Meal Planning with the 3-Day Refresh

Another Monday is here and I don't know about you but I sure could use a kick in the butt after the past two weeks. During Summit 2014 in Vegas I ate well but didn't eat enough, then I got sick so I couldn't eat or more so was afraid to eat, then I came home and although I had a plan in place I still wasn't as on track as I should be. 









So I am back at it but this time I am going full steam ahead and kicking the week off with the new 3-Day Refresh!! Day 1 is already in the bag!! 




Want to know more about the Refresh stop back later this week and I will give you my personal opinion and experience with the Refresh. All I gotta say about Day 1 though is I am pleasantly surprised by how full I feel!!

PiYo is HERE!!

I finally have my hands on the at home workout version of PiYo! To say I am excited is an understatement!! I have been waiting months for this programs release…I even went to great extremes (in my mind anyway) to get a peak at what this program was all about by getting certified to teach it. Guess what - one of my best decisions because I now have the inside scoop on PiYo plus I have been doing it for a few months now.

PiYo has also been in gyms for a few years now but beginning June 19th the at home version of PiYo is now available to us all!! No more having to go to the gym and fit their schedule into yours! Now you can do PiYo at home, on vacation, at work, wherever you choose and it is totally on YOUR TIME!! That is the beauty of an at home workout program!!

PiYo is unlike any other program I have ever done!! I have done Pilates, I have done Yoga but this combination is something all in itself!! Better late than never - Meal Planning is Key

All I got to say is trying to make a meal plan while away from home is not always an easy task!!  See the past few days I have been at Beachbody Summit in Las Vegas!! Woo hoo!! I returned home late Sunday evening and while I was traveling Sunday I attempted to meal plan. Well what I didn't realize is that I would have no idea what is in our fridge. I don't like to waste food and I don't like to grocery shop and spend money if I don't have to.   So I did my best on the plane but finished up our meal plan today once I was able to see our fridge and freezer!! 

The morning started off rough because I wasn't sure what to make for breakfast but after that I got our plan in place and from there it was smooth sailing!! 

This may sound crazy to you but I know if I have a plan that I will stick to it. If I don't have a plan I will be more tempted to steer off of my clean eating lifestyle. I would start to see the temptations that linger around me. Trust me, I know how it goes down because there have been days and weeks I don't have a meal plan in place. I know from experience it is much easier to give in with no plan!

Well this week I have a plan and here it is...
again I am following the 21 day fix container system because well I know it works and it works well!! Plus I have a new 21 day fix health and fitness group that started their Day 1 journey with me today so I like to do how they are doing their meal plans. 

Keeping this short and sweet tonight as I am ready for bed!!

This week's meal plan is proving to be quite interesting!! There are a lot of unknowns and well that scares me!! I like to be in the know as much as possible because I am better at staying on track that way. So I am going to give a meal plan for this week my best and have a backup plans for surprises!!

Excited is an understatement of what I am feeling right now as I prepare & pack!! Okay maybe a bit nervous too as I don't know what to expect!! Regardless though I am leaving early Wednesday morning and I am making the most of this experience!!

See a lot of us Beachbody coaches talk on the phone, video calls, through online messaging but in fact most of us have never met one another in person. These big Beachbody events is our time to finally meet each other face to face!! I am so excited to meet many of the coaches who have become close friends!!

Needless to say I would prefer to be pleasant and I know that means keeping my belly full with healthy foods. My plan is this - get into town and when my other roommates arrives we are going to the grocery store. I tried ordering from an online service but I couldn't get the delivery time I needed & wanted. Well thank goodness Vegas has a ton of cabs because we will be cabbing it to the grocery store. So here is my best stab at a meal plan for the week.

Dinners are my big unknown right now. I really don't want to eat out every night because first that is really expensive and this girl likes to save money and second 9 times out of 10 I don't like my food when I eat out. I would rather whip something up from ingredients I know and taste great!! Thank goodness we are staying in a room with a kitchenette!! Wednesday is going to be my prep time for the remainder of the week. 

Vegas is going to be hot and we are going to be doing a LOT of walking so WATER, WATER, WATER...lots of water will be needed for the days I am at Summit!! I will also be packing a few items such as my shakeology, my mini blender, my energy & endurance, my results & recovery, oatmeal, protein bars, peanut butter, honey, and my collapsable cooler.  

No matter what happens this week I know I am truly blessed to be a part of this amazing adventure!! Summit 2014 here I come!!

Chicken Quinoa Salad

Who doesn't love good food and better yet doesn't food taste that much better when it looks REALLY GOOD???

