Stuffed Peppers

Another Tasty Recipe coming your way this week. 
This recipe is from a dear friend of mine. We had it one evening a while ago when we went to visit them at their house. I have been wanting to give the recipe a try myself as I tried a few other stuff pepper recipes but this one was my favorite.  I did alter the recipe a bit but the flavor is still the same and it is oh so delicious! Best of all it is all good for your ingredients too so it can be put in my healthy recipe box!! 




Ingredients...
4 large bell peppers
2 tablespoons olive oil
1 small yellow onion, chopped finely
1 small zucchini, chopped finely
1 garlic clove, minced
Sea Salt
ground black pepper
1 pound ground turkey
1 tablespoon fresh parsley leaves, chopped finely
1 teaspoon fresh basil leaves, chopped finely
1 1/2 cups tomato sauce
1/4 cup bread crumbs
1/2 cup grated Parmesan Cheese

Directions...
1. Cut the bell peppers lengthwise in half and remove the seeds and membranes. Place the peppers in a pot of boiling water, reduce heat to medium and simmer ~ 3 to 4 minutes. Drain and set aside. 
2. Preheat oven to 375 degrees
3. Heat oil in a large skillet over medium heat. Brown ground Turkey until cooked through.  Remove turkey from skillet and set aside.
4. To the same skillet, add the onion and cook until softened, ~ 5 minutes. Add zucchini, garlic, and salt and pepper to taste and cook until veggies are tender, ~5 minutes.   Stir in 1/2 cup tomato sauce, cover and simmer for 10 minutes
5. Remove mixture from heat and add cooked ground turkey, parsley, and basil - mix well.
6. Stuff each pepper half with mixture and place in shallow baking dish. Sprinkle with bread crumbs and Parmesan Cheese
7. Bake for approximately 30 minutes until cheese is melted and tops are slightly browned. While baking, heat the remaining tomato sauce in a small saucepan.
8. Serve peppers with a tablespoon of sauce on top.

Week 6 Piyo Meal Planning

Another week is here and you betcha I have my plan in place!! 

I am still going strong with PiYo as we are turning up the heat today with DRENCH!! 
(ha ha - there is a reason why it's called DRENCH because you finish the workout with sweat dripping off of you!)

DRENCH is one of the longer workouts but honestly to me it flew by. My favorite part of this particular workout is the FLOW section. I love the warrior poses, leg swings, and my favorite PiYo flip!! Of course there are some Piyo push-ups included here and there too.

PiYo Flip - getting there

Each week I see my body transforming and I just LOVE IT! I am becoming my old flexible self again and I LOVE the definition I am seeing all over my body, especially my legs! 

One of my favorite parts in the PiYo workout is when Chalene Johnson, creator of PiYo, informs us that everyone in that particular video is over the age of 40!! Ya know what they all look amazing and healthy!! Age is a number but so many people use that as their reason why they can't workout. Well if age is your excuse then I give you PiYo as your answer!!

Well you knew I loved PiYo before but now I am loving it even more!! 
This is so up my alley!

What I love about it...
1. Love using my own body weight as my resistance. This is a take anywhere type of workout - HUGE BONUS!! 
2. The length of the workouts is short enough that those who are "too busy to workout" will still be able to get them in and finished.
3. The Nutrition Plan - easy to follow, lots of choices, and I feel satisfied
4. The Results - how I  feel after a PiYo workout is enough for me because I feel amazing!! I remind myself of that feeling when I don't want to get out of bed in the morning!! BUT I am really enjoying seeing my body defined. Chalene wasn't kidding when she put the tag line "DEFINE YOURSELF" with PiYo!!

I mentioned above that I am loving the Nutrition Plan that comes along with PiYo! I have been meal planning for about 2 years now and although change is hard I welcome it with open arms because I know it is good for me!!

The PiYo nutrition plan is simple enough that it didn't cause me any extra time to meal plan with it. Another bonus! If you have been following me you know that I plan my week on Sundays. This way when I wake up on Monday I know what I will be eating and there is no guessing. When I guess there is more chance of me choosing poorly when it comes to food options or I just don't eat. 
If I have my meals (meaning meals & snacks) planned and prepped I am golden!!

The information in parentheses is how I track my different groups that are outlines in the PiYo Nutrition guide. 
P=Lean Protein
F=Healthy Fruit
PV=Primary Vegetable
2V=Secondary Vegetable & Grains
HF=Healthy Fat

Another exciting piece of information to share is that my first PiYo Health and Fitness group just completed Day 30 so I am anxiously awaiting to see their results thus far. For some this is their first workout in a REALLY long time and others working out is already part of their routine.

Took the Week OFF

It's Monday and well you haven't heard from me in a WEEK!

Another one of the wonderful advantages of being my own boss is I get to say when I work, how long I work, and what I work on.
I blog because I enjoy it and it helps me share my love of health and fitness. My hope is that there are many out there that find my blog interesting enough to check it out from time to time and I hope that it helps  you in your own health and fitness journey.  I apologize for my absence but honestly here is what the deal was - I needed time to refocus my energy on the good in my life and push out the negative.  I have slowly let negativity start to invade my thoughts and that in turn totally threw me off track. I have been let down and hurt by close friends and family lately and well I was throwing myself my own pity party. Hello I am human too and I have feelings that get hurt. I get down in the dumps. I get off track with my healthy eating. I get off track with my workouts. I let the negativity in and this time it won. 

