Planning for the Week Ahead

Another Sunday and another weekend is over.  Wait, Hello I'm a Mom it does not matter if it is the weekend or a weekday!!  I do however have certain tasks I do each day of the week/weekend and Sunday nights is reserved for planning.  I plan for the week ahead and being that today is the last day of June I will also start my July task list as well.

What does my planning for the week ahead look like?  Well first I get out my calendar and I sit down with my husband and we figure out what we have going on the next week.  Then I get busy making sure I plan out my time for my chores, my business, and most importantly my family!!
Yes I plan as best I can for as much as possible.  Now not all plans are written in stone so I have learned over the years to be more flexible.  Next I plan our meals for the week (if you are interested in viewing my meal plan for the week CONTACT ME).  I work around our schedules and always plan on starting the morning with a breakfast that will fuel me properly after my particular workout that day.

Next comes checking my cabinets and pantry to see what I need at the grocery store (I buy in bulk and I do stock up when I can so a lot of food items I do have on hand most of the time at home of course with the exception of fresh fruit and veggies). Next comes my grocery shopping list and then planning on when I will go to the grocery store for those items we need.  As mentioned I buy in bulk and I stock up on items when they are on sale and best is when they are on sale and I have a coupon.  I try to save money wherever I can so thrifty shopping is right up my alley.  Unfortunately coupons for the food items I buy frequently does not happen often. I try to plan all my shopping for one day to also try and save on gas.  HA - I told you there was lots of planning going on!!

After this is all done I work on my business planning for the week.
I revisit my goals and come up with my game plan for the week.  In addition, I always want to make sure I am providing the best possible experience for my customers.  Most of my customers are involved in my Challenge Groups and so another area I plan is what topics I would like to cover during the next week in my challenge groups.  I also try to check in with as many challenge group participants as possible to find out their upcoming week's goals.

DO YOU SET GOALS for yourself on a weekly basis?

Finally I look it all over once it is done and make my to do list for MONDAY!! I always try to make my to do list the night.  I have heard from several top professionals that making your to do list the night before results in a more productive day.  I also sleep a lot better knowing what I need to accomplish the next day is written down and I don't have to try to go off of memory.

So that is what I do to prepare for the week ahead. Do you have any planning tips to share?  If so, please comment below or CONTACT ME.  I am always looking for ways to better manage my time and become more efficient.

Have a great week!!

Pepper Egg Scramble

Love  me some eggs - love them so much that I even got chickens so I can have access to eggs all the time.  Are you an egg fan? Well here is another great egg recipe that is good for breakfast or a snack.

Egg Pepper Scramble

Ingredients...
1 bell pepper
1 tablespoon olive oil
4 eggs
sea salt and black pepper, to taste

Directions...
1. Cut the bell pepper in slices from top to bottom, to resemble rings (usually you get 4 rings).
2. Prepare a skillet with 1 tablespoon olive oil and heat over medium to low heat.
3. Add pepper rings and increase heat to medium
4. In each ring crack an egg and allow it to spread out evenly in the ring. Season with salt and pepper to taste. (personally I used only the egg whites of the egg and discarded the yolk). You can either leave the egg go for a sunny side up version or scramble it a little while in the pepper. (I scrambled mine a bit)
5.  Cook for 3-5 minutes for softer eggs and 6-9 minutes for harder eggs (I like mine a big harder so I was able to flip during cooking).

1 serving is 2 bell peppers

Last but not least enjoy with some hash browns made out of Jicama.  Yes all these recipes follow the clean eating principles that I live by.  Enjoy!!

VANILLA SHAKEOLOGY IS HERE!!!!

YES, you read that right, Vanilla Shakeology is HERE!!

You may have remembered me telling you in a conversation or two that it is highly unlikely for Beachbody to formulate a Vanilla flavor Shakeology.  Well after three years of working to find a PURE and ORGANICALLY grown source, they DID IT.

VANILLA SHAKEOLOGY is HERE

The creators of Shakeology had to go all the way to Madagascar to find a source that was 100% all Natural.  Yes other products on the market claim they are 100% Natural Vanilla but if you do your research you will see in fact they are NOT.  Scary huh!!! I know my eyes were opened when I started looking into this statement further.  So what does this mean regarding Vanilla Shakeology?  It means that Vanilla Shakeology is the ONLY NATURAL Vanilla shake on the market.  No additives and no artificial ingredients.

The old saying you get what you pay for is 100% correct when it comes to Vanilla Shakeology - You are getting the premium product!! The creators of Shakeology have proved again they care about what we put into our bodies and so should WE!! Only the best ingredients are in Shakeology. To get the best ingredients, you have to find them and that is why the Shakeology team has traveled all over the world searching for those ingredients to provide your daily dose of dense nutrition!! Betcha you aren't getting that from your lunch today!!