Well check out this creation of mine. Last week I made it with pasta and this week I wanted to make it healthier and decided to try it with quinoa and well it is even better!! This has been my lunch almost the entire week and I am looking forward to more of it this week!!

Ingredients...
1 pint cherry tomatoes cut in half or sliced
1 bunch scallions, chopped
2 stalks celery, chopped
1/12 cups cooked Quinoa
8 ounces cooked chicken
1 cup cheddar cheese
1/4 cup Olive Oil
2 tablespoons Greek Seasoning (I made my own)

Directions...
Mix all ingredients together except cheddar cheese.
Add cheddar cheese in last and mix well.
Chill in refrigerator for at least 1 hour before serving

It is so nice too when the recipe is as simple as this one!!
So your last step is to enjoy and then tell me all about it!!

T25/Chalean Extreme Hybrid First Half Woman's Progress Update

For the past 5 weeks I have been hanging out with Shaun T and Chalene Johnson...
In my Living Room!! Yes that is right in the comforts of my home these two fabulous fitness trainers help me get fit and healthy!!

How did I get so lucky you might ask? 
Well I have found my time is limited that I get to spend on myself and so at  home workouts work best for ME!! I get to have the flexibility of doing workouts when it is best for me!! For the past 5 weeks I have been doing a hybrid schedule of two programs - Focus T25 and Chalean Extreme!!

Chalean Extreme is by far my FAVORITE program ever!! This is the program I started with back in Feb. 2012 and I truly believe it was meant to be. I learned how to use weights properly, I learned I could push myself, I learned I could get up early to workout, and best of all Chalene Johnson is an incredible motivator. I lost 17 pounds and 21 inches with this program!! This took me to my goal weight!! But best of all I found a program I loved and enjoyed doing!!

Then last July 2013 Shaun T introduced his 25 minute workout!!
Hello 25 minutes for a workout - where do I sign up!! I was very hesitant though because it was pure cardio. Cardio is my least favorite form of exercise but I wanted the 25 minute workout so I sucked it up and gave it a whirl!! Well lets just say Shaun T gave me a whirl!! Wow, who knew 25 minutes could fly by so fast and I could sweat so much!! By this time in my fitness I had already reached my goal weight so maintaining that weight was important for me. After completing T25 I maintained my body weight and I lost an additional 4 inches overall. If you know me, you know it looks like I don't have many inches to lose but T25 proved otherwise!! This was by far my hardest to get through program.

Now a few weeks ago I was getting ready to start a new Focus T25 Health and Fitness group and I hadn't done T25 in quite some time so to refresh my memory I wanted to do the workout along with the group. Knowing myself and how much I don't like Cardio I knew I needed something else to go along with it. Well what better to add in than my all time favorite program - Chalean Extreme.

I have to say these past 5 weeks I have not been as spot on with my workouts and my healthy eating!! I have had much going on in my life that has distracted me and that is all my own fault for allowing it to distract me!! I was very anxious to see my results today when I took my first round progress pictures and measurements. I know from looking at myself that my once defined abdominals began to pooch again and that is all because of the food I was allowing myself to have. During these five weeks I have seen that pooch diminish but it is not completely gone, but trust me IT WILL BE when I am done!!

I am happy to report that I have maintained my body weight, I have lost 1 inch in my hips.  To some this might not be anything amazing but to me it is. I knew I didn't stay on track as best as I could and I really thought I was going to see gains rather than losses. I am perfectly happy with where I am at for the work I have done. Could I have done better? You bet!! Will I do better these next 5 weeks - you bet!!

Meal Planning Monday & T25/Chalean Extreme Progress Update

The summer is here and so that means a bit of a change in my schedule once again!! Life is always going to throw us curve balls and all we can do is catch them and keep on moving!!

This week I am starting Meal Planning Mondays!! I will continue to prepare my meal plan on Sundays and share it with my health and fitness groups but to the rest of the public I will post it on Mondays!!

A little about what this week holds for me...
The kids and I will be at the beach most of the week.   I want to share with you all that even though you are away from home you can TOTALLY stay on track with your fitness and nutrition.  So MANY people let loose from the stress of every day life while on vacation - I am so there with you!! What I don't do though is let loose from what makes me feel good and makes me energized (hello I need my energy to pull all that beach stuff to and from on the sand!!) 
SO I continue with my exercise and following a clean eating lifestyle!!
You can do it too!! Have I had a beer or two- yes! I don't deprive myself of anything!! It is all about making smart choices and moderation!! 

While I am away I do like to make things easier on myself so I am not spending hours in the kitchen after a long day at the beach. I also prep snacks to take to the beach which are easy for myself and little ones. 

I always remind myself....
