GRILLED CHICKEN WRAP

Lunch is usually a busy time here in the Horcher Household.  I need to get the kids to stop what they are doing, eat their lunch, and then we take Leo to school.  

Here is a quick, throw together lunch that works PERFECT with our schedule.

Grilled Chicken Wrap


Ingredients...

Whole Wheat Tortilla
Low Fat Hummus
Grilled Chicken Slices
Lettuce
Tomato
Feta Cheese 

Directions...

  1. Spread hummus on a whole grain tortilla
  2. Slice grilled chicken thin and place on wrap
  3. Top with lettuce, tomato, feta cheese and any other veggies you please
  4. Wrap it up and enjoy!

Plan done for the Week!

I just realized it is late and 5am is going to come very early so I am making this short and sweet...

What are you eating this week? do you know? did you know if you have a plan in place and you prepare snacks/meals before you leave the house you would be less tempted to eat something unhealthy?!

When I started my new lifestyle of eating healthy and exercising I did not make a meal plan.  Ya know what, I had a lot of difficulty staying on track with eating healthy.  If I was out and about and I didn't bring healthy snacks with me I would choose VERY UNHEALTHY snacks.

Now I plan my meals in advance and I prep and pack snacks before I walk out the door.  I always make sure I have bottled water in my car at all times, for safety reasons and so I can mix my Shakeology!  I now keep extra packets of Shakeology in my car's glove compartment.  I also invested in a shaker cup.  That was the best $7 I spent!  If I find myself without a healthy snack option I just get my Shakeology packet, bottle of water, and shaker cup and voila...yummy, nutritious snack in an instant!

Melinda's TurboFire Transformation

Real People, Real Transformations....

This story is as true as they get and I am proud to say this person is another BeachBody coach on the DREAM TEAM!  She didn't start off as a coach but found the opportunity to be right for her and her family.  

Melinda is a 30 year old working wife and mother to a handsome 15 month old boy.  She began her fitness journey January 2012.  As many of us do, she made a New Year's Resolution to lose weight.  She joined a challenge group and lost 20 pounds.  Awesome right?  However, Melinda still was at a point in her health and fitness journey where she was not happy with her body yet. 

Anyone else every feel this way?  

The next step for Melinda was finding a program that would give her dramatic results.  She found TurboFire and from then on her life with BeachBody was set.  She loved TurboFire and after 6 weeks she was losing weight.  In her mind though the weight was coming off much slower and she was NOT getting the results she had expected.  At this point, Melinda had not started drinking Shakeology.  She did not see the value in it and she thought it was just another "protein shake".  After some research she found it was so much more than just a "protein shake".  She decided to give Shakeology a try! 

Once Melinda incorporated Shakeology into her routine the weight started coming off much faster, she had a ton more energy, and her bad cravings were GONE!  Melinda realized Shakeology was worth every darn penny and she continued to include it in her daily meal plan.  Along her journey she also decided to join a BeachBody challenge group (my coach's to be exact) and committed to replacing 1 meal a day with Shakeology, doing TurboFire, and embracing the clean eating lifestyle.  She completed the 12 week group and check out these amazing results!!!!




During the 12 week challenge Melinda lost 18 pounds and 12 total inches.  

She even lost two pant sizes!!!! She is so excited that she now has the energy to keep up with her busy toddler! All of us parents know how much energy these kids have!  

She was so grateful for the life changes she made during the 12 week challenge that she then decided to become a BeachBody coach and PAY IT FORWARD.  Helping others to achieve their health and fitness goals is now HER goal!  Way to go Melinda!!!!  

Remember, Melinda is a busy working wife and Mom and she found the time to make her health and fitness goals a priority.  YOU CAN DO IT TOO!!!!

My Overall Cleanse Experience

  
Last week, specifically Tuesday-Thursday a friend of mine and I completed the Shakeology 3-day cleanse. We both wanted to do the cleanse for different reasons and we were both successful in the end!  

It was hard, I am not going to lie and tell you it was a piece of cake!  There were times when I was hungry, tired, dizzy, etc but I knew it was just my body getting rid of all the toxins that I unfortunately had exposed it to.  

My goal at the end of the cleanse was to rid my body of all the "junk" that had collected since my last cleanse and STOP my sweet tooth cravings!  My cravings had really gotten out of hand and I was starting to eat things I haven't eaten since before I started my journey with beachbody.  As I mentioned I met these goals and I lost 3 pounds.  I was NOT expecting to lose any weight at all but apparently I had a little more "junk" to get rid of than I knew.  My friend who did the cleanse with me had a goal to lose weight and to kick start her new clean eating lifestyle.  She lost 5 pounds and did an awesome job at staying on track with the cleanse.  She continues to make the right decisions when it comes to eating and soon plans on adding back in her daily workout.  

