Tasty Naked Wonton Soup

OH MY GOODNESS this was one of the easiest soups to make and it was ooh sooo good.  My house smelled amazing all day even to the point when my husband came home from work he said he wanted to try the soup just based on the smell!!

This is another recipe from Tosca Reno's Eat Clean Diet Stripped Book and one for sure I will be repeating again and again!! 


Tasty Naked Wonton Soup



Ingredients...
8 cups low-sodium chicken broth
1 Tbsp thinly sliced ginger (heaping)
2 cloves garlic, thinly sliced
1 whole star anise
1 bunch green onions, chopped, dark green parts divided from the white and light green parts
1 tspsea salt, divided
1 lb extra lean ground chicken (i used ground Turkey)
1 tbsp reduced -sodium Tamari ( I used Soy sauce)
1 tsp  sesame oil
1/4 tsp Chinese five spice powder
1/4 tsp  freshly ground black pepper
4 baby bok choy, cut in half lengthwise
chilli sauce, to garnish (optional)

Directions
1. in a large saucepot, combine chicken broth ginger, garlic, star aniseed, and white and light green parts of green onions over high heat until boiling. Reduce heat o simmer until flavors combine, about 20 minutes. strain broth into la large bowl; pour broth back into saucepot and return to stove over low heat. Season with half a teaspoon salt.
2. In the meantime, combine chicken, tamari, sesame oil, Chinese five spice, remaining half-teaspoon salt, pepper and half of dark green port of green onions. Mix well.
3. Increase temperature under strained broth to bring to a brisk simmering broth to cook through, about 5 minutes. Lay baby bok choy on top of naked wntons cut side down, cover; steam for one minute.
4. Split soup evenly between fur large bowls. Top with remaining dark green onions and chili sauce, if desired.

Serving Size: 4 servings

Last but not least enjoy!! This was such a filling and tasty lunch today!! Rethinking my lunch for tomorrow - I want more Tasty Naked Wonton Soup!!

Quinoa Taco Salad

When people who say they don't like healthy food LOVE a recipe you make that is healthy then you know it is a keeper!! I can't tell you how many times people told me healthy food has no taste.  Well I am here to prove you wrong!! This dinner is sure to make your taste buds tingle!! 

Quinoa Taco Salad


Ingredients...
1 cup quinoa
1 red onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 1/2 teaspoons cumin
1/2 teaspoon oregano
1-2 teaspoons chili powder
1 15 ounce can black beans, drained and rinsed
2 plum tomatoes, diced
2 limes
salt and pepper, to taste
6-8 ounces baby spinach (the more the better in my book - love spinach)
1 bunch cilantro
1/3 cup cheddar cheese or feta cheese (I used cheddar)
1 avocado, sliced

Optional: If you would like to add meat to this dish, add 1/2 pound cooked ground turkey

Directions...
1. Cook the quinoa according to package directions (usually 1 cup quinoa with 2 cups liquid, bring to boil. Cover and simmer for 15 minutes)
2. While quinoa is cooking, swirl a bit of olive oil in a saute pan. heat over medium high heat. Add onion and saute for 3-5 minutes or until translucent and tender. Add garlic, cumin, oregano, chili powder, and peppers, and saute an additional 2-3 minutes.
3. Remove from heat. Stir in black beans, tomatoes, and juice of 1 lime. Mix together.
4. Add quinoa, mix and season with salt and pepper
Note: if you are adding cooked ground turkey you would add this in the same time you add the quinoa.
5. Chill quinoa salad mixture in refrigerator.
6. While mixture is chilling, cut baby spinach into strips like you would for tacos.  Remove about 1 cup cilantro leaves from the bunch, rinse and pat dry.  Toss cilantro with spinach strips.  
7. Divide spinach mixture onto plates and top with chilled quinoa salad mixture.  
8. Top each salad with desired cheese and diced avocado. Cut the remaining lime into slices and garnish plates.  

Yields 4 servings.

Yes, this recipe tastes as good as it sounds and looks!! What is also so wonderful about this particular salad is that it is great for a lunch or dinner. I also love that it is a cold dish because that means you can take it on the go with you.

Edamame, Tomato, and Feta Salad with Fresh Basil

Edamame was always a favorite of mine but this recipe takes it to a whole new Level!!!!  I even got a new salad dressing to use on my everyday salads from this recipe!!!!


So, when I found this recipe, it was listed as an appetizer.  I personally have it for lunch.  It is light, refreshing, and it can be taken on the go.  My husband loves it too and even has my father-in-law asking for more!!!!






Ingredients...
3 tablespoons olive oil
2 tablespoon red wine vinegar, or to taste
1 tablespoon water
1 clove of garlic, minced
3/4 teaspoon table salt
1/4 teaspoon black pepper
1 pound edamame (shelled) cooked
10 medium plum tomatoes seeded and chopped
1/2 cup basil, fresh, cut into ribbons
1 small uncooked red onion finely sliced
1/2 cup crumbled feta cheese

Instructions...
Dressing - In a small bowl, combine oil, vinegar, water, garlic, salt, and pepper, set aside.

In a large serving bowl, combine edamame, tomatoes, basil, and onion.
Toss mixture with dressing and sprinkle with cheese.  

Serving size - 1 cup per serving
