Zucchini Cashew Soup

I love Zucchini and I love Cashews but together in a soup? 
Hmmm.....I wasn't so sure! I came upon this recipe from the Ultimate Reset nutrition guide. 
I figured I should at least try the recipe and worse case scenario, I don't like it. 
Well thank goodness that wasn't the case because I loved it. I loved it so much I wanted to share the recipe with you all!! I hope you enjoy as much as I did!! 


Zucchini Cashew Soup

Ingredients....
1 ounce raw cashews (17 cashews)
1 1/2 cups water, divided use
1 1/2 medium zucchinis, cut into chunks
Himalayan salt, to taste
Optional: herbal seasoning blend like fresh basil or dill

Directions...
1. Soak cashews in 1/2 cup water for 1 hour.
2. While cashews are soaking, bring 1 cup water to boil in a small saucepan over medium heat. Add zucchini and cook for 4 to 5 minutes. Drain. Set Aside. 
3. Place cashews (with water), zucchini, salt, and seasoning blend (if desired) in a blender or food processor {I used a food processor}.
4. Blend ingredients until smooth.
5. Heat soup, if desired {I did - tasted so much  more amazing when warm}. If heating use a medium saucepan over medium heat; cook, stirring frequently for 4 to 5 minutes or until hot. Do not boil. 

Perk of the Recipe:  You can prepare this recipe (a batch or two) in advance, so that when you are ready to eat, all you need to do is HEAT!

Ultimate Reset Week 1 Recap

Ahh the Ultimate Reset has begun and I can't believe I am already on Day 8 today!! 
This also means today marks the official end of my first phase of the Ultimate reset, RECLAIM phase, and I am now onto the RELEASE phase!!

A few thoughts on my first week of the reset:
1. I struggled the first few days with caffeine and sugar withdrawal! My head hurt so bad and I was extremely sluggish. I was also extremely moody!
2. I was pleasantly surprised on how fulfilled I was by the food I was eating. Some recipes I didn't care for but I would say 99% of the recipes were fabulous!! I even ate salmon or should I say I devoured the salmon (and I am not a fish eater!!)
3. It is very time consuming prepping all the many different recipes so I have learned to make larger batches to use at other times of the week. 
4. Ending the first phase I am feeling much lighter and my usual bloated belly is slowly diminishing - yay! No more feeling uncomfortable when I put on my jeans which is a plus. 
5. I am missing my workouts and my morning coffee - I Love coffee!!
6. The supplements are not bad at all, well maybe for the alkalinize but I simply mix and chug!

With all the being said, I am very happy with where I am today in my journey!!

I have been asked why I am doing the Ultimate Reset and here it goes...
The reason why I am doing the reset is I have always been curious about the Reset but I was in a situation where I really didn't want to lose any more weight and most reseters lose a ton of weight. Now that I gained 15 pounds back (another story) it was time to give it a go. I have been putting it off since the end of July and I had to do it now or I would be afraid of chickening out!! 
I want to see if this can help me get out of this funk Ive been in for a year+ now. I want to see what making my body as healthy as it can be on the inside do for me. I have been leading a healthy lifestyle for quite some time now but I think there are some things in my life that need adjusting. Ive had a ton of problems with fatigue and bloating and the reset is suppose to help with those too. So far bloating is gone and I hope getting rid of the fatigue will come soon too!!

Zucchini Tots



It's Tasty Tuesday and oh my yum is this one a keeper!! 

but first the background on how I came up on the recipe...

This summer we had a ton of zucchini growing in our garden and wow were they huge!! I could only make so many loaves of zucchini bread before I needed something new to make.

Zucchini fresh from our Garden!!

I only had a few recipes that include zucchini so I went searching for more. Some recipes we tried were fabulous, some not so fabulous. The recipe I am sharing with you tonight was FABULOUS!! We all loved it and the kids although they say they don't like zucchini ate these up and asked for more!!

It would also make a great hot appetizer at a party (who's hosting the next one?!)

Zucchini Tots

Ingredients...
2 cups shredded zucchini
1/2 medium onion, diced
1/2 cup breadcrumbs
2 large eggs
4 ounces extra sharp cheddar cheese, shredded
3 tablespoons panko breadcrumbs
sea salt and black pepper to taste

Directions...
1. After you shred your zucchini, lay it out on a few layers of paper towel and lay another layer of paper towel over top and press down. This will help remove some water from the zucchini. 
2. Sprinkle sea salt over the zucchini and let sit for an additional 15 minutes. 
3. In a medium bowl, add zucchini, onions, bread crumbs, eggs, and cheese. Sprinkle salt and pepper, to taste. Mix well.
4. Spray a 24 cup mini muffin pan with cooking spray and then scoop about a tablespoon of zucchini mixture into each cup. Fill all cups and then top off each cup with some panko breadcrumbs.
5. Bake at 400 degrees for 15-20 minutes or until slightly browned on top. 
6. When tots are done use a knife around the edges to loosen the cup and then use a spoon to lift them out.
7. Last but not least - ENJOY this healthy side dish, snack, appetizer!!

So easy, so delicious, and so good for you!!

Easy Chicken Noodle Soup

Well hello there!! How have you been? 
School is back in session and so I am back to my more "regular" schedule and it feels oh sooo good!! I love routine, this is where I thrive!! 

So a few weeks ago on my facebook timeline I posted a picture of a fabulous soup I made and I promised I would get the recipe out to those who wanted it. Well here it is...trust me it is well worth the wait!!

This recipe is for the Easy Chicken Noodle Soup from the FIXATE cookbook by Autumn Calabrese!!  Now most of the recipe is exactly as it states in the FIXATE cookbook but I added in a few ingredients here and there.  

Here you go...


EASY CHICKEN NOODLE SOUP

2 teaspoons EVOO
1/2 chopped onion
2 cups celery (~ 4 medium stalks)
3 garlic cloves, minced
6 cups chicken broth
4 cups chopped grilled skinless chicken breast
1 1/2 cups sliced carrots (~ 3 medium)
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 1/4 cups dry whole wheat pasta
1/4 cup fresh cilantro, chopped

Directions...
1. Heat Oil in large saucepan over medium heat.
2. Add onion, garlic, and celery; cook stirring frequently for 5 minutes, or until onion is translucent (be sure not to burn the garlic). 
3. Add broth, chicken, carrots, oregano, salt, and pepper. Bring to a boil. Add pasta and heat on low for 10 minutes. 
4. Add cilantro before serving.
