Meal Planning for a successful Week!!

BLAH - that is what life has been like lately or should I say a BLUR!!

So much has been going on and most days I feel like I am barely staying afloat!!

You know what I mean?

Between working my 9-5 job, beachbody coaching, mom of 2 very involved kids, housework, volunteering, head chef at the Horcher house (only chef really!) and I am sure I could add a few more jobs onto the list but I think you get my point. I know I am not alone with the overcrowded schedule as this is how most of us live our lives anymore.



The good news is that there are a few tips and tricks I have learned and many I plan on continuing to learn that help me get it all done and well through it all....

First that has been my saving grace for quite some time - MEAL PLANNING and PREPPING for the week ahead. Let's face it - we all need to eat and drink to survive yet I know so many that forego eating because they are too busy. I also know many that REALLY want to eat healthier but say they don't have time to cook healthy meals. Meal planning and prepping helps me take care of both of these excuses!! YEEESSSSSSS - at first it takes time to find and get into your groove but once you do MY GOODNESS you are golden.

When you have a plan in place and the food prepped and ready to go it makes running out the door on time (or GAH - EARLIER!) easier. It also makes running home and warm up and eat a healthy dinner possible!!

This is how it worked in my house yesterday...
Let me back up when we arrived home late Saturday evening after being gone for a week..
Sunday came and piles of laundry had to be done, our fridge was empty, we were all tired, luggage and more was scattered all over our downstairs. I knew what I had to get done though and so I got started -
Step 1: The meal Plan
Step 2: Grocery shopping
Step 3: Cook food
Step 4: Portion Food
 and in between did my other daily duties as well but guess what I got it done.

Having a plan in place and food ready to go, meant putting our lunches together this morning was a breeze.
Coming home from work and then picking up kids I was able to quickly throw dinner on the stove to heat it up.

While dinner is heating I helped my kids with their homework. If I hadn't prepped our dinner I have no idea what we would have ate and I probably would not have had the time to help with homework.

Meal planning and prepping totally make my life easier and these days I will take whatever easy I can get!!

Raspberry-Peach- Mango Smoothie Jar

I am all about snacks and meals that I can fit into a mason jar!! 
When I saw this recipe I am sharing with you today in the Eating Well magazine I knew I could make it into a mason jar recipe!! It was kind of a tight fit but I did it and now I get to share this awesome healthy tasty recipe with YOU!!

Raspberry-Peach- Mango Smoothie Jar

Ingredients...
1 cup frozen mango chunks
2/3 cup plain Greek Yogurt
1/4 cup reduced fat milk (I used water in place of the milk)
1 teaspoon vanilla extra

1 teaspoon chia seeds 
1/4 ripe peach, sliced
1/3 cup raspberries
1 tablespoon unsweetened coconut flakes

Directions...
1. In a food processor or blender combine mango, yogurt, milk/water, and vanilla. Blend until smooth
2. Transfer this mixture to a mason jar.
3. Add in chia seeds first and then top with peach, raspberries, and coconut flakes
4. Screw that lid on and save for later or Enjoy right now!!

Hummus Chicken

Okay I seriously cannot wait to tell you all about this new recipe I tried 
because seriously it was AMAZING!! 

It was one of those meals that my kids asked for more!! 
and for parents out there you know these moments are few and far between 
at dinnertime so when they happen it is marked as a HUGE success. 

When we had leftovers later that week the kids even cheered when they heard we were having HUMMUS CHICKEN again!! 
Needless to say this recipe is totally going in our recipe file!!
and oh yes...it is a HEALTHY CLEAN EATING recipe ðŸ˜Š !!

Ingredients...
4 boneless, chicken breasts or 8 boneless chicken breast tenders 
1 cup hummus, homemade or store bought 
1 teaspoon paprika
sea salt
ground black pepper

Directions...
1. Preheat oven to 450 degrees
2. Prepare one large baking dish with cooking spray
3. Place chicken in dish and lightly season each breast with salt and pepper
4. Cover the entire top of each chicken breast with hummus i
5. Sprinkle chicken with paprika
6. Bake for about 30 minutes or until the chicken is cooked through

Serve and Enjoy!! 

This is a perfect dinner if you need something quick. It is easy to prepare and does not take long to bake. I paired our dinner with veggies and rice.

A couple notes:
In this recipe I used chicken breast tenders. I find them easier to work with and easier for my family and I to portion out. 

If you have never made homemade hummus before I would totally give it a try. It is super easy and saves you money. 
**Need a homemade hummus recipe - click here!! I got this recipe from a friend and have been ever so thankful because it is soooo good!! 
If buying hummus from a store be sure to check the ingredients.  Watch out for added sugar as you don't want this in your hummus!!

Stuffed Peppers

Another Tasty Recipe coming your way this week. 
This recipe is from a dear friend of mine. We had it one evening a while ago when we went to visit them at their house. I have been wanting to give the recipe a try myself as I tried a few other stuff pepper recipes but this one was my favorite.  I did alter the recipe a bit but the flavor is still the same and it is oh so delicious! Best of all it is all good for your ingredients too so it can be put in my healthy recipe box!! 




