Raspberry-Peach- Mango Smoothie Jar

I am all about snacks and meals that I can fit into a mason jar!! 
When I saw this recipe I am sharing with you today in the Eating Well magazine I knew I could make it into a mason jar recipe!! It was kind of a tight fit but I did it and now I get to share this awesome healthy tasty recipe with YOU!!

Raspberry-Peach- Mango Smoothie Jar

Ingredients...
1 cup frozen mango chunks
2/3 cup plain Greek Yogurt
1/4 cup reduced fat milk (I used water in place of the milk)
1 teaspoon vanilla extra

1 teaspoon chia seeds 
1/4 ripe peach, sliced
1/3 cup raspberries
1 tablespoon unsweetened coconut flakes

Directions...
1. In a food processor or blender combine mango, yogurt, milk/water, and vanilla. Blend until smooth
2. Transfer this mixture to a mason jar.
3. Add in chia seeds first and then top with peach, raspberries, and coconut flakes
4. Screw that lid on and save for later or Enjoy right now!!

Easy Homemade Granola Bars

I have been searching for new recipes that I would enjoy but also my kid's would enjoy too. 

and, as you know I like healthy recipes!! 
My problem was though many granola bar recipes contain nuts and I am finding out I cannot eat certain nuts so my search continued...

I came across a version of homemade granola bars that looked appealing to me but little did I know with a few tweaks it would turn out to be FAMILY HIT!! 

Check out this easy, delicious, and oh so nutritious

Ingredients...
2 cups old fashioned oats
1/2 cup vanilla protein powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup natural peanut butter
1/4 cup honey
1/2 cup milk or almond milk (I use regular milk as I can no longer have anything with almonds)
1 teaspoon vanilla extract
1/2 cup mini chocolate chips 


Directions...
1. Preheat oven to 350 degrees and prepare a 8x8 baking pan with cooking spray. 
2. In a large mixing bowl, combine all ingredients and mix well.
3. Pour mixture into prepared baking pan and use the back of a spoon or spatula (or hands) to help spread evenly in the pan. Press down firmly to make sure it is packed in there good. 
4. Bake for 20 -25 minutes.
5. Remove from oven and let cool ~10 minutes before cutting.
6. Cut into bars/squares whatever you like and serve. 

Makes approximately ~9bars/squares

Last but not least - enjoy because they taste sooo good 
and are good for you too!! 

{key though - stick to your portion - 1 to 2 bars/squares}

Gingerbread Balls

It is the holiday season and cookies, cakes, fudge, ice cream, and more keep entering my house. Then there are the holiday parties where there is food galore...and not always healthy food. Ahh temptations!!

It Happens!! 

But what if you could arm yourself with something that tastes like one of these decadent "treats" yet won't throw all your hard work out the window?

Well look no more...here is a tasty new snack that I am using as my alternative to all the Christmas goodies that keep getting put in front of my face. Plus no baking required!!

Gingerbread Balls

Ingredients...
1/4 cup almond flour
3/4 cup dry old-fashioned rolled oats, gluten-free
1 scoop Vanilla Shakeology
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 1/24 cups pitted dates, packed

Directions...
1. Place almond flour, oats, Shakeology, cinnamon, ginger, and cloves in a food processor. Puls until mixture is the consistency of flour.
2. Add half the dates, pulse until well blended.
3. Add remaining dates, pulse until mixture forms a uniform dough.
4. Shape dough into small balls and place in container.
5. Put lid on container and store in refrigerator for at least 1 hour before serving. 

Easy to make and tastes awesome!!

Oh and it is healthy....

Yields about 18 balls.
Serving size is 1 ball and this is equivalent to 1 yellow container when following the 21 day fix nutrition plan.

Cinnamon Apple Muffins

Here we are again, another week and another 
Fabulous, Tasty, and Clean recipe to share with you all!

I don't know how many people actually look at my posts 
but for those that do I have to say 

YOU WANT TO TRY THIS RECIPE!! 
It is scrump-didly-umptious!!

Ingredients...
2 cups whole wheat pastry flour
2 teaspoons baking soda
2 egg whites
1/2 cup honey
1/4 cup extra virgin olive oil
3/4 cup milk
1/2 cup unsweetened apple sauce
1 medium apple, peeled and well chopped
1 tablespoon cinnamon

Directions...
1. Preheat oven to 350 degrees
2. In a medium mixing bowl, blend flour, baking soda, chopped apples, and cinnamon.
3. In a large mixing bowl whisk together egg whites, honey, oil, milk, and applesauce.
4. Mix dry ingredients in with the wet ingredients and mix well
5. Fill lined muffin tins with mixture and place in oven for 15-20 minutes or until cooked through

As most of you know I like to make recipes that not only my husband and I will enjoy but also my kids. All approved so this recipe is going in the recipe box!!