I had blogged about my three days (READ about Day 1, Day 2, Day 3) during the cleanse but I never talked about how I felt the day after the cleanse was over...

It was Friday and I was so darn excited that I had lost 3 more pounds and I had no thought of sweet temptations at all!  I was feeling a bit sluggish yet in the morning though. I thought to myself, where the heck is the energy I am suppose to get from doing the cleanse? Once I started to get back on track with my normal eating habits I was back in the swing of things. Full of energy and life and so proud of myself and my friend for completing the cleanse.

I spoke to my friend later in the day on Friday to find out how she was doing and feeling.  When she told me she lost 5 pounds I was jumping for joy!  I was so excited and proud of her.  It was hard for her too going through the cleanse but she made it through and reached her goal.  


WE BOTH DID IT!!!


Overall a GREAT Experience and I will be doing it again in another 3 months!

Pumpkin Chocolate Granola Bars

There is no way that these delicious "treats" can be good for you! Wait, They are not "treats" in fact they are good for you Granola Bars!!!!!
They taste so good and I seriously had to stop myself from eating them otherwise I would have eaten the whole pan.  Another greatness about these Granola Bars is that my whole family loves them.  Bonus! Now I have a healthy snack alternative for my kids too! My husband kept coming back for more when he came home from work today.  I had to remind him not to have too many otherwise he would not be hungry at dinnertime. 



What I also love about these bars is that they are perfect for this time of year - Fall!  I love the taste of pumpkin anything and these are right up my alley.  Be sure to check back later in the week for more recipes that include my fall favorite - PUMPKIN!!!!




So today I had two bars for my afternoon snack...I could have eaten more but I didn't! Hopefully tomorrow I will have the same willpower!  I am guessing by my family's love of these bars I am going to be making another batch later this week. Actually I am sure I will be making another batch!!!!

  

PUMPKIN CHOCOLATE GRANOLA BARS


Ingredients...

3 1/4 cup rolled oats
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup pumpkin puree
1/2 cup applesauce
1/3 cup honey
1/2 cup 85% dark chocolate
2/3 cup sliced almonds
1 teaspoon vanilla extract

Directions...

  1. Preheat oven to 350 degrees.  Spray an 8x8 baking dish with cooking spray and set aside.
  2. Chop your chocolate into small pieces.
  3. In a large bowl combine oats, spices, and salt together. Set aside.
  4. In a medium bowl whisk pumpkin, applesauce, honey, and vanilla extract until smooth.  Pour over oats and stir well, until all oats are moist. 
  5. Stir in chocolate and almonds.
  6. Evenly press oat mixture into prepared pan.  
  7. Bake for 25-35 minutes or until golden brown.  The pumpkin keeps the bars moist, so make sure they are golden and set.  You don't want them to be under baked.
  8. Remove from oven and let cool on a wire rack for 5 minutes.
  9. Using a sharp knife, cut into bars. Remove from pan and let cool completely.
Makes 10-12 granola bars

And so it's Sunday night again! I'm pooped!


I love, love, love the weekends because it is a time for myself, my kids, and MY HUSBAND to all hang out together!  During the week my husband works so by the time he gets home we have dinner as a family (a must in our house), and then it is usually time to get the kids ready for bed.  The weekends however we get to hang out and do fun things together.  Whether it is play inside, outside, go somewhere...WHO CARES!  We are all together as a family and that is all I need!

So this weekend we did a lot of fun Fall things...Saturday was Fall Fest and today was Harvest Days.  I am pooped after all the walking around, chasing the kids from one thing to the next, pumpkin painting, games, hay rides, corn mazes.  You name it we probably did it!  Most important though we all had fun - TOGETHER!

Well the weekend is over and all the family (except me of course) are in bed getting ready for another week to start.  That means for me, it is time to make our meal plan for the week.  I am going to try and get my kids on board this week with a few more of my breakfasts, snacks, and lunches. I want to be their example of healthy eating but if I don't also offer them what I am having how will they ever know if they will like it, right?  The dinners I make is the only option for dinner, so we all eat what I eat.

Trying a lot of new recipes this week. I am excited for all the fun fall recipes!

Day 3 - Shakeology 3-Day Cleanse

Well I have to be honest, I am glad today is almost over and so is this cleanse.  Today was a little tougher than the others.  I was REALLY hungry, REALLY tired, and I just feel really BLAH!

