A New Week and a New Plan!!

Getting my act in gear early this week and it is going to be a busy week!! It's Halloween week and all kinds of festivities are happening around here!! My little ones are super excited for Thursday to come.  My son is going to be the Legendary Iron Man and my daughter is going to be a purple butterfly!! Can't wait!! 

Halloween also means lots and lots of candy and other sugar loaded treats.  My husband's family always made caramel covered apples, so this year I am going to try making my own clean eating version of a caramel apple and I have to say I am pretty excited.  

Then next on our list is carving our Pumpkins!! We have had pumpkins for over a month now and they have been  making our house look pretty outside but now it is time to put our creativity to use and carve those babies!! It is always so  much fun doing it with little ones!! This year though I am saving the seeds and roasting them.  MMM, can't wait for freshly roasted pumpkin seeds. Maple Cinnamon Pumpkin Seeds is a healthy recipe I have been eyeing up!!  



Thursday rolls around and we visit our neighborhood friends and we visit the Pumpkin house.  It is a house in our neighborhood that carves close to 100 pumpkins and displays them throughout their yard.  Unfortunately this is also the last year they will be doing it so we are making sure to get there. The place is usually packed so thankfully we can walk to it from our house. 



Following Halloween I am guessing there will be many people who overindulged in the Halloween treats so I will be hosting a Shakeology 3-day cleanse.   I have done the cleanse a few times in the past and it never has disappointed me yet. If you want to learn more about the cleanse or even prepare in advance of Halloween please contact me so we can get a plan in place for you.  


To get me through the week I have prepared  my meal plan and I plan on sticking to it just in case I get tempted by a sugar loaded treat Thursday.  It is the last week of the month and do not want to go over our monthly grocery budget.  My plan is to clean out our fridge.  Use up what we have and so not much grocery shopping for me this week.  

I will be heading out tomorrow to get a few fresh items I need but my plan is to stay under $15! I won't have much prep for the week either which is nice.  Most of what we are eating is already prepared or I froze portions from a previous time when I made it.  

This week is also very exciting for  me because I am entering my  next phase of Les Mills Pump.  Week 6 is beginning tomorrow and I am super pumped!! I am noticing differences in my abs, and thighs (where I need it the most) and my weight has not changed. At this point in my journey I am trying to maintain my current weight. I am happy with my progress and I love Les Mills Pump.  

This past week the only new DVD that I started was Les Mills Pump and Shred. I have been following the schedule with Pump & Burn, Hard Core Abs, Flow, and cardio. I feel with the barbell I can handle more weight which my muscles are loving!! 
Well you know what that also means - time for my progress pictures and measurements!! AHH, that is always the moment of truth. I am  NOT  a big fan of getting my picture taken so this is always difficult for me but I do have to say the pictures really do tell the true story.  The numbers are great too but for me anyway those pictures tell it ALL!!  

Well there you have it my week all planned out!! Next plan is to stay on track!! Easypeasy when I have my strong support system around me. I don't know about you but I need that support to keep me in line and moving in the right direction.  I love love love being a part of challenge groups!!

Jennifer O. Transformation Story

Hey Moms out there want to rid yourself of that baby weight you have been carrying around with you? How many months, years has it been since your child was born?  I  have been there I know how it feels.  What is so wonderful though is that you can rid your body of that weight and do it the right way.  No crazy fad diets or starving yourself.  

Here is an inspirational story about another mom who said no more to the baby weight and she did it in a way that she can keep the weight off for good.  

Meet Jennifer O - not only did Jennifer lose 45 pounds over 6 months doing Insanity and drinking Shakeology daily but she also was a daily winner of the Beachbody Challenge.  Woo hooo - Congratulations Jennifer!!

"When I became pregnant with my son I suffered from morning sickness 24/7. And being as nauseous as I was, you’d think I would have lost my appetite. But NOOOOOOO! Instead, I gobbled up everything in sight; justifying it by saying, “I’m pregnant! I can eat anything I want!” And 9 months later, a beautiful 8 lb. 9 oz. baby boy was born and I was left carting around 60 pounds of excuses. 

Two months had passed and I was still wearing my maternity pants, trying to hide my gargantuan size. But after a while I was tired of my stomach hanging over my waistband and feeling like a slob. Not only did it look bad, it was the most uncomfortable feeling in the world. More than not wanting to end up overweight for the rest of my life, I really wanted to be able to keep up with my son as he grows up and starts running around. So I dug out my set of INSANITY DVD’s (I did it two years ago and got pretty good results) and pressed play. But this time, I told myself I’d push myself even harder as well as be super strict with my diet. And in 6 months, I went from 198 lbs. down to 153, lost 11 % body fat, and shrunk from a size 16 to a 6. Turns out, it wasn’t as hard as I thought it would be to find the time to exercise daily or to eat healthy. 

