Unstuffed Halupki Soup

Growing up a family favorite was Halupkis and my Mom Mom made the best!! Heck anything my Mom Mom made was fabulous!! It was good ole Home cooking from scratch.

I personally have never attempted to make halupkis but I always thought about it. I still might down the road. 

BUT the reason why I bring up my childhood love of my Mom Mom's halupkis is because this recipe I have to share with you today totally reminds me of them!! 

Unstuffed Halupki Soup

Ingredients...
2 teaspoons EVOO
1 pound ground turkey
1 medium onion, diced 
1 cup water
1.5 cup beef stock
3 garlic cloves minced
1 medium head of cabbage, sliced and diced
1 28 ounce can of tomato sauce
1 tablespoon Worchestire sauce
1 teaspoon dreid basil
1/2 teaspoon sea salt
1/4 teaspoon pepper
3/4 cups uncooked brown rice

Directions...
1. In a large pot, add EVOO and ground turkey. Heat over medium heat until ground turkey has browed.  
2. Add in onion and sauté' until onion is slightly translucent
3. Add garlic and mix for about 1 minute. 
4. Next add to the large pot water, beef stock, tomato sauce, Worchestire sauce, basil, salt, and pepper. Mix. 
5. Add in cabbage and rice and bring to a boil. Then simmer for 20 minutes. 

Voila your Unstuffed Cabbage Soup is ready! 

After I tasted the finished product I knew for sure this recipe would be sticking around with us for quite some time!

Not only does it taste great, hubby loves it too but it also reminds me of my Mom Mom - BONUS!!

Italian Wedding Soup

I think you know by now that I love good tasting yummy food!!

Yeah yeah I know not all the things I like to eat are healthy but I would say 80-90% of it is. I am in total agreement with the 80/20 rule for healthy eating!! I do like an occasional piece of chocolate, cookie, pizza, or cake and guess what I am totally okay with eating it!! No guilt, no over exercising, no nothing but simple enjoyment. 

I have found when I follow the 80/20 rule I don't get the feeling of deprivation. That feeling is DANGEROUS and will set you up for failure if you let it in!!

In order to live a healthier lifestyle we need to be following a nutrition plan that is going to fit our goals and our lifestyle.  I eat what I want and 80% of the time I choose healthy!! But don't let me fool you...I didn't always eat 80% healthy foods.  I had to teach myself how to eat healthy and I did it via a health and fitness group on FACEBOOK!! I know who would have thought right? 

Well I came here tonight to share with you a recipe and so I will get off my soap box but I leave you with this one last thought....when venturing into the 20% area - moderation and portion sizes are KEY!!

Okay  now let me share with you that Italian Wedding Soup Recipe

ITALIAN WEDDING SOUP
Ingredients...
1 pound ground turkey breast
1 cup whole wheat breadcrumbs
1 large egg, lightly beaten
1 tablespoon chopped parsley
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1/2 teaspoon ground pepper
1/4 teaspoon sea salt

1 tablespoon EVOO
1 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
8 cups low sodium chicken broth
1 15 ounce can cannelinni beans
4-6 cups chopped mixed greens (kale, spinach, chard, etc.)

Directions...
Meatballs
1. Preheat oven to 350 degrees. 
2. Combine Turkey, breadcrumbs, egg, parsley, garlic, Worcestershire sauce, pepper and salt in a large bowl. Shape mixture into small meatballs (~1 tablespoon or so each) to make approximately 36 meatballs.
3. Place meatballs on a lightly coated baking sheet in the oven for 20-25 minutes
4. When finished cooking, remove from oven and place off to the side 
Note: this can be done ahead of time if needed

Soup 
1. Heat 1 tablespoon EVOO in a large soup pot over medium heat. 
2. Add onion, celery, and carrots, and cook stirring until onion is translucent ~ 8-10 minutes
3. Stir in broth, beans, greens, and finished meatballs.
4. Bring to a boil, reduce heat to simmer and cook until vegetables are tender ~25-30 minutes

Enjoy because this soup was delicious!! 
Tonight is was dreary and snowing and oh my some nice warm soup to warm the soul was perfect!!

Zucchini Cashew Soup

I love Zucchini and I love Cashews but together in a soup? 
Hmmm.....I wasn't so sure! I came upon this recipe from the Ultimate Reset nutrition guide. 
I figured I should at least try the recipe and worse case scenario, I don't like it. 
Well thank goodness that wasn't the case because I loved it. I loved it so much I wanted to share the recipe with you all!! I hope you enjoy as much as I did!! 


Zucchini Cashew Soup

Ingredients....
1 ounce raw cashews (17 cashews)
1 1/2 cups water, divided use
1 1/2 medium zucchinis, cut into chunks
Himalayan salt, to taste
Optional: herbal seasoning blend like fresh basil or dill

Directions...
1. Soak cashews in 1/2 cup water for 1 hour.
2. While cashews are soaking, bring 1 cup water to boil in a small saucepan over medium heat. Add zucchini and cook for 4 to 5 minutes. Drain. Set Aside. 
3. Place cashews (with water), zucchini, salt, and seasoning blend (if desired) in a blender or food processor {I used a food processor}.
4. Blend ingredients until smooth.
5. Heat soup, if desired {I did - tasted so much  more amazing when warm}. If heating use a medium saucepan over medium heat; cook, stirring frequently for 4 to 5 minutes or until hot. Do not boil. 

Perk of the Recipe:  You can prepare this recipe (a batch or two) in advance, so that when you are ready to eat, all you need to do is HEAT!
