Oven Baked Chicken Fajita

We are all busy.  We all have the same amount of hours in each of our days. One of my priorities during my day is making sure my family and I eat healthy clean  meals.  What makes this all the more better is when I find a recipe for something tasty and quick.  I present to you 

Oven Baked Chicken Fajita

1 pound boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
2 teaspoons chili powder
1 1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon seasoned salt
1 (15 oz) can diced tomatoes with green chilies
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips
1/2 cup frozen corn

1. Preheat oven to 400 degrees.  
2. Place chicken strips in a 13x9 baking dish that has been lightly sprayed with cooking spray. 
3.  In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt. 
4. Drizzle the spice mixture over the chicken and stir to coat
5. Next add the tomatoes, peppers, onions, and corn to the dish and stir to combine
6. Bake uncovered for 25-30 minutes or until chicken is cooked through and the vegetables are tender. 

You can eat this meal just as is or you can wrap in a tortilla. Personally I choose whole wheat tortillas that I get from Costco. I add some homemade guacamole first, add the fajita mixture, top with some shredded cheddar cheese (sometimes not all the time), and salsa.  I have also paired this dish with quinoa or brown rice, refried beans, black beans and rice, and I am open to other suggestions.  So if you try this recipe, please let me know your thoughts and what you paired it with.