BUT I am here to shout it out publicly I am done having my pity party and I am done letting others words and actions kill my MOJO.

A trip to my happy place to remind me of my dreams

This past weekend away I was reminded how fortunate I am to have the life that I live. I have a great family who loves me for all that I am good and bad, I have one fabulous sister who has always been there for me and I am thankful I had her to look up to my whole life,  I am able to stay home with my kids - raise them and spend my days with them, I am able to run a pretty tight ship household, I am building my own business that I work at my convenience and it is doing something I love - helping others, and I am fortunate to have the opportunity to spend the summers at the beach. Now this list isn't all inclusive - I have so much to be thankful for but tonight this is what's on my mind.

Tonight I challenge you too, to let go of the negativity in your life and embrace all that you have been given. We don't always see what we have as our greatest gift, but in fact is - we were given today to make it great. Tomorrow we will be given another opportunity to do the same. I know it is not always easy and I am not going to try and tell you it will be. What I do know is we can make it better than it was before.

Clean Eating Lentil Soup

When we lived in Los Angeles there was a local restaurant that made the best Lentil Soup. I always try Lentil Soup when it is available with the hopes of finding a local place that makes it just as good. So far no luck. Lentil Soup is not on many menus around here. So the best way to find your favorite is start experimenting in the kitchen and so this brings me to my recipe today...

I found this recipe online and cannot remember where I found it but whoever the creator is I am very thankful because this soup is delicious!!

Clean Eating Lentil Soup

Ingredients...
1 cup lentils, rinsed and picked through for small stones
1 onion, chopped
2-3 cloves garlic, minced
1 carrot, peeled and chopped
2 stalks celery, chopped
1 teaspoon Herbes de Provence
10 cups organic vegetable stock
1/4 cup brown rice
1 1/2 cups chopped grape tomatoes
4 cup shredded cabbage

Directions...
Place all ingredients in a large pot and bring to boil.
Turn heat to low and cook covered for ~ 1 hour or until lentils are soft

Note: The recipe also called for salt and pepper to taste but I left that out and I didn't miss it one bit. Also I did not have Herbes de Provence on hand so I found a way to make my own and then I just took 1 teaspoon of that mixture. 

Herbs de Provence
2 tablespoons dried savory
2 tablespoons dried rosemary
2 tablespoons dried thyme
2 tablespoons dried oregano
2 tablespoons dried basil
2 tablespoons dried marjoram
2 tablespoons dried fennel seed
Mix together and store in an airtight container

I always knew Lentils were good for me but just incase you are new to Lentils here is why Lentils are a great addition to your diet...

My Mission for 2014

The few days we have been in 2014 I have made such great progress I still can't believe it! I have named my Beachbody Team - Team Live Well!! I have two coaches on my team that are super close to Diamond (you may not know what that means but in the Beachbody world it is a HUGE milestone!) I have other coaches who are becoming stronger and confident women and men.  They too are helping others!! I have challengers and customers who are making great progress towards their goals.  RIGHT now, I am getting ready to start a whole new batch of AWESOMENESS and I am inviting you to join me on my mission for 2014. 

My mission this year is to help all those around me have an amazing year.  I love to help people and I love the feeling when I do help someone achieve their goals.  Yes there are financial rewards too!!




How will I do this? I want to grow my team of Independent Beachbody Coaches!! Yes, I said independent because guess what Beachbody coaches have NO BOSS to answer to!! We as individuals are our own BOSSES!! All your time and efforts and your achievements are because of YOU!! You get to reap the rewards not someone else!! 

Growing my team of coaches is important to my mission because I am just ONE person.  There are so  many people out there that could benefit from what I have to offer but I am only one person to do that.  My plan is to teach my Coaches exactly what I do and then duplicate it to begin their own business of helping others get fit and live healthier and happier lives!!  See what I mean AWESOMENESS!! 


Our country is in an epidemic when it comes to obesity! The numbers keep rising and what I also see rising is the fast food chains popping up everywhere (that will NOT help those obesity numbers!) 
How I plan on helping people and teaching my coaches how to help people is to relearn how we eat and create new Healthy Habits!! All of what I teach are things you can take with you for the rest of your life.  I don't do fad diets, I don't do diets at ALL.  What I do is help people make changes to what they are already doing and be there for them when they need that extra support and motivation.  My coaches if they choose will be do the same (remember it is YOUR business so you don't have to answer to me, you get to do what you want when you want!)

In addition to my why I also put together a top 10 list of my reason why I LOVE being a Beachbody Coach...how would you like to have these are your reasons too?

10. I have helped over 200 people get healthy and fit


I will continue to shout from the rooftops how much I LOVE being a Beachbody Coach and 2014 is going to be a year of wonderful changes to happen!! This could be your year too!!

Ever need an extra PUSH?!


How do you feel about Mondays? 

Mondays to me are just like any other day of the week, except it is called Monday!! My routine is generally the same day in and day out because I am a schedule person and I like to know what to except.  BUT if Monday is not just like any other day then, here are a few pick me ups...