Let me ask you this, do you know what's in the processed food you buy? Probably not besides a lot of words you can't pronounce.  Unfortunately we have created a culture of accepting poor nutrient starving food.  We can do better than that and we all have the choice of what we put into our bodies.

Don't cut corners when it comes to your HEALTH!!

Ready to take better care of your Body?
Ready to provide your body with what it needs?
Here is your POWER...POWER in a BAG!!!!

Transformation Spotlight - Mom Loses 20 pounds of Baby Weight!!

Any Mom who has carried a child knows there is weight that gets put on during those 9 months of bliss!! Some people put on very little weight and others a whole lot more.  Some moms lose the weight right away and others don't.

With my first child I lost most of my weight right away, with my second it was much harder.  In either case though I was always left with a bit of a belly pooch that always drove me nuts!! I know I am not alone, I am told it is one of the many memories of carrying a child BUT I wanted it GONE!!

This transformation story I am sharing with you today is also about a mom after childbirth who wanted to get rid of some excess she had accumulated.  I think most if not all moms should read this story so you know IT CAN BE DONE - YOU CAN LOSE THAT BABY WEIGHT!!!!

This story was taken directly from TeamBeachbody.com
Meet Fiorella G.! She participated in The Beachbody Challenge and won the $500 Daily Prize for June 12th!

Here is what Fiorella had to say about her experience,

So for the next few months, I wore my maternity clothes. After two and a half months, I stopped feeling sorry for myself, got off my butt, and decided to start working out again. Besides, I didn't want to be a fat and lazy mom. I wanted to be in shape, totally active, and a positive influence on my daughter’s life as she grew up.

To get in shape and lose the post-baby pudge, I did ChaLEAN EXTREME. Not only did this program give everybody on the infomercial the results I wanted, it also looked really fun. So the challenge wasn’t figuring out what to do, but when to do it. As any new mom will tell you, caring for a baby is exhausting. And even though I wanted to work out, I rarely had any energy. But thankfully I signed up for a Challenge Group which inspired me daily and held me accountable for following through on the promises I made to them, and myself. They truly were the most important part of my success.

We had daily “assignments” in the group, which not only made me feel important, it challenged me as well. On the days I didn’t feel like eating healthy or exercising, just knowing others in my group were doing exactly what I “didn’t feel like doing” pushed me to follow through. It’s so beautiful to see how each of us became friends over time, even though we never met in person. We all helped change each other from the inside out. Plus, being able to work out from home was key to helping me losing all that weight because I was finally able to ditch the excuses. It felt like I had a personal coach, in my house, at the exact time I wanted one.

Another huge part of my weight-loss success was Shakeology. I’m a chocolate lover and used to eat so much chocolate that my husband either had to hide it from me, or throw it away because I couldn't control myself. But thankfully, Shakeology helped control my junk food cravings. It made me feel full, improved my metabolism, and made me regular—which I didn’t even know was a problem until it was no longer a problem.

I am so proud of myself for getting in shape the healthy way, and not by some magic pill. Today, I’m way more active, happier, and positive than ever. I went from 138 lbs. to 118 and have totally toned up. Plus, I’ve taken what I learned and am now helping others lose weight. It’s so beautiful to see smiles of others who’ve changed their lives too. Thanks Beachbody, for EVERYTHING! My family thanks you too.

PB & J All Cleaned Up

First I have to say I love love love Tosca Reno!! She is an amazing woman and she has amazing advice to offer in regards to Clean Eating. I have two of her books - The Eat Clean Diet Recharged and The Eat Clean Diet for Family & Kids.  Both of these books have helped me change mine and my family's eating habits.

One of my kids favorite lunchtime meals is Peanut Butter and Jelly and finding clean jelly is not as easy as I thought it would be (and quite expensive) and my berry plants are not producing yet so no go so far on my homemade jam.  So I have been searching for alternatives and I should have thought to first look in one of my Eat Clean Books because there it was.....PB & J All Cleaned Up, page 231 in the Family & Kids one.  Thank you again Tosca!!

PB & J All Cleaned Up

Ingredients...
2 slices bread (Ezekiel bread, rye, or any hearty whole grain bread)
I used 2 pieces of whole wheat bread
2 Tablespoon natural nut butter
I used my  homemade peanut butter
4 or 5 fresh strawberries, hulled and sliced

Directions...
1. Toast 2 slices of your selected bread (today I didn't toast the bread, but have done it in the past and either way it is good).
2. Spread bread with nut butter.
3. Place sliced strawberries on top of nut butter so the nut butter is completely covered with berries.
4. Place the second piece of taost on top of the first.
Cut and Serve!!

Next I want to try different berries and see how I like those. Yes, now I even eat PB&J sandwiches again!!

