Clean Choco-Chocolate Chip Muffins

Tastey Tuesday is here today with a delicious snack or maybe even a dessert that falls in line with the clean eating principles. So if you are a healthy eater this is for you!! Or maybe you want to eat healthy but need to have a sweet treat every once in a while - well then here is an alternative to the normal muffins you might indulge in. 

So let me ask you this question....
Who doesn't love some sweetness in their life? 
especially CHOCOLATE!!

I know for sure both of my hands are raised. I have always had a sweet tooth. Thankfully though as I changed my eating habits by cleaning up the ingredients and adding in Shakeology I have been able to control that sweet addiction. I do still however enjoy from time to time.  Last week I made these muffins and they totally hit the sweet spot!!


If you should ever need something sweet or want a dessert to share with your family or even take to a party these muffins are sure to please the crowd. I loved them and so did my kids (my wonderful taste-testers!)

Clean Choco-Chocolate Chip Muffins

Ingredients...
1 3/4 cup oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup plain Greek Yogurt
1 1/2 tablespoons vinegar
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup hot water
1/2 cup demerara sugar
1/2 cup dark chocolate chips

Directions...
1. Preheat oven to 350 degrees
2. Line 2 (12 cup) muffins pans with cupcake liners
3. In a food processor mix all ingredients except chocolate chips. Blend until oats are ground and mixture is smooth.
4. Dump mixture into a medium bowl and stir in 1/2 of the chocolate chips (set the rest aside)
5. Divide mixture evenly between the 24 cupcake liners.  
6. Place muffin pans in the oven for 10 minutes. After 10 minutes remove from oven and distribute the remaining chocolate chips on top of each muffin.
7. Put muffins back in the oven for an additional 5-10 minutes or until toothpick comes out clean. 
8. Remove from oven and let cool ~10 minutes

Last but not least enjoy!!
