Baked Chicken with Tarragon and Dijon Mustard

When your kid asks for seconds at dinner you know the recipe is a KEEPER!! 

I kid you not, my son Leo asked for Seconds of our dinner tonight!! This was a new recipe I was trying out so honestly I think my mouth hit the table!! New recipes as you know can go either way with the family!! Not everything we try we like but tonight this chicken dish was a HIT!!


Any mom would love to hear 
1. her child is eating their dinner with no complaints 
2. her child asking for more!!

This is a healthy dish that I am proud to serve my family!!
I give you the recipe for...
BAKED CHICKEN with TARRAGON & DIJON MUSTARD

Ingredients...
4 tablespoons EVOO
1/3 cup Dijon Mustard
2 tablespoons chopped fresh tarragon or 1 tablespoon dried tarragon
1/2 teaspoon ground pepper
6 chicken breasts or 12 chicken breast tenders
1 cup dry breadcrumbs

Directions...
1. Preheat oven to 425 degrees
2.  In a shallow bowl add EVOO, Mustard, Pepper, and Tarragon. Mix until combined
3. In a plastic zip baggie add the bread crumbs (or you can do another shallow dish of bread crumbs)
4. Take chicken and place in shallow bowl with mustard mixture and coat well. Then transfer chicken to either baggie or dish of bread crumbs and coat. 
5. Transfer well coated chicken to roasting pan or large baking dish
6. Cook for 35-45 minutes or until cooked thoroughly.
7. Serve immediately and ENJOY!!

Tonight as I said this is what we had for dinner. I paired it with a serving of green beans which I steamed.

Veggie Stir Fry

The recipe I am sharing today is inspired by my quest to find meat free meals we as a family can eat during the Season of Lent!!

and added a little bit extra seasoning!! This recipe is also my go to meal during the Refresh as well!


Fresh ingredients, herbs, and very little time to prep and cook make this a FAVORITE of mine!

Ingredients...
1/2 teaspoon EVOO
1/2 clove garlic, minced
1/2 teaspoon grated fresh ginger
1/2 cup green beans (I have also used asparagus & broccoli. Picture above has asparagus!)
1/2 cup sliced fresh carrot
1/2 cup sliced fresh red bell pepper
1/4 teaspoon sea salt
1 teaspoon 21 Day Fix All Purpose Seasoning Mix
2 tablespoons organic vegetable broth

Directions...
1. Heat oil in medium skillet over medium heat.
2. Add in garlic and ginger and stir ~1-2 minutes or until fragrant (this is one of the best smells!!)
3. Add green beans, carrots, bell pepper, salt, seasoning mix, and broth 
4. Cook for 5 to 7 minutes or until veggies are tender-crisp!!
Enjoy!! 

Now I know many people think eating healthy is super expensive, but in fact everything can be super expensive. I have found if I plan my meals ahead of time, If I make a like, If I shop around, I can save a ton of money and still eat super healthy.

Herbed Avocado Spread

Herbed Avocado Spread



I have learned a lot in the past year and half about what foods and their ingredients are good and bad for you. How some foods can help give you natural energy and how some can suck the life out of you and only leave you feeling more hungry, bloated, and BLAH!! Well I said NO MORE and now I am doing my best to continue to choose healthier options everyday for myself and family.  



In the past I would have used mayo and had no problems with it, until I researched and saw how it is full of a bunch of processed nothing.  Now I don't like my sandwiches dry so I had been searching for a healthy alternative. Well here you go, a perfect swap for mayo that is full of FLAVOR and NUTRITION!! I give you Herbed Avocado Spread...

Turkey Burger with Herbed Avocado Spread on the Left
and
Herb Avocado Spread on the Right

Ingredients...

1 ripe avocado
1 tablespoon Greek Yogurt
1 tablespoon fresh chives
1 tablespoon fresh parsley
1 tablespoon lemon juice
dash of sea salt
dash of black pepper

Directions...
1. Chop and blend Avocado
2. Mix in  fresh herbs, lemon juice, and seasoning.
Enjoy!!

Voila there you have your new healthy spread to use on sandwiches, wraps or as a topping on fish, chicken, beef, eggs (this is next on my list), or as I used it a TURKEY BURGER - YUMM!!

Black Bean Salsa & Eggs


Talk about flavor bursting in your mouth! This was a recipe I tried this week and it was delicious!! I got it from Tosca Reno's Eat Clean Diet Family & Kids book. 

Aaaaamazing! 


Breakfast never tasted soooo good!!







Ingredients...
1 tablespoon extra virgin olive oil
1 small onion, chopped
1 clove garlic, minced
1 19 ounce can of black beans, drained and rinsed
2 plum tomatoes, chopped
1 cup salsa
2 tablespoon chopped fresh cilantro
Dash Worcestershire sauce
5 egg whites
1 whole egg
cooking spray

Directions...
Black Bean Salsa - 
1.In a saucepan, heat oil over medium high heat; cook onion and garlic for 3 to 5 minutes or until softened.  
2. Stir in beans, tomatoes, and salsa.  Cook for several minutes or until thickened.  Stir in cilantro and Worcestershire sauce.  

Eggs - 
1. Whip egg whites and whole egg together in bowl.  Spray large skillet and heat over medium.  Pour eggs into hot skillet and scramble/cook until just done.  

Spoon black bean salsa onto plates and settle eggs on top of salsa.  
Makes two servings.

Cinnamon Quinoa Bake

Again another new recipe with Quinoa! This food item is becoming a staple in my house, so much that I now buy it in bulk at Costco.  I received this recipe from a friend and now I love it for my morning breakfast.  I made a huge batch and then I divided it into single serve portions.  Refrigerated what I would need for the week and individually wrapped the portion and froze them.  Now all I need to do next week is take out a portion either before I start my morning workout and it will be defrosted by the time I am ready for breakfast or place in microwave for 30 seconds and voila breakfast is served!!!!



Cinnamon Quinoa Bake



Ingredients...
2 1/2 cups of quinoa cooked and cooled
4 eggs beaten
1/3 cup vanilla soy milk (personally I don't drink soy so I used vanilla almond milk)
1/3 cup maple syrup (optional)
1 teaspoon vanilla extract
1 tablespoon cinnamon

Directions...
1. Preheat the oven to 375 degrees.  Line an 8 x 8 baking pan - lightly spray cooking spray onto parchment.
2.  Place the quiona in large mixing bowl.  
3.  In a small bowl, whisk together eggs, milk, vanilla extract, and cinnamon until thoroughly combined.  Add maple syrup and whisk.
4. Add egg mixture to cooked and cooled quinoa. Stir with a large spoon to combine.  Pour onto parchment lined baking pan and spread it around to ensure that it is even.
5.  Bake for 20-25 minutes until set and golden.
6. Using parchment, remove bake from pan as soon as possible so that it does not steam.
7. Cool completely and cut into squares, Serve with a dollop of nut butter or garnish with fresh fruit.  

Makes 12 bars
