Chocolate Peanut Butter Cups

Chocolate + Peanut Butter = HEAVEN!!
You with me on this one?!?!


Ahh this combination is one of my favorites!! Growing up and well into my adulthood I have always been a sucker for those little chocolate and peanut butter cups. Unfortunately the traditional peanut butter cups are not all that good for you - sorry to be the bearer of bad news!!

The great news is that I now have a  healthy alternative for you!

You can thank me later when your kids start to beg you to make these and you don't have to worry about all the chemicals they are putting in their bodies!! The Chocolate Peanut Butter Cup recipe I have to share with you is made with Shakeology, natural Peanut Butter, and Coconut Oil - that is it!!

Get ready for your mouth to water....

Ingredients....
12 tablespoons coconut oil (divided 6 tablespoons each)
3 packets or scoops of Chocolate Shakeology (divided 1.5 packets/1.5 scoops each)
12 Teaspoons natural peanut butter, divided

Directions...
1. Place 6 tablespoons coconut oil in a microwave safe bowl. Microwave for 30 seconds or until oil is liquified
2. Stir in 1.5 packets or scoops of Chocolate Shakeology. Mix well
3. Using a 12 muffin tin, divide the chocolate mixture evenly between the 12 spots
4. Place muffin tray in freezer for 5 minutes
5. Take the muffin tray out of freezer and on each solid piece of chocolate place 1 teaspoon peanut butter. Spread evenly over each chocolate piece with a knife. 
6. Melt the remaining 6 tablespoons coconut oil in microwave for 30 seconds. 
7. Stir in remaining 1.5 packets/scoops Chocolate Shakeology. Mix well.
8. Now on top of the peanut butter evenly divide the chocolate mixture. 
9. Place the muffin pan in the freezer for 30 minutes. 
10. Remove from freezer and the Chocolate Peanut butter cups should slide out nicely. 

Enjoy!! 

These for sure are a keeper and a great alternative to the traditional peanut butter cups!!

Note: Best to store the chocolate peanut butter cups in the freezer or refrigerator.

Vanilla Cinnamon Chia Pudding

Thirsty Thursday is HERE! and oh how this day reminds me of college and many of my unhealthy behaviors - like consuming large amounts of beer!  Well I am thankful to say my habits have changed for the better and I now rarely drink beer.  What I do drink quite often is my healthiest meal of the day - SHAKEOLOGY!! You know it, you know I love this stuff!!

Today instead of new Shake recipe I am going to share with you a super yummy snack that is make with SHAKEOLOGY. yes, you cannot drink it but because it uses Shakeology I thought it was appropriate to share on Thirsty Thursday! 

Vanilla Cinnamon Chia Pudding


Ingredients...
1 1/2 scoops Vanilla Shakeology
3 cup nonfat milk (or unsweetened almond milk)
1 tablespoon raw honey
1 teaspoon ground cinnamon
6 tablespoons chia seeds
chopped fresh fruit (for garnish, optional)

Directions...
1. Place milk, SHAKEOLOGY, honey, and cinnamon in blender and blend until smooth.
2. Pour milk mixture into medium glass blow. Add chia seeds and mix well
3. Cover bowl and refrigerate for at least 4 hours or overnight (mix after 2 hours).
4. Garnish with fresh fruit and as always enjoy!!

Makes 6 servings, 1/2 cup serving size.

Zucchini Brownies

When I saw this recipe (yes another that was circulating around on Facebook) I thought, hmm really? zucchini in brownies? how would that taste? Would I like it? Would my husband like it?  Would my kids like it (they are the true test)?  How would this compare to the boxed version we in the past loved?  

Well I for one loved them, my kids loved them, now just waiting to hear what the hubby thinks.  Regardless I say this is a score for a healthy treat to add to the kids snack list!!  

MMMMMMmmmmmmm goodness without the guilt!!  



Ingredients...
1 cup almond butter (I made my own - yum!)
1 1/2 cups grated zucchini, squeezed well
1/3 cup honey
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
1 cup dark chocolate chips

Directions...
1. Preheat oven to 350 degrees
2. Melt chocolate chips in a double broiler
3. Combine all the ingredients in a bowl and mix
4. Pour batter into baking dish and bake for 35-45 minutes
5. Cool before eating
