Nutter Butter Shakeology

Thirsty Thursday here again and today I am spotlighting one of my recent favorite Shakeology recipes - Nutter Butter!!

1 scoop Vanilla Shakeology
1/2 banana
1 cup almond milk
2 teaspoons natural peanut butter
ice to taste
blend and enjoy

How nice is it that you can have over 70 vitamins and nutrients in one glass! Shakeology's ingredients are equivalent to eating 5 plates of salad and best yet it tastes like dessert!!

Since I have been drinking shakeology my energy has increased, I stay on track with healthier choices, my sweet cravings have decreased BIG TIME, and best of all I save money by drinking shakeology!! Yes that is right I SAVE money.  Many people are scared by the price tag of shakeology but in fact those people just don't understand how to use shakeology.  I was there once too!! 

You have to remember you are replacing one meal per day with this delicious shake AND I dare you to compare the price of a healthy meal to the daily cost of shakeology.  Each and every time I have done this experiment myself I could have had multiple shakes for the price of that one HEALTHY MEAL.  Yes, you could go to the drive-thru and buy garbage and maybe spend less, but that is about it!!

Asian Seared Pork Chops


Well here you have it another Tastey Tuesday is here and today I bring you a melt in your mouth pork chop recipe. I am a budge savvy kind of gal so when Meat that my family enjoys is on sale I BUY!! I was cleaning out my freezer this past weekend as I was putting together my meal plan for the week and found Pork Chops that I needed to use before the end of the month.  
So, what do I do, but look for a new clean eating Pork Chop recipe!! 
This one is sure to please the taste buds!!


Asian Seared Pork Chops




Ingredients...
2 teaspoons extra virgin olive oil
4 pork chops, lean (bone-in or boneless)
1/2 teaspoon black pepper
1 cup chicken broth, low sodium
2 tablespoons reduced sodium soy sauce
2 tablespoons white rice vinegar
1 tablespoon demerara, turbinado, or sucanant sugar
1 1/2 teaspoons garlic, minced
1 teaspoon ground ginger

Directions...
1. Combine all ingredients (minus pork chops) in a sealable bag & shake to mix.
2. Add Pork chops and mix around to coat chops.
3. Marinate for at least 1 hour (longer if you want a more robust flavor)
4. Remove pork chops from marinade and either bake in oven at 375 degrees for 40 minutes or until juices run clear OR grill on medium heat for about 8-10 minutes per side (we did the grilling option).

Detox Shakeology

One of my Favorite websites to go everyday is Teambeachbody.com
I don't go there just because I am a beachbody coach but instead I like going their daily as there is always inspiring transformations to be seen and a ton of tips to help improve your nutrition, your workout, or your overall life.

Today this particular recipe was shared and for me it was absolutely just what I needed.  Today is New Years day 2014 and although I did not over do it last night I still feel drained.  It could be from all the running around during the last week for the holidays, not getting enough sleep, one too many cheats, or who knows what.  Regardless I feel drained!! When I saw this recipe it sounded yummy and when in doubt I reach for my Shakeology!! I always can rest assured that at least one of my meals daily is going to be exactly what I need and Shakeology never disappoints!!  

Detox Shakeology

Ingredients...
¾ cup water
1 cup diced watermelon
1 Tbsp. fresh lemon juice
1 tsp. grated raw ginger root
1 scoop Tropical Strawberry Shakeology
1 cup ice cubes

Directions...
Place water, watermelon, lemon juice, ginger, 
and ice in blender. Cover; blend until smooth.

It tasted refreshing and gave me the energy I so desperately was needing!!

Tasty Naked Wonton Soup

OH MY GOODNESS this was one of the easiest soups to make and it was ooh sooo good.  My house smelled amazing all day even to the point when my husband came home from work he said he wanted to try the soup just based on the smell!!

This is another recipe from Tosca Reno's Eat Clean Diet Stripped Book and one for sure I will be repeating again and again!! 