For starters, I had Shaun T. on my side. I won’t lie, there were PLENTY of times when I wanted to fall down and eat cake, but I didn’t. I just held onto his “keep going”, “don’t give up”, and “digging deeper” attitude. And I love the fact that the people in his videos didn’t intimidate me. They were as exhausted as I was and it felt great when I was actually keeping up with them. It felt even better when they’d fall and I was still going! 

And since I was exercising daily, I figured I might as well start eating healthy daily as well. So I pulled out the nutrition guide and read through it with an open mind. From the very beginning I told myself, no more cheating, no more excuses, no more “EWWW-ing” new foods. And to my surprise, I liked a ton of the recipes. Not only was I saving calories by eating healthy, I was saving big bucks because I was no longer eating lunch out. 

But the real life changer for me was Shakeology. Once I started drinking it daily, my fat literally melted away. I felt more energized, a lot happier, it improved my digestion, and I stayed fuller much, much longer. Once I had my shake for breakfast, I was set up for a day of eating well. I’m addicted to this stuff—but in a good way!

So many people from my hometown ask me how I did it. So I tell them. And now that I’m a Coach, I can pay it forward and help change their lives too. I’ve never been fitter, healthier, or happier. Thanks Beachbody!"

Spinach Tomato Pesto Pizza

I have had this recipe for quite some time and I think tonight I finally followed it and guess what it turned out AWESOME!! See I am a pizza lover and I always have been. A problem I normally have with eating pizza is I can never stop. Regular pizza you then end up feeling all bloated and disgusting and that feeling I prefer not to have anymore.  Tonight I felt something different after I overindulged (working on the overindulging part) - normal!! This pizza was so light, tasty, and oh so good!!  I highly recommend it.

Spinach Tomato Pesto Pizza
minus the mozzarella cheese and tomatoes, forgot to take a picture once added


Ingredients...
1 garlic clove, peeled
3 cups spinach leaves, chopped
2 cups fresh basil, chopped
1/4 cup walnuts or pine nuts
1/2 cup freshly grated parmesan cheese
1/4 cup extra virgin olive oil
1 (16 oz) package fresh whole wheat pizza dough - note: I did not use this I made my own Cauliflower Pizza Crust
1 cup shredded part skim mozzarella cheese
1-2 medium tomatoes, diced or sliced

Directions...
1. Preheat oven to 425 degrees.
2. Put Garlic in food processor and mince.
3. Add spinach, basil, nuts, and parmesan. Puree.  Slowly add olive oil and scrape down sides of bowl as needed. Add Salt to taste.


4. If using whole wheat pizza dough - on  a floured surface, roll out pizza dough into one large pizza or cut off a few pieces and roll out small individual pizzas.  Spread with about three fourths of the spinach basil pesto and top with mozzarella and tomato.
5. Bake for 10-12 minutes until cheese has melted and crust is browned.

   If using Cauliflower pizza crust recipe - make crust first and bake. After taking out of oven spread with about three fourths of the spinach basil pesto and top with mozzarella and tomato.
5. Bake for 5 minutes until cheese has melted and crust is browned.



Makes 6 servings

Back at IT!! Cheers to a fabulous WEEK!!

Today is Monday and although most see Monday as an evil day because it is the start of their work week I am thrilled for today. I had a new Challenge group start their Day 1 today, tomorrow is Day 30 for another group, tomorrow is also Day 30 for my own personal journey, I have a huge goal that has a deadline for Wednesday and I WILL make it, and there is so much more happening in the second half of the week.  I love to be excited to work each day and yet I get to do it all while staying home with my children.  My husband and I always said before we even had kids that we wanted one of us to always be home with the kids.  He had his turn and now it is mine and let me tell you I think I am one lucky lady.  I am having the time of my life.  Yes, I have my days where I feel like I am going to rip my hair

out but I also have more days that I feel so overwhelmed with joy that we can be here day in and day out for our kids.  I am not saying those parents that choose to not stay home with their kids are wrong or are also not in the right - what I am saying is this is what my husband and I planned on doing for our children and I am thankful that we can.




Another side to being at home is that I am able to have a bit of Adult Freedom for a few hours here and there everyday.  How? I am a BeachBody Coach and so I get to help others achieve their own health and fitness goals.  I am not a fitness expert or a nutritionist but I am someone who has gone through my own journey, which I am still continuing,  AND I enjoy helping others.  I have learned so much this past year and I continue to learn (another bonus - I am like a sponge, always have been...love, love, love learning!!).




Every wondered why I became a BeachBody coach, well here is my reasoning...