I got my workout in and done today and I was still able to get done everything else I usually do.  I just did it at a slower speed. So all the extras that I sometimes do will have to wait for another day.  

All of this sounds totally normal to me because I did this cleanse before.  Although I did not blog or write in a journal about my first cleanse, I believe how I feel is exactly the same as before.

So my weigh in will be tomorrow.  I am not all that concerned with losing any more weight.  If it happens great, if not, that is okay too.  My goals for this cleanse was to detoxify my body and curb my sugar cravings!  So far so good, I have not even thought about sugar!  All I am craving right now is an omelet!  I know, of all the things to crave that is not what I would have guessed!

Going forward, I want to eat cleaner.  All the processed sugar I have been putting into my body is not going to get me to where I want to be, hence the cleanse.  One of my goals is to get rockin' six pack abs.  After I had my second child my stomach area looked like it never did before and I vow to get it back to better than normal!


So tomorrow is another new day and I plan to attack it with all I got! Night blog world!

Day 2 of Shakeology 3-Day Cleanse

Day 1 is over and now onto Day 2 of the Shakeology 3-day cleanse.  Thankfully I went to sleep last night VERY early so waking up today at 5am was not so hard!!!!  I got my workout in and done for the day.  Today it was Power 90 Sculpt 3-4 circuit.  I seriously love lifting weights now.  I never lifted before but now I look forward to my weight training days! 

So the cleanse...Today I found myself feeling more hungry.  I stayed on track and had my 3 shakes (again tropical strawberry mixed with water), 2 pieces of fruit, large salad with baked chicken, and 2 cups green tea.  Well I am having my third shake of the day as I am writing this tonight. 

Hunger - I know I am fueling my body with the appropriate nutrients it needs so being hungry does not concern me.  When I do feel hungry I have a large glass of water and the feeling subsides.  I do the water trick even on normal days. 

So what else was I feeling today...a bit "foggy" if you know what I mean.  I felt like I could not keep a thought in my mind and as I was talking to people I was jumping all over the place from topic to topic.  
As the day progressed I felt less and less hungry and just more tired.  I am hoping for another early night.  All the household chores I should be doing can wait another day or two.  Right????

I am very excited tomorrow is Day 3 and I look forward to finishing this cleanse!  I can do it, I can do it....
This is my motivation picture for the week!  I really need it tonight as I plan for my day tomorrow.  Going to chat with my friend who is doing the cleanse with me and then I am calling it a night!

Day 1 Shakeology 3 Day Cleanse

Today started the first day of the shakeology 3-day cleanse for me.  I weighed in at 93 pounds and I started the day off strong.  I followed the rules and had my three shakes (for me tropical strawberry mixed with water), 2 pieces of fruit, a large salad with baked chicken, two cups of green tea, and a ton of water. 



The first part of the day went well.  I woke up bright and early at 5am and did my Power 90 Sweat 3-4 circuit and Ab ripper 200.  I did not feel hungry, tired, etc.  It felt like any other day.  After I picked up  my son from school later in the afternoon and my husband came home I went to COSTCO to loaded up on some family's favorites.  As I was driving I felt more and more tired.  It could be because it was probably the first time all day I stopped for longer than 10 minutes.  After I got home and got the car unloaded I was beat! However, I still had a ton more stuff to do around the house and I needed to get the kids to bed.  Addyson kept giving us a hard time so I went in and laid down next to her crib (yea, yea, I know not a good habit to get into).  Next thing I know it I am waking up....OOOPs I must have fallen asleep.  After I left her room I was pretty much done for the night.  I came downstairs had my last shake of the day and tried hanging out with my husband and son for a bit but I kept dozing off.  I went to bed finally at around 8:30pm.  WHAT?!?! 

I cannot tell you the last time I went to bed that early.  I do not even remember falling asleep. 




All in all I think the first day went well!  I figured I would be tired not only due to the cleanse but also because I had been up late the past few nights and it had to eventually hit me. 

I am also doing this cleanse with a dear friend of mine.  She made it through her first day too!  We are in it together!!!!

Just so you know, I am writing this on Wednesday, Oct. 17th.  I am back posting it to Tuesday, Oct. 16th.  I was so dang tired last night I did not even get on the computer.  I probably would have fallen asleep on our laptop.