Ingredients...
4 large bell peppers
2 tablespoons olive oil
1 small yellow onion, chopped finely
1 small zucchini, chopped finely
1 garlic clove, minced
Sea Salt
ground black pepper
1 pound ground turkey
1 tablespoon fresh parsley leaves, chopped finely
1 teaspoon fresh basil leaves, chopped finely
1 1/2 cups tomato sauce
1/4 cup bread crumbs
1/2 cup grated Parmesan Cheese

Directions...
1. Cut the bell peppers lengthwise in half and remove the seeds and membranes. Place the peppers in a pot of boiling water, reduce heat to medium and simmer ~ 3 to 4 minutes. Drain and set aside. 
2. Preheat oven to 375 degrees
3. Heat oil in a large skillet over medium heat. Brown ground Turkey until cooked through.  Remove turkey from skillet and set aside.
4. To the same skillet, add the onion and cook until softened, ~ 5 minutes. Add zucchini, garlic, and salt and pepper to taste and cook until veggies are tender, ~5 minutes.   Stir in 1/2 cup tomato sauce, cover and simmer for 10 minutes
5. Remove mixture from heat and add cooked ground turkey, parsley, and basil - mix well.
6. Stuff each pepper half with mixture and place in shallow baking dish. Sprinkle with bread crumbs and Parmesan Cheese
7. Bake for approximately 30 minutes until cheese is melted and tops are slightly browned. While baking, heat the remaining tomato sauce in a small saucepan.
8. Serve peppers with a tablespoon of sauce on top.

Zucchini Tots



It's Tasty Tuesday and oh my yum is this one a keeper!! 

but first the background on how I came up on the recipe...

This summer we had a ton of zucchini growing in our garden and wow were they huge!! I could only make so many loaves of zucchini bread before I needed something new to make.

I only had a few recipes that include zucchini so I went searching for more. Some recipes we tried were fabulous, some not so fabulous. The recipe I am sharing with you tonight was FABULOUS!! We all loved it and the kids although they say they don't like zucchini ate these up and asked for more!!

It would also make a great hot appetizer at a party (who's hosting the next one?!)

Zucchini Tots

Ingredients...
2 cups shredded zucchini
1/2 medium onion, diced
1/2 cup breadcrumbs
2 large eggs
4 ounces extra sharp cheddar cheese, shredded
3 tablespoons panko breadcrumbs
sea salt and black pepper to taste

Directions...
1. After you shred your zucchini, lay it out on a few layers of paper towel and lay another layer of paper towel over top and press down. This will help remove some water from the zucchini. 
2. Sprinkle sea salt over the zucchini and let sit for an additional 15 minutes. 
3. In a medium bowl, add zucchini, onions, bread crumbs, eggs, and cheese. Sprinkle salt and pepper, to taste. Mix well.
4. Spray a 24 cup mini muffin pan with cooking spray and then scoop about a tablespoon of zucchini mixture into each cup. Fill all cups and then top off each cup with some panko breadcrumbs.
5. Bake at 400 degrees for 15-20 minutes or until slightly browned on top. 
6. When tots are done use a knife around the edges to loosen the cup and then use a spoon to lift them out.
7. Last but not least - ENJOY this healthy side dish, snack, appetizer!!

So easy, so delicious, and so good for you!!

Easy Chicken Noodle Soup

Well hello there!! How have you been? 
School is back in session and so I am back to my more "regular" schedule and it feels oh sooo good!! I love routine, this is where I thrive!! 

So a few weeks ago on my facebook timeline I posted a picture of a fabulous soup I made and I promised I would get the recipe out to those who wanted it. Well here it is...trust me it is well worth the wait!!

This recipe is for the Easy Chicken Noodle Soup from the FIXATE cookbook by Autumn Calabrese!!  Now most of the recipe is exactly as it states in the FIXATE cookbook but I added in a few ingredients here and there.  

Here you go...


EASY CHICKEN NOODLE SOUP

2 teaspoons EVOO
1/2 chopped onion
2 cups celery (~ 4 medium stalks)
3 garlic cloves, minced
6 cups chicken broth
4 cups chopped grilled skinless chicken breast
1 1/2 cups sliced carrots (~ 3 medium)
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 1/4 cups dry whole wheat pasta
1/4 cup fresh cilantro, chopped

Directions...
1. Heat Oil in large saucepan over medium heat.
2. Add onion, garlic, and celery; cook stirring frequently for 5 minutes, or until onion is translucent (be sure not to burn the garlic). 
3. Add broth, chicken, carrots, oregano, salt, and pepper. Bring to a boil. Add pasta and heat on low for 10 minutes. 
4. Add cilantro before serving.

Meal Planning Monday June 8-14, 2015

I choose to eat healthy and I would love to help others learn how to do the same!! 

It all begins with focusing on what you are eating NOW!! 
So break out that pencil and paper and keep a food journal. This helps determine what foods you ARE eating and it also helps you determine how certain foods make you feel or when you might be stress and/or emotional eating.

Next step is to make a meal plan. I do this every Sunday and I am ready to go come Monday morning with what I am going to eat! It takes the guess work out of what to eat, it saves on my grocery bill (only buying what is needed), and it helps keep my body in check healthwise!!

I have this plan posted in my kitchen and in my office. I prep as much as I can for the week on Sunday and Monday. The more you can prep the easier your week will be. I do however cook most of my dinners fresh that night (unless we are having leftovers!!) Regardless it all comes down to the planning ahead of time!! When you have a plan in place you are more likely to succeed when life hands you a curve ball...and trust me it will!!

No matter what though, always remember if you WANT to eat healthier or live an overall healthy lifestyle YOU CAN!! It is possible!! All the roadblocks standing in your way are EXCUSES! The sooner you let go of those the sooner you will be begin to feel happier & healthier!!