Tasty Naked Wonton Soup



Ingredients...
8 cups low-sodium chicken broth
1 Tbsp thinly sliced ginger (heaping)
2 cloves garlic, thinly sliced
1 whole star anise
1 bunch green onions, chopped, dark green parts divided from the white and light green parts
1 tspsea salt, divided
1 lb extra lean ground chicken (i used ground Turkey)
1 tbsp reduced -sodium Tamari ( I used Soy sauce)
1 tsp  sesame oil
1/4 tsp Chinese five spice powder
1/4 tsp  freshly ground black pepper
4 baby bok choy, cut in half lengthwise
chilli sauce, to garnish (optional)

Directions
1. in a large saucepot, combine chicken broth ginger, garlic, star aniseed, and white and light green parts of green onions over high heat until boiling. Reduce heat o simmer until flavors combine, about 20 minutes. strain broth into la large bowl; pour broth back into saucepot and return to stove over low heat. Season with half a teaspoon salt.
2. In the meantime, combine chicken, tamari, sesame oil, Chinese five spice, remaining half-teaspoon salt, pepper and half of dark green port of green onions. Mix well.
3. Increase temperature under strained broth to bring to a brisk simmering broth to cook through, about 5 minutes. Lay baby bok choy on top of naked wntons cut side down, cover; steam for one minute.
4. Split soup evenly between fur large bowls. Top with remaining dark green onions and chili sauce, if desired.

Serving Size: 4 servings

Last but not least enjoy!! This was such a filling and tasty lunch today!! Rethinking my lunch for tomorrow - I want more Tasty Naked Wonton Soup!!

Neapolitan Vanilla Shakeology

So in love with Vanilla Shakeology.  I have not tried one recipe yet that I didn't like.  Here is another that will not only leave your taste buds satisfied but also leave you feeling full and best of all you are providing your body with all the essential vitamins and minerals it needs plus a whole lot more. Side effects include - weight loss, energy, and curbed cravings!


bring on the new recipe and definitely one I will keep in my rotation...

Neapolitan Vanilla Shakeology


1 scoop Vanilla Shakeology
1 cup water
1/2 cup strawberries
1 teaspoon unsweetened cocoa 
(although I replace this with Chocolate Shakeology)
Ice
Blend and ENJOY!!

Nutty Butter Vanilla Shakeology

Loving the new Vanilla Shakeology is an understatement! Every recipe I try is awesome!! The one I tried today had all the things I love so I figured it would be fantastic and well, it was!! 

Nutty Butter Vanilla Shakeology

1 scoop Vanilla Shakeology
1 cup nonfat milk
1/2 medium banana
1 tablespoon all-natural Peanut Butter
1/4 cup coarsely chopped raw walnuts
Ice, if desired
Blend 

Last but not least ENJOY!! 

Vanilla Shakeology to me is like having my dessert!! I have always been a girl with a sweet tooth and now this is how I can satisfy my sweet tooth.  What is great though, since I have been drinking shakeology I no longer get the sweet cravings. That alone is reason enough to continue drinking Shakeology.

Quinoa Taco Salad

When people who say they don't like healthy food LOVE a recipe you make that is healthy then you know it is a keeper!! I can't tell you how many times people told me healthy food has no taste.  Well I am here to prove you wrong!! This dinner is sure to make your taste buds tingle!! 

Quinoa Taco Salad


Ingredients...
1 cup quinoa
1 red onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 1/2 teaspoons cumin
1/2 teaspoon oregano
1-2 teaspoons chili powder
1 15 ounce can black beans, drained and rinsed
2 plum tomatoes, diced
2 limes
salt and pepper, to taste
6-8 ounces baby spinach (the more the better in my book - love spinach)
1 bunch cilantro
1/3 cup cheddar cheese or feta cheese (I used cheddar)
1 avocado, sliced

Optional: If you would like to add meat to this dish, add 1/2 pound cooked ground turkey

Directions...
1. Cook the quinoa according to package directions (usually 1 cup quinoa with 2 cups liquid, bring to boil. Cover and simmer for 15 minutes)
2. While quinoa is cooking, swirl a bit of olive oil in a saute pan. heat over medium high heat. Add onion and saute for 3-5 minutes or until translucent and tender. Add garlic, cumin, oregano, chili powder, and peppers, and saute an additional 2-3 minutes.
3. Remove from heat. Stir in black beans, tomatoes, and juice of 1 lime. Mix together.
4. Add quinoa, mix and season with salt and pepper
Note: if you are adding cooked ground turkey you would add this in the same time you add the quinoa.
5. Chill quinoa salad mixture in refrigerator.
6. While mixture is chilling, cut baby spinach into strips like you would for tacos.  Remove about 1 cup cilantro leaves from the bunch, rinse and pat dry.  Toss cilantro with spinach strips.  
7. Divide spinach mixture onto plates and top with chilled quinoa salad mixture.  
8. Top each salad with desired cheese and diced avocado. Cut the remaining lime into slices and garnish plates.  

Yields 4 servings.

Yes, this recipe tastes as good as it sounds and looks!! What is also so wonderful about this particular salad is that it is great for a lunch or dinner. I also love that it is a cold dish because that means you can take it on the go with you.