Bring on a New WEEK

 
This is my inspiration photo for the week! Not only do I love her abs but I love what it says!  I have been slacking a little more lately and I need to get myself back on track.  I have been wanting to do the shakeology 3-day cleanse again but just could not get myself motivated to commit.  What is the shakeology 3-day cleanse? So what happened that I actually committed to doing the cleanse this week? I have been trying to find a buddy to do the cleanse with me and this weekend I find the perfect person.  More so, she found me!  My friend from college contacted me this weekend about something else and anyway long story short her and I are going to do the cleanse together!  Everything is always better when you have someone doing it with you, right? I absolutely adore this girl too! I wish we lived closer so I could see her and her family more often. At least we can visit each other!  
 
Being that I am doing the cleanse, my meal plan is pretty basic this week.
 
I have found I am more hungry at night than usual, partly because I am staying up later and later.  Last week and this week I am adding in more than just Green Tea for my evening snack.  Are you a night snacker?

Blueberry-Pineapple Protein Shake

Anyone else have an addiction to Blueberries?
I love those little guys! I use to sit down at my computer to do work and polish off an entire container of them! 
 



As you know I also love trying new recipes, so when I saw this one it just sounded so good!  Better yet, it is really good for you especially as a post workout refuel!

Blueberry-Pineapple Protein Shake

Ingredients...
1 cup skim milk
1 scoop protein powder
1/4 cup blueberries
1/4 cup pineapple
ice to taste

Directions...
Blend until smooth!

I also love learning new things, did you know Pineapple contains bromelain, a natural anti-inflammatory compound, which may reduce post-workout pain?

Minestrone Soup

All these colder days have been getting me in the mood for soup. I use to always buy the canned soup until I learned a healthier alternative...make your own at home! I know simple right? I just never thought about it.  Now I love making homemade soups.  I have so many tasty recipes I can't wait to start making them now that the colder weather is here.

Minestrone has always been one of my favorites and now I have a recipe I can make at home.

Ingredients...
1 large onion, diced
2 tablespoons olive oil
4 garlic cloves, minced
2 ribs celery, diced
1 large carrot, peeled and diced
1 medium zucchini, diced (I was out of zucchini so I used green beans)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon ground black pepper
6 cups low-sodium vegetable broth or low sodium chicken broth
1 28 ounce can no salt added diced tomatoes
1 15 ounce can no salt added crushed tomatoes
1 15 ounce can low sodium cannellini beans, drained and rinsed
1/2 cup whole grain elbow pasta
1 cup shredded Parmesan cheese
2 tablespoons fresh parsley leaves

Directions...

  1. In a large pot over medium-high heat, heat oil and add onion.  Saute for about 3 minutes or until translucent
  2. Add garlic, cook for 30 seconds
  3. Add celery and carrot, cook and stir for 5 minutes or until vegetables begin to soften
  4. Add zucchini (in my case green beans), oregano, basil, salt, and pepper. Cook for 2 minutes, stirring frequently
  5. Add the broth and the diced and crushed tomatoes, bring to boiling
  6. Reduce heat to medium low, simmer uncovered for 10 minutes
  7. Add the beans and pasta, cook 10 to 15 minutes more until pasta and vegetables are tender
  8. Top servings with cheese and parsley
Makes approximately 6 servings

Chicken Bake

Talk about looking in your fridge and throwing it all together, YES this recipe is really that simple and EASY! 

I tend to plan this meal when I know it is going to be a busy day and I might not have a lot of time to be spending in the kitchen.  I like to use skinless chicken tenders as opposed to skinless chicken breasts in most of my chicken dishes.  You can use either.  Using the tenders are just my own personal preference. 

Ingredients...
10 skinless chicken tenders
1 pound red potatoes chopped into 2 inch cubes
1/2 bunch asparagus, trimmed and cut into 1 inch pieces
1 red and 1 yellow peppers sliced into 1 inch pieces
1 onion sliced
1/2 cup fresh basil
4 garlic cloves sliced thin
1.5 teaspoon olive oil
1 teaspoon fresh chopped rosemary
1/2 cup chicken broth
Ground Pepper to taste

Directions..
  1. Preheat oven to 400 degrees
  2. Add Chicken, potatoes, veggies, basil, garlic, chicken broth, and olive  oil to baking dish
  3. Sprinkle with the rosemary and pepper
  4. Bake for approximately 45 minutes or until desired tenderness
All that is left is to enjoy with your family because really, isn't that what it should be all about!!!!

Clean Grilled Cheese Sandwich

One of my favorites as a child and an adult just got a clean makeover!

As you know I like trying new clean recipes all the time.  Not all of them I like and not all of them my family likes.  I am all about finding meals my whole family will eat. 