So not only am I am Mom, BeachBody Coach, but I am also a home maker and wife so what does that mean?  I help take care of our home and our family.  One of my duties is I do all the grocery shopping, cooking, and the best way I can provide healthy meals for myself and my family is to create a meal plan each week for us.  Now most of the time the meal plan I post is very specific for ME but I do also create meal plans for my kids (and slowly working on my husband!).  We all eat the same snacks, and dinners.  Where we currently differ is on breakfasts and lunches.

My days are always interesting and I can honestly say there is never a dull moment.  I am always looking for new ways to do things better so if you have any tips, experiences to share please share away.

Sweet Potato and Roasted Red Pepper Bisque



As you all know I am  Beachbody coach and so I talk a lot about Beachbody because well I am very passionate about what I do.  Being so involved with Beachbody I am constantly surrounded by all the latest and greatest things going on.  I try to share as much as I can but honestly if I did I would ONLY talk about Beachbody and not all of my followers would enjoy that. 



One of the programs Beachbody has been talking about a lot lately is the Beachbody 21 Day Ultimate Reset. 

I am so very interested in this program and have it on my calendar for later this year after I get back from Summit in June. Since I am currently not committed to the program I have been doing my research as far as what to expect.  The Ultimate Reset provides many fabulous recipes and so I have been incorporating them slowly into my weekly meal plan.  This week I tried the Sweet Potato and Roated Red Pepper Bisque again and I have to say this is one of the tastiest soups and  it is homemade from all natural ingredients - nothing processed.  So not only am I fueling my body with the proper nutrients but I am also feeling overjoyed when I do these things for myself.  I take a few extra minutes out of my day to prepare a meals that are so full of flavor, I love them and I am following along with the healthy lifestyle I set out to lead.  

Okay enough rambling, you came here because you wanted the recipe which by the way  is super easy to make and can be prepared ahead of time and reheated. 



Sweet Potato and Roasted Red Pepper Bisque

Ingredients...
1 sweet potato (aka garnet yam)
1/2 red bell pepper
1 cup vegetable broth or water (I used water)
1 teaspoon finely grated peeled ginger root
1 1/2 teaspoon extra virgin olive oil
2 teaspoon miso paste, diluted in 1 teaspoon hot water
Tamari or  Bragg Liquid Amos, Himilayan Salt, and herbal seasoning (to taste)

Directions...
1. Peel and cube sweet potatoes. Cook in boiling water until tender. Drain and set aside.  Meanwhile, roast a whole red bell pepper on gas stovetop or grill, turning frequently until evenly charred on the outside OR in your oven at 400 degrees for 15-20 minutes, turning every 10 minutes or until skin is charred.
2. Put pepper in bowl and cover with towel for 10 minutes to steam.  Clean off skin and seeds by running under cool water.  Remove seeds, cut in quarters, and chop one quarter into 1/2 inch cubes (set remainder of pepper aside for another use).
3.  Place sweet potato, pepper, broth or water, ginger, oil, and miso in blender or food processor.  (if you want chunky soup, set aside some chunks of pepper).  Blend thoroughly, adding more liquid to achieve desired soup consistency.  Transfer to a pot and gently heat on low until hot. Add Tamari or aminos, salt, and seasoning if desired.

Serves 1

I paired this soup with a spinach salad today for lunch and it was delicious!!

Coconut Pineapple Muffins

Mmmm, want your cake and be able to eat it too?  
Well then look no further - here is a recipe that is so darn tasty and shhh, don't tell your friends IT IS GOOD FOR YOU!! 
Coconut Pineapple Muffins Clean Eating style!!!! 



Coconut Pineapple Muffins

Ingredients...
1 1/2 cups whole wheat pastry flour (def. use pastry flour and not regular) 
2 teaspoons baking powder
1/2 cup unsweetened coconut flakes
2 egg whites
1/2 cup honey
1/4 cup safflower oil
1/4 cup light coconut milk
1 cup fresh pineapple - chopped

Directions...
1. Preheat oven to 400 degrees.
2. Line your muffin tins with muffin papers and lightly spray with cooking spray
3. In a medium bowl, combine the flour, baking powder, and coconut.  Whisk together, then add pineapple.  Stir.  (this will coat the pineapple in flour completely)
4. In a second, medium bowl, combine the egg whites, honey, oil, and coconut milk.  
5. Now combine the contents of both bowls and stir well.
6. Place the muffin tins in the oven and also include on a the lower rack a oven proof save dish filled with water.  (the water will create a bit of steam which will keep your muffins moist).  
7. Bake for 15-20 minutes.  Test with a toothpick or cake stick and make sure it comes out clean.  (there may be a  slight bit of moistness left in the middle due to pineapple, but not a lot).
8.  Allow to cool and serve.  

Makes 12 muffins
