Healthy Pancakes

Healthy Pancakes - Yes, that is really the name of the recipe!! My kids are pancake phanatics and when I started looking the labels of the "ready made" pancake mixes I was shocked at how much extra stuff is included in the Ingredients.  Do you look at Food labels?  I never did before but now I am always checking them out.  The fewer ingredients the better and I make sure I know what the ingredients are - If I can't pronounce something then most likely it is man-made and not good for us!!  

Anyway, I have this awesome recipe book called Thin Kitchen.  In it, I found a Healthy Pancake recipe.  I modified it a bit to fit my liking.  

Healthy Pancakes

1 1/2 cups whole wheat pastry flour
2 eggs, lightly beaten
1/4 cup canola oil
1 cup milk (skim, almond, soy - whichever you choose) 
Note: if you like your pancakes more flat then add up to 2 cups liquid total)
2 teaspoons baking powder
1/2 cup wheat germ
1/2 teaspoon salt
1 teaspoon cinnamon

1. In a medium bowl, mix eggs and milk
2. Stir in remaining ingredients
3. Heat a lightly oil griddle or frying pan over medium-high heat
4. Pour or scoop the batter onto the griddle. Brown on both sides, turning once.

Makes about 10 servings.

I was quite surprised at how thin these pancakes were, they were not like the regular huge fluffy white ones.  Tasted great and were super light.  Other options are adding in cinnamon or vanilla to the recipe.  

Use fresh fruit and a small amount of real maple syrup or honey or molasses as your toppings.  I also sometimes have mine with fresh fruit and plain greek yogurt - perfect pairing: complex carb and protein all in one sitting.  

Note:  A LOT of pancake syrups contain corn syrup and other processed sugars that you want to avoid. So check those labels and make sure you are buying the most natural kind of syrup for you and your family or forgo the syrup and use the natural sweetness of fruit.