It was a rainy windy day here so my kids and I spent some time watching movies, playing games, and COOKING! I love to get them involved with however I can. Here is a glimpse into some of what we made - We the Cinnamon apple muffins, waffles, and this other egg bowl thing (will post this one soon too!) All were clean eating recipes because not only do I want to eat healthy but I want my family to as well!

Banana Oatmeal Protein Bars


Who doesn't love a quick, easy, and healthy Snack? 

I do, I do!!

here is a new favorite of mine

Banana Oatmeal Protein Bars

Ingredients...
2 Medium Ripe Bananas
1 Cup of Oatmeal
1 Scoop Protein Powder

Directions...
1. Preheat oven to 350 degrees and coat a cookie sheet with non-stick cooking spray
2. Mash peeled  bananas in a bowl with a fork
3. Add scoop of protein powder and mix some more
4. Mix in the oat and fold to make sure completed mixed together
5. Use a spoon to drop the dough on the cookie sheet and press slightly to flatten
6. Bake at 350 degree for 15-20 minutes or until golden brown. If a little mushy yet then bake for a little while longer.

Note: You can also add in raisins, pumpkin spice, pumpkin puree, cranberries, walnuts, slivered almonds, etc.

High Protein Chocolate Peanut Butter Snack Bars (21 Day Fix Recipe)

As you know I am currently in the middle of the 21 day Fix program. Loving it is an understatement - simple fitness, simple nutrition makes living a healthy life a whole lot easier!! 

What is also fantastic about this program is the creator, Autumn Calabrese, incorporated how to have your cake and eat it too!! Well maybe not cake but she does teach you how you can incorporate certain replacement meals and "treats".  Today I am sharing with you one of my latest recipes I tried over the weekend and lets just say we all went crazy over how awesome these snack bars were.  

High Protein 
Chocolate Peanut Butter Snack Bars

Ingredients...
4 scoops Chocolate Shakeology
2 cups quick-cooking old-fashioned rolled oats
1/3 cup chopped raw peanuts
1/2 cup golden raisins
1 cup unsweetened almond milk
1/2 cup natural creamy peanut butter

Directions...
1. Combine Shakeology, oats, peanuts, and raisins in a large mixing bowl; mix well.
2. Add almond milk and peanut butter; mix well.
3. Press mixture into an 8x8 inch baking pan; 
cover and refrigerate for at least 3 hours
4. Cut into 24 bars

Serving size equals 1 BAR
If you are following the 21 day Fix Eating Plan this equals ONE YELLOW CONTAINER. 
In the program "Treats" can be used in place of one yellow container three times a week!

Oatmeal Cookies with Chocolate Morsels and Toasted Pecans

Who doesn't love cookies?   Well I guess not everyone does but my Horcher clan sure enjoys them! The only problem though is that most store/bakery bought cookies contain all kinds of junk. Well today I am sharing with you a cookie recipe that is not only a healthy recipe but also is in a Fitness Nutrition Plan called the 21 Day Fix (for more details about the Fix - click here). In this program you follow a workout program but you also learn proper portion control by using a color coded container system. Needless to say I am very thankful for the program because these cookies are GREAT!! 


So, here you go a new recipe to add to your recipe box!!


Oatmeal Cookies with Chocolate Morsels and Toasted Pecans

Ingredients...
1 cup old fashioned rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1 cup unsweetened applesauce
1/4 cup semisweet chocolate morsels
1/4 cup toasted raw pecans, chopped

Directions...
1. Preheat oven to 350 degrees
2. Lightly coat baking sheet with non-stick cooking spray, set aside
3. In a medium bowl combine oats, cinnamon, and salt; mix well
4. Add applesauce, morsels, and pecans; mix well
5. Drop 1 tablespoon of mixture onto prepared baking sheet, flatten with back of spoon
6. Bake for 14-16 minutes or until firm

These cookies were a perfect snack for myself and my family!!
We all loved them which is always a huge bonus!! I did find that they were still a bit gooey after the bake time but as I let them sit out they got harder.

Today I have a super yummy shakeology recipe to share with you that also incorporate one of the recommended P90x supplements as well....
