoon vanilla extract
3/4 cup natural peanut butter 
Note: do not use regular peanut butter the bites will be too oily
1/4 cup honey
1 teaspoon baking powder
a pinch of salt
1/2 cup dark chocolate chips


Directions...
1. Preheat oven to 350 degrees
2. Combine all the ingredients except for chocolate chips in a food process and process until very smooth.  Make sure to scrap the sides and the top to get the little chunks of chickpeas and process again until combined. You want this VERY smooth.  
3. Mix in the chocolate chips and stir if you can or pulse in the food processor.  The mixture will be thick and sticky so I found it easier to remove the mixture from the food processor and combine chips in a bowl.  
4. With wet hands, form mixture into small balls and place on a piece of parchment paper.  If you want the bites to look more like cookies (that is what we called them in our house) press down slightly onto the balls so they are flat.  
The bites do not rise.  
5. Bake for 10 minutes

This is a recipe that had been circulating the internet on facebook.  I had often seen it but thought hmm chickpeas?  I finally decided okay I am going to try it and see and was pleasantly surprised.  Kids tested and approved!! That's a win in my house!!

Transformation Thursday - Migdalia G.

Changing lives one person at a time....


10-Minute Trainer and Shakeology made Migadalia slimmer, and stronger, than ever!

Here's her story, 

"Having a heart attack at the age of 33 wasn't exactly on my bucket list. But my body couldn’t handle the 215 pounds it was carting around, so it crashed. I wasn’t ready to die at 33. And my two daughters and my husband weren’t ready for me to leave them either. So you’d think going into cardiac arrest would be my big wake up call, but it wasn’t. I still ate like crap, I still made excuses why I had no time to exercise, and I was still fat.

Fast-forward to a short time later…I was driving my two daughters across town when I had a high blood pressure episode so bad that I passed out. Lucky for everyone, I pulled over just in time. My girls were hysterical and thought I was dying. After that, the doctor put me on high blood pressure meds—FOR LIFE! That was it. I knew if I kept up my current lifestyle, I’d be dead in no time. And my family deserved more from me.

So when I say that Beachbody saved my life, I mean it literally. 10-Minute Trainer was fast, easy, and effective. And in only 10 minutes a day, not only did I become stronger and thinner, this program left me begging for more! Pretty soon, I worked my way up to exercising 30 minutes a day and felt amazing.

And in two short months…15 pounds, gone. Depression, GONE! Blood pressure, back to normal. And my HDL and LDL levels are better than ever. But the result I love the most is how my belly shrunk. Being able to wear skinny jeans again is the best feeling ever!!! Plus, my arms are showing some definition and I no longer feel tired all the time. My girls now work out with me and are my biggest cheerleaders. I’m so energized every day that after work I play with them and still have enough energy to PUSH PLAY!!! Finally, I feel strong, sexy, and healthy.

But exercising daily was only part of my success formula. The other half was learning how to eat right and drinking my Shakeology daily. Pizza Roll Ups

Lunchtime for my kids usually consists of Peanut Butter and Jelly. This week as I was making my meal plan I was looking for kid friendly meals and I came across this recipe on thegraciouspantry.com (love this site for clean eating recipes!)  I modified the recipe a bit as I was also looking for something 
quick and easy.  


Ingredients...
4 whole wheat tortilla
1 jar clean marinara or pizza sauce
2 cups shredded or finely chopped veggies of choice ( zucchini, bell peppers, mushrooms,etc.)
1 cup shredded mozzarella cheese

Directions...
1. Preheat oven to 350 degrees.  Prepare a parchment lined cookie sheet.
2. Lay each tortilla out flat and cut into triangles with a pizza cutter
3. Spread a thin layer of sauce over each triangle and sprinkle on some veggies and cheese.
4. Roll up the triangles and place on cookie sheet
Note: If the roll ups are not staying rolled because you fill them too much place a toothpick in them to hold together
5. Bake for 20 minutes (this can vary depending on how thick and how full the rolls are, so keep an eye on them).