The Clean Grilled Cheese Sandwich wins a place in our family recipe box!



Ingredients...

4 slices whole wheat bread
1 teaspoon olive oil
1 teaspoon Dijon mustard
2 ounces low fat Cheddar Cheese, finely grated and divided
1/2 medium Granny Smith apple, halved, cored, and thinly sliced

Directions...
  1. Brush one side of each slice of bread with oil
  2. Turn 2 pieces of bread over and spread with mustard
  3. Divide half of cheese between both mustard covered slices
  4. Place apples on top and then remaining cheese
  5. Top each with other half of bread, oiled side up, making 2 sandwiches
  6. Heat a large nonstick skillet over medium-low heat
  7. Place sandwiches in pan and cook until light golden brown
  8. Flip over and continue cooking until cheese has melted and bread is golden brown
  9. Cut sandwiches in half (my husband and I like triangles) and serve.
Nutrition...
Makes 2 servings
Calories 220
Fat 7grams
Carbohydrates 27grams
Protein 14grams

All that is left to do....ENJOY!!!!

If  you want to change it up a bit leave out the apples from the sandwich and have them on the side!  Either way is Yum, Yum, Yummy!

Meal Plan for Week of October 8-14, 2012

After a weekend away from home I am so happy that I preplan all my meals.  We went to Pittsburgh this weekend and I took along almost all of our meals.  The only meals I did not pack were dinner Friday night and dinner Saturday night.  We had plans with friends both of those evenings.  Even eating out I was able to stay on track! 

So of course Sunday night is my night to prepare for the week ahead and figure out what my family and I are going to be eating.  After that I put together my grocery store list and shop the next day. 

here is my meal plan for the week...


I try to follow the principles of clean eating when I am planning my meals.  Eating clean has changed my life in so many ways.  I really did not believe it would but trust me it has and then some!  I am slowly adapting my husband and children to this new eating lifestyle of mine.  I am the one who does all the grocery shopping and cooking so they either eat what I make or they don't.  Luckily I usually have a hungry bunch and the recipes I make are DELICIOUS!

Banana Protein Pancakes

My kids are addicted to pancakes!  Their preferred choice are pancakes from a box but I am on a mission to find a clean pancake recipe that they will LOVE!

I tried the Banana Protein Pancake recipe a few weekends ago.  Saturday or Sunday is usually the day when they are asking for pancakes.  Also on these days I have my husband chiming in too! 

Thank goodness, the pancakes were a hit!  Now, they did realize they were different than the ones I normally make for them but at least they were willing to try these new ones Mommy made.  Luckily, the kids and daddy liked them!

Ingredients...

3 egg whites
1/4 cup oats
2 tablespoons ground flax seed (optional)
1/2 banana
1 scoop protein powder
1 teaspoon Cinnamon
1/2 cup baby spinach (optional)


Directions...
  1. Mix all ingredients in a food processor, blender, or magic bullet. 
  2. Pour onto griddle or pan that has been sprayed with cooking spray over medium high heat.
  3. Turn/flip when the pancakes start to bubble (about 1 minute each side)
Servings: Makes 1 large or 2 small pancakes

I of course made these pancakes for my whole family so I quadrupled the amount of ingredients in order to make a batch for all of us.

THE SHAKEOLOGY CLEANSE

Back in July 2012, I completed my first shakeology cleanse!  I am bummed I did not keep a daily journal on what my experience and results were like during and following the cleanse. I would be able to provide a much more detailed experience here.
 
 Thinking back as to why I did the cleanse I can remember we had just come back from a long vacation where temptations were all around me.  I tried my hardest not to give in but those peanut M&Ms and crumb cake often won the battle along with a few others.  I had been doing so well with eating clean and then during this vacation I started going downhill again. 
 
I was reading about another person's experience doing the shakeology cleanse and I really liked the fact that the cleanse helps detoxify your body.  Not to mention all the other benefits, I figured I would give it a try.  I really wanted to get rid of all the JUNK I had recently put into  my body and I wanted to come cean and start eating right again.  It was hard during those three days of the cleanse but following I was so thankful I did it.  I have a serious sweet tooth and after the cleanse my sweet cravings were GONE! Yep, that's right...GONE!! Now don't get me wrong on occasion I would have dessert here and there but nothing like I use to do.   
 
Confession Time
Before starting this amazing journey with beachbody and clean eating I use to look at the dessert menu FIRST and then decide based on my dessert of choice what I would have for dinner.  Now I don't even look at the dessert menu.  I have no desire at all! 
Now that my friends is AMAZING!
