Hearty Homemade Tomato Soup


Fall is officially here and the days are getting cooler. 

My house is surrounded by trees so our house always seems chilly. 

Best way to warm up in my opinion is a nice piping hot bowl of SOUP!! 



Ingredients...
2 tablespoons extra virgin olive oil
1 large sweet cooking onion, peeled and chopped
4 ribs celery, trimmed, tough strings removed, chopped
2 carrots, peeled and chopped
3-4 garlic cloves, peeled
1 medium sweet potato, peeled and chopped
2 cups fresh Roma Tomatoes or one 28 ounce can plum tomatoes
4 cups low sodium chicken or vegetable stock OR water
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon sea salt
sprinkle ground black pepper
2 low sodium chicken or vegetable natural bouillon cubes

Directions...
1. In a heavy stockpot heat olive oil over medium high heat.  Add all chopped vegetables and saute until soft and onion is translucent.  
2. Reduce heat to medium and add tomatoes, stock or water, basil, oregano, sea salt, black pepper, and bouillon cubes.
3. Bring to a boil and reduce heat to low.  Simmer for 30 minutes, stirring occasionally. 
4. Using a hand-held blender, puree soup to uniform consistency. 
5. Remove from heat and serve.  Garnish with a dollop of plain Greek Yogurt. 

I made mine a bit thicker by accident and normally I would not like this consistency but this particular soup it worked well.