It is really important for me to find healthy alternatives for my kids.  Most of the time they eat what we eat but there are a few "Kids" favorite foods they still eat so I am always searching for ways to clean up those.  The PB&J was one of the last ones and so I am beyond thrilled to have
this recipe. Hope you and your family enjoy it too!!

Turkey Burgers

When I started eating clean I started to also limit my consumption of red meat specifically ground meat.  Well this meant I had to find a new alternative for many of my family's favorite meals one of them being HAMBURGERS!! Who doesn't love hamburgers and when going to picnics you know that is one of the key staples on the menu.  Lots of parties now do hamburgers because they are very easy to make, serve, and  mostly everyone enjoys them.  Thank goodness for a few of my friends who are also clean eaters and so I was introduced to Turkey Burgers. I would normally buy the frozen patties at Costco but I figured it would be best if I can make them fresh.  I searched for an easy recipe and again thanks to a friend I have found this one for Homemade Turkey Burgers.

Homemade Turkey Burgers

YUM - dinner!!
Homemade grilled Turkey Burgers, carrots, spinach salad, and grilled corn
Ingredients...
1 1/2 pound lean ground turkey
1 egg white
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon poultry seasoning
1/2 cup finely chopped onion

Directions...
1. Mix all ingredients in a medium mixing bowl.
2. Form 6 patties and place them on a parchment lined cookie sheet.
3. Bake at 350 degrees F for approximately 30 minutes or until the internal temperature reaches 165 degrees F.
4. Remove from oven and allow to cool slightly.
5. Build your burger

Option: You can also cook these delicious burgers on a grill over medium heat.

These burgers are delicious and I love the option to either cook in the oven or on the grill.  Regular hamburgers I would never attempt to cook in the oven due to all the grease but because the turkey meat you use is so lean there is very little if any grease left behind.

Moist Yogurt Pancakes with Berries

My kids love pancakes and waffles so I am always searching for new ways to make these delicious breakfast dishes.  When I saw this recipe on the side of my whole wheat pastry flour package I knew it was right up my alley because I normally add Yogurt as a topping to my pancakes and waffles for Protein.  This recipe incorporates Yogurt into the mixture so my family will also get the added protein and I save myself a step.

INGREDIENTS....
1 cup whole wheat pastry flour (I use Bob's Red Mills WW Pastry Flour)
1/2 teaspoon baking soda
1 teaspoon baking powder
1 egg
1 cup milk
1/2 cup plain yogurt (I always use plain Greek yogurt)
fresh or frozen berries

DIRECTIONS...
1. Stir together Whole Wheat pastry flour, baking soda, baking powder.
2. Combine in another bowl the egg, milk, and yogurt.  Whisk.
3. Pour liquid into dry mixture and stir until dry ingredients are blended with liquids.
4. Pour batter onto hot griddle, add berries into batter mixture on griddle.  Turn once.

If you prefer to have your berries on top rather than in the mixture, simply add berries to top of pancakes when finished cooking.

Homemade Hummus

My latest obsession...Homemade Hummus!!I have always loved hummus but also always bought it at the store.  I would get the large container at Costco and I would use it as a dip, a mix for  my egg salad, toppings for different dishes, and so much  more.  Needless to say I go through a lot of hummus.  When I first received a recipe from a friend for hummus I realized how easy it was to  make, next I realized how much crap the store bought hummus contains, and you know me I like to save money so this was also another way for me to save.

Here are two recipes I have tried so far:

Homemade Hummus
from the Eat Clean Diet for Family & Kids by Tosca Reno

Ingredients
1 19 oz. can of chickpeas, drained and rinses
1/4 cup fresh lemon juice
1/3 cup tahini
2 tablespoons fresh cilantro
2 tablespoons extra virgin olive oil
1 clove garlic
1/2 teaspoon cumin
1/4 teaspoon sea salt
1/4 teaspoon black pepper

Preparation
1. Place chickpeas in food processor. Puree coarsely
2. Add lemon juice, tahini, cilantro, EVOO, garlic, cumin, sea salt, and pepper. Process. Add more lemon juice if necessary to thin out.

Voila Enjoy - see it is so easy!!!

and another I received from a friend and challenger....

Garbanzo Bean Dip
1 19 oz. can of garbanzo beans, drained and rinses
3 tablespoons tahini
1/4  - 1/2 cup fresh lemon juice
1 clove garlic
1/8 teaspoon cumin
1/2 teaspoon salt
water
finely chopped parsley and/or pomegranate seeds for garnish optional

Directions
Place all ingredients except for parsley and olive oil in blender and add enough water to just below the level of the garbanzo beans.  Turn on puree and blend well. If thinner consistency is desired, add more water.  Garnish edge of serving dish with finely chopped parsley. Mound 1 tablespoon of whole garbanzo beans in center with a few leaves of parsley.  Pour small amount of olive oil over top.
This may be  used as an appetizer or as a side dish for a main meal.