Optional: In place of the whole wheat tortillas, ou can make your own batch of whole wheat pizza dough. If so you wold cook your dough accordingly and then roll it out into a rectangular shape. Then proceed cutting dough into triangles. 

Not only did my kids enjoy these Pizza Roll ups, I did too. They were my lunch today and I paired it with a spinach salad with vinaigrette dressing.

Sloppy Joe made Clean



Love me some sloopy joes but unfortunately the kind you make from a can is loaded with some not so good stuff and most recipes that I found were well just about the same.  Then I came across this Sloppy Joe recipe and I did have to clean it up a bit but the result was well worth it.  My family loved it! 

Next time I make it I will be sure to take a picture, but this time I forgot. 



Ingredients...
1 tablespoon olive oil
1 pound Ground turkey
1 onion, chopped
1 clove garlic, minced
1 8 ounce can tomato sauce
1/4 cup barbecue sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt 
1/4 teaspoon pepper

Directions...
1. In a large skillet, heat oil over medium-high heat. Add the turkey, cook until browned and break up meat with a spoon ~ 3-5 minutes.  
2. Add onion and garlic to turkey and cook until onion is translucent.
3. Mix the tomato sauce, barbecue sauce, and Worcestershire into the turkey mixture; season with salt and pepper. Reduce heat and simmer until thickened, 3 to 5 minutes.  
4. Serve either on whole wheat rolls, buns, or flatbread.  

We had this for dinner tonight and I paired it with roasted root medley and zucchini sticks.

If you haven't guessed by now, it is very important to me what I put into my body and my family's bodies.  I do majority of the cooking around here.  Yes, not everyone was excited when I said I was making changes to the way we eat but I slowly incorporated the Clean Eating lifestyle.  Yes, the lifestyle - this is not some fad diet program that is here and gone tomorrow.  Clean eating is a term used for the way people use to eat a long time ago.  My body feels amazing now that I have adopted this lifestyle.  My husband has lost weight without working out.  Now do you believe me that eating the right foods are so very important for you especially if you are wanting to lose weight?

Beef Stew (stove top or slow cooker)

Yes it is the middle of summer and it is HOT so why oh why am I cooking a stew?  Well I use to love beef stew and so does my husband.  I came across this recipe and figured why not!!  It is cool inside our house so why not have STEW! 

I was not able to do this recipe in the crock pot as I had originally intended.  I instead did it on the stove top and it was fabulous!! Amazing flavor!! Often I hear from people they do not want to eat healthy because they are not interested in eating bland food.  Well I am here to tell you all the food I eat is rich in flavor and this Beef Stew did not disappoint.  




INGREDIENTS...

3-4 cups of beef low-sodium broth (more if you want it more soupy, I like mine soupy)
2 15 oz. cans stewed tomatoes
2 lbs chopped stew meat
3 carrots, peeled and sliced
2 large sweet potatoes (or regular), cut into bite-size chunks
1 onion, quartered
1 teaspoon Garlic powder
1/2 tsp Black Pepper
1 teaspoon Thyme
Sea-Salt to taste


DIRECTIONS...

Stove Top -
1. Cook meat in a large skillet, until brown
2. Meanwhile in a large pot, add beef broth.  Once meat is done add to beef broth. Bring to a boil. 
3. Add stewed tomatoes, carrots, potatoes, and onion. Stir.
4. Add seasonings, stir. 
5. Cook for about 30 minutes or let simmer for a few hours (I did the simmer part, I feel like it gets the flavor through)

Crock Pot -  
Place all ingredients in crockpot, stir, cook on low for 6-8 hrs or until meat and veggies are very tender.
Optional - Add whole wheat pasta, brown rice, or quinoa. Prepare as normal and then spoon stew over top.  
All that is left is to ENJOY!!

Clean Hashbrowns

My husband loves hashbrowns and although not all hashbrowns make with potato are unhealthy I was trying to find a cleaned up version that was nontraditional.  Here it is...

Clean Eating Hashrowns
In this picture the clean eating hashbrowns are with the Pepper Egg Scramble

Ingredients...

