PB & J All Cleaned Up

First I have to say I love love love Tosca Reno!! She is an amazing woman and she has amazing advice to offer in regards to Clean Eating. I have two of her books - The Eat Clean Diet Recharged and The Eat Clean Diet for Family & Kids.  Both of these books have helped me change mine and my family's eating habits.  




One of my kids favorite lunchtime meals is Peanut Butter and Jelly and finding clean jelly is not as easy as I thought it would be (and quite expensive) and my berry plants are not producing yet so no go so far on my homemade jam.  So I have been searching for alternatives and I should have thought to first look in one of my Eat Clean Books because there it was.....PB & J All Cleaned Up, page 231 in the Family & Kids one.  Thank you again Tosca!!



PB & J All Cleaned Up

Ingredients...
2 slices bread (Ezekiel bread, rye, or any hearty whole grain bread)
I used 2 pieces of whole wheat bread
2 Tablespoon natural nut butter
I used my  homemade peanut butter
4 or 5 fresh strawberries, hulled and sliced

Directions...
1. Toast 2 slices of your selected bread (today I didn't toast the bread, but have done it in the past and either way it is good).
2. Spread bread with nut butter.
3. Place sliced strawberries on top of nut butter so the nut butter is completely covered with berries.
4. Place the second piece of taost on top of the first. 
Cut and Serve!! 

Next I want to try different berries and see how I like those. Yes, now I even eat PB&J sandwiches again!! 



It is really important for me to find healthy alternatives for my kids.  Most of the time they eat what we eat but there are a few "Kids" favorite foods they still eat so I am always searching for ways to clean up those.  The PB&J was one of the last ones and so I am beyond thrilled to have
this recipe. Hope you and your family enjoy it too!!

Clean Eggplant Parmesan

Okay, I sometimes get slightly obsessed when I find a new recipe I love and better yet when  my family loves it too I become even more obsessed.  

Eating Clean never tasted soooo good!  

Bring on my latest obsession...


Clean Eggplant Parmesan

Ingredients...
2 globe eggplants - large
3 large egg whites lightly beaten
3/4 cup whole wheat bread crumbs (I make my own)
6 tablespoons parmesan cheese, grated
1 1/2 teaspoon oregano
1 teaspoon garlic powder
1/4 teaspoon sea salt
2 medium tomatoes, chopped
1 tablespoon tomato paste
2 cloves garlic
basil to taste
3/4 cup part skim mozzarella cheese


Directions...
1. Preheat oven to 425 degrees
2. Spray two baking sheets with olive oil spray
3. Place the egg whites in one shallow bowl and the bread crumbs, parmesan, oregano, garlic powder, and salt in another shallow bowl
4.  Slice ends off each eggplant and then slice each one into 3/4 inch thick rounds.  
5.  Dip the rounds in egg whites then crumb mixture, then place one by one on baking sheet.
6.  Bake for 25 minutes.  

While Eggplant is baking it is time to make the sauce!
7. Take the tomatoes, tomato pate, and garlic and pulse it to a chunky sauce in a blender or food processor then transfer to a small saucepan and simmer on stove.
8.  When eggplant is done, bring out the pans and raise the rack in the oven to about 8 inches from the broiler. Switch the oven to broil.  Spoon the tomato mixture evenly on top of each eggplant slice and then top with mozzarella. 

Option:  Take a spatula and place one eggplant round on top of another to form double stacks

9.  Put eggplant into broiler and let cheese melt ~ 3 minutes.
10. Take out and serve with your favorite clean side dishes - we chose whole wheat penne pasta and green beans.

Makes 12 servings or 6 servings if you do double stacks
