My Meal Plan This Week

When I first started my health and fitness journey back in February 2012 I was eating whatever I wanted whether it was considered a clean eating food or not.  Honestly I was losing weight and inches so I thought why should I change.  The longer I continued my journey (thank goodness this time I was sticking to a routine and not giving up) the more I heard about clean eating and how it greatly benefits your body.  The principles were pretty easy to follow but it would require me giving up all the sweets that I oh so loved!!  I started to dabble in it a bit and slowly but surely I found clean eating really does make my body feel a thousand times better.  I didn't have the normal bloated, uncomfortable feeling after eating I was so use to.  I didn't want to take a nap after eating, instead I had great energy.  I didn't have my stomach issues that I thought were just part of getting older...I thought those issues were normal. The issues were not normal and it was a result of the bad foods I was feeding my body.  




 As time continued I found that if I planned in advance what I would be eating I was more likely to stay on track with clean foods.  If I didn't plan ahead I would find myself spending way more money at the grocery store, making poor food choices, and well my same old self started to creep back.


 So what did I do, I started to meal plan on a regular basis.  I thought it would be so hard and time consuming but I am here to tell you friends it is not!! The first time I did it yes it took me a bit longer but now I have it down to 5 minutes or less. I typically meal plan on Sundays.  This Sunday I did just that and sat down with my pen and paper - looked through our fridge to see what leftovers we had to use up, then what meats we had available, then went to work putting my thoughts on paper.  I also take into consideration our schedule for the week ahead.  If I know I am going to be out of the house for lunch then I will plan something that I can take along, plans with family and friends, etc.

I like things to be all tidy and neat and so that is why I put it into a word document.  I then post this document office and in our kitchen.  I include my workouts too so I never have to think about what I am doing first thing in the  morning.  My alarm goes off very early and well sometimes I am not always thinking correctly!! 



So there you have it another week of meal planning completed.  I did have one  minor change from my original hand written plan vs. my finished.  I had forgotten about an event I was going to tonight.  I will be sticking with the healthy choices.  I have been here before and they have a wide variety of foods.

Sweet Potato and Roasted Red Pepper Bisque



As you all know I am  Beachbody coach and so I talk a lot about Beachbody because well I am very passionate about what I do.  Being so involved with Beachbody I am constantly surrounded by all the latest and greatest things going on.  I try to share as much as I can but honestly if I did I would ONLY talk about Beachbody and not all of my followers would enjoy that. 



One of the programs Beachbody has been talking about a lot lately is the Beachbody 21 Day Ultimate Reset. 

I am so very interested in this program and have it on my calendar for later this year after I get back from Summit in June. Since I am currently not committed to the program I have been doing my research as far as what to expect.  The Ultimate Reset provides many fabulous recipes and so I have been incorporating them slowly into my weekly meal plan.  This week I tried the Sweet Potato and Roated Red Pepper Bisque again and I have to say this is one of the tastiest soups and  it is homemade from all natural ingredients - nothing processed.  So not only am I fueling my body with the proper nutrients but I am also feeling overjoyed when I do these things for myself.  I take a few extra minutes out of my day to prepare a meals that are so full of flavor, I love them and I am following along with the healthy lifestyle I set out to lead.  

Okay enough rambling, you came here because you wanted the recipe which by the way  is super easy to make and can be prepared ahead of time and reheated. 



Sweet Potato and Roasted Red Pepper Bisque

Ingredients...
1 sweet potato (aka garnet yam)
1/2 red bell pepper
1 cup vegetable broth or water (I used water)
1 teaspoon finely grated peeled ginger root
1 1/2 teaspoon extra virgin olive oil
2 teaspoon miso paste, diluted in 1 teaspoon hot water
Tamari or  Bragg Liquid Amos, Himilayan Salt, and herbal seasoning (to taste)

Directions...
1. Peel and cube sweet potatoes. Cook in boiling water until tender. Drain and set aside.  Meanwhile, roast a whole red bell pepper on gas stovetop or grill, turning frequently until evenly charred on the outside OR in your oven at 400 degrees for 15-20 minutes, turning every 10 minutes or until skin is charred.
2. Put pepper in bowl and cover with towel for 10 minutes to steam.  Clean off skin and seeds by running under cool water.  Remove seeds, cut in quarters, and chop one quarter into 1/2 inch cubes (set remainder of pepper aside for another use).
3.  Place sweet potato, pepper, broth or water, ginger, oil, and miso in blender or food processor.  (if you want chunky soup, set aside some chunks of pepper).  Blend thoroughly, adding more liquid to achieve desired soup consistency.  Transfer to a pot and gently heat on low until hot. Add Tamari or aminos, salt, and seasoning if desired.

Serves 1

I paired this soup with a spinach salad today for lunch and it was delicious!!

Kiwi Pineapple Delight Greenberry Shakeology

Kiwi Pineapple Delight

1 scoop Greenberry Shakeology
2 kiwis (peeled)
1/2 cup pineapple
1 cup water
Ice cubes

Clean Eggplant Parmesan

Okay, I sometimes get slightly obsessed when I find a new recipe I love and better yet when  my family loves it too I become even more obsessed.  

Eating Clean never tasted soooo good!  

Bring on my latest obsession...


Clean Eggplant Parmesan

Ingredients...
2 globe eggplants - large
3 large egg whites lightly beaten
3/4 cup whole wheat bread crumbs (I make my own)
6 tablespoons parmesan cheese, grated
1 1/2 teaspoon oregano
1 teaspoon garlic powder
1/4 teaspoon sea salt
2 medium tomatoes, chopped
1 tablespoon tomato paste
2 cloves garlic
basil to taste
3/4 cup part skim mozzarella cheese


Directions...
1. Preheat oven to 425 degrees
2. Spray two baking sheets with olive oil spray
3. Place the egg whites in one shallow bowl and the bread crumbs, parmesan, oregano, garlic powder, and salt in another shallow bowl
4.  Slice ends off each eggplant and then slice each one into 3/4 inch thick rounds.  
5.  Dip the rounds in egg whites then crumb mixture, then place one by one on baking sheet.
6.  Bake for 25 minutes.  

While Eggplant is baking it is time to make the sauce!
7. Take the tomatoes, tomato pate, and garlic and pulse it to a chunky sauce in a blender or food processor then transfer to a small saucepan and simmer on stove.
8.  When eggplant is done, bring out the pans and raise the rack in the oven to about 8 inches from the broiler. Switch the oven to broil.  Spoon the tomato mixture evenly on top of each eggplant slice and then top with mozzarella. 

Option:  Take a spatula and place one eggplant round on top of another to form double stacks

9.  Put eggplant into broiler and let cheese melt ~ 3 minutes.
10. Take out and serve with your favorite clean side dishes - we chose whole wheat penne pasta and green beans.

Makes 12 servings or 6 servings if you do double stacks
