Grilled Honey Lime Chicken

Have I ever told you how much I LOVE food?

Also I love finding new recipes or taking old recipes and making a healthier version. I have taken mostly all of our favorite family recipes and made them healthier. I figured if they still looked the same and had the same name it would be an easier transition for my family (sometimes that worked and sometimes it didn't). Most of the healthier versions tasted soooo much better - the flavors would pop in your mouth!! Anyway, I digress -  I am here to share with you a new recipe I am adding to my recipe box.

This recipe calls for you to grill the chicken and well I have no clue how to work our grill and so it is the perfect excuse to get my hubby cooking! 


                                          Grilled Honey Lime Chicken

as you can see we had this with
green beans and a quinoa and brown rice medley


Ingredients...
6 medium boneless and skinless chicken breasts
juice from 2 limes
1/2 cup honey
2 tablespoons Worcestershire sauce
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon cumin

Directions...

1. Add all the ingredients except the chicken in a sealable plastic bag. Mix contents around
2. Add chicken and mix around
3. Marinate for at least an hour but for best flavor, marinate overnight.
4. When you are ready to cook, fire up the grill!! Preheat for a good 10 minutes. 
5. When grill is ready, cook chicken for 8-10 minutes per side or until cooked through. 
6. Remove from grill - serve - and enjoy!!

Dijon Crusted Panko Chicken

Love me some yummy food!! 

Seriously who doesn't love food that is yummy?!?!

I am always amazed at how much I use to despise cooking and now I LOVE IT! There is something about creating foods that are not only healthy but tasty too. HUH who knew my hands could do that!!

Each week I am always wanting to add in or at least try a new healthy recipe. I don't always but I can tell you I am always looking!! If you happen to come across a recipe or a meal that you LOVE please share it with me!! 

Today I am sharing a recipe that I have been working on for a few weeks now and have finally got it to the point where it is easy and yummy!! I found a recipe online and have added a bit of my touch to it.

Dijon Panko Crusted Chicken

Ingredients...
2 tablespoons dijon mustard
2 cloves garlic, minced
2 tablespoons lemon juice (fresh squeezed is best!)
1 teaspoon salt, divided in half
1/2 teaspoon black pepper
2 pounds boneless skinless chicken breast
1 cup whole wheat panko break crumbs
1 teaspoon thyme

Directions...
1. Heat oven to 450 degrees
2. Whisk mustard, garlic, lemon juice, 1/2 teaspoon salt, and black pepper in large bowl. 
3. Mix breadcrumbs, thyme, 1/2 teaspoon salt in shallow bowl. 
4. Prepare baking sheet with cooking spray
5. Coat one piece of chicken in mustard mixture then coat both sides in breadcrumb mixture and place on prepared baking sheet
6. Bake chicken for 25 minutes or until cooked through

Lastly, ENJOY!!

This was a meal my entire family loved and asked for more!! I served with a fresh veggie and brown rice & quinoa medley.

Grilled Chicken with Apples and Honey

  
 As you know I love finding new recipes and better yet is when I don't have to search for them myself.  

One of the great advantages of when you purchase a health and fitness bundle pack (a.k.a. a challenge pack) from teambeachbody.com is that you get a free 30 day trial to the Club Membership that is available. Well I have to tell you I am so happy I got that free trial when I did because honestly I would not have paid for the upgrade!! Why I am so thankful for the membership is because it gave me access to a super cool feature on the teambeachbody.com website - the MEAL PLANNING WIZARD!! Yep, that is right the wizard does the work for you. AWESOME!! So that is where this particular recipe comes from, a suggestion from teambeachbody.com.  



Grilled Chicken with Apples and Honey

Ingredients...
1/4 cup white wine or low sodium chicken broth
1 tablespoon dijon mustard
2 teaspoons raw honey
1 dash sea salt
4 teaspoon olive oil, divided use
4 (4 oz) raw chicken breasts, boneless, skinless
4 medium Granny Smith apples, peeled, cored, thinly sliced
1/2 medium onion, thinly sliced

Directions...
1. Preheat Grill or broiler
2. Combine wine, mustard, honey, and salt in a small bowl, whisk to blend. 
Set aside
3. Brush chicken breasts evenly with 1 teaspoon olive oil
4. Grill or broil chicken for 5 minutes on each side or until chicken is no longer pink in the middle and juices run clear. Set Aside.
5. While chicken is cooking, heat remaining 3 teaspoons oil in medium nonstick skillet over medium heat. 
6. Add apples, onion, and wine mixture; cook, stirring frequently for 8 to 10 minutes or until apples are tender and liquid thickens slightly to sauce consistency.
7. Serve apples over chicken

Viola dinner is served!! 

We served out chicken with steamed broccoli and a brown rice quinoa medley (from Costco and it rocks!)