· 1 large jicama 
· 1/2 large red onion 
· 1 teaspoon garlic powder 
· 1 tablespoon olive oil 
· Salt and pepper to taste 


Directions...
1. Find a nice, large, beautiful jicama. 
2. Peel it. You can use a knife or a potato peeler. They peel similarly to an apple. 
3. Grate it on a cheese grater. 
4. Chop your onion. 
5. Put your oil in the pan. 
6. Saute your onions in the oil until they are translucent. Be sure to do this over low to low-medium heat so the oil doesn’t cook out completely. 
7. Add your jicama to the pan and cook, covered for about 10-15 minutes. Then remove the lid and cook until the jicama is slightly browned. 
Note: You can cook this on low heat until it reaches the texture you prefer. But be aware that it WILL have a tiny bit of crunch to it no matter how much it’s cooked.

So before I made this recipe I never had Jicama, nor did I even know what it looked like.  Honestly I had to ask at my  local produce store.  Overall I was very pleased with this recipe.  It was light, yet filling.  I of course had it at breakfast with different egg recipes throughout the week. My husband got to try it over the weekend and he too was very pleased.  Adding this one to the recipe box!!

Jennifer O. Transformation Story

Hey Moms out there want to rid yourself of that baby weight you have been carrying around with you? How many months, years has it been since your child was born?  I  have been there I know how it feels.  What is so wonderful though is that you can rid your body of that weight and do it the right way.  No crazy fad diets or starving yourself.  

Here is an inspirational story about another mom who said no more to the baby weight and she did it in a way that she can keep the weight off for good.  

Meet Jennifer O - not only did Jennifer lose 45 pounds over 6 months doing Insanity and drinking Shakeology daily but she also was a daily winner of the Beachbody Challenge.  Woo hooo - Congratulations Jennifer!!

"When I became pregnant with my son I suffered from morning sickness 24/7. And being as nauseous as I was, you’d think I would have lost my appetite. But NOOOOOOO! Instead, I gobbled up everything in sight; justifying it by saying, “I’m pregnant! I can eat anything I want!” And 9 months later, a beautiful 8 lb. 9 oz. baby boy was born and I was left carting around 60 pounds of excuses. 

Two months had passed and I was still wearing my maternity pants, trying to hide my gargantuan size. But after a while I was tired of my stomach hanging over my waistband and feeling like a slob. Not only did it look bad, it was the most uncomfortable feeling in the world. More than not wanting to end up overweight for the rest of my life, I really wanted to be able to keep up with my son as he grows up and starts running around. So I dug out my set of INSANITY DVD’s (I did it two years ago and got pretty good results) and pressed play. But this time, I told myself I’d push myself even harder as well as be super strict with my diet. And in 6 months, I went from 198 lbs. down to 153, lost 11 % body fat, and shrunk from a size 16 to a 6. Turns out, it wasn’t as hard as I thought it would be to find the time to exercise daily or to eat healthy. 

For starters, I had Shaun T. on my side. I won’t lie, there were PLENTY of times when I wanted to fall down and eat cake, but I didn’t. I just held onto his “keep going”, “don’t give up”, and “digging deeper” attitude. And I love the fact that the people in his videos didn’t intimidate me. They were as exhausted as I was and it felt great when I was actually keeping up with them. It felt even better when they’d fall and I was still going! 

And since I was exercising daily, I figured I might as well start eating healthy daily as well. So I pulled out the nutrition guide and read through it with an open mind. From the very beginning I told myself, no more cheating, no more excuses, no more “EWWW-ing” new foods. And to my surprise, I liked a ton of the recipes. Not only was I saving calories by eating healthy, I was saving big bucks because I was no longer eating lunch out. 

But the real life changer for me was Shakeology. Once I started drinking it daily, my fat literally melted away. I felt more energized, a lot happier, it improved my digestion, and I stayed fuller much, much longer. Once I had my shake for breakfast, I was set up for a day of eating well. I’m addicted to this stuff—but in a good way!
