Chicken Quinoa Salad

Who doesn't love good food and better yet doesn't food taste that much better when it looks REALLY GOOD???

Well check out this creation of mine. Last week I made it with pasta and this week I wanted to make it healthier and decided to try it with quinoa and well it is even better!! This has been my lunch almost the entire week and I am looking forward to more of it this week!!

Ingredients...
1 pint cherry tomatoes cut in half or sliced
1 bunch scallions, chopped
2 stalks celery, chopped
1/12 cups cooked Quinoa
8 ounces cooked chicken
1 cup cheddar cheese
1/4 cup Olive Oil
2 tablespoons Greek Seasoning (I made my own)

Directions...
Mix all ingredients together except cheddar cheese.
Add cheddar cheese in last and mix well.
Chill in refrigerator for at least 1 hour before serving

It is so nice too when the recipe is as simple as this one!!
So your last step is to enjoy and then tell me all about it!!

Banana Oatmeal Protein Bars


Who doesn't love a quick, easy, and healthy Snack? 

I do, I do!!

here is a new favorite of mine

Banana Oatmeal Protein Bars

Ingredients...
2 Medium Ripe Bananas
1 Cup of Oatmeal
1 Scoop Protein Powder

Directions...
1. Preheat oven to 350 degrees and coat a cookie sheet with non-stick cooking spray
2. Mash peeled  bananas in a bowl with a fork
3. Add scoop of protein powder and mix some more
4. Mix in the oat and fold to make sure completed mixed together
5. Use a spoon to drop the dough on the cookie sheet and press slightly to flatten
6. Bake at 350 degree for 15-20 minutes or until golden brown. If a little mushy yet then bake for a little while longer.

Note: You can also add in raisins, pumpkin spice, pumpkin puree, cranberries, walnuts, slivered almonds, etc.

Roasted Root Medley

This recipe I have seen posted so many times by those people who have done the BeachBody 21 Day Ultimate Reset.  It always sounded yummy, however I have to be honest I was not 100% on eating beets!  Have I ever eaten beats?  I am not so sure all I can say is I have now EATEN BEETS!!!!  Later this year I too plan on taking part in the Ultimate Reset so I have been slowly trying some of the recipes from the program.   

Well after having this creation, I have to say it will be joining our recipe box.  I loved it!! 
My husband did too! My kids picked through it but still ate most of it.  



Roasted Root Medley





Ingredients...
1/4 medium-sized yam, washed and cut into 1-inch chunks
1/2 carrot, washed and cut into 1-inch chunks
1/4 yellow onion, peeled and cut into large wedges
1/2 large beet, washed and cut into chunks
2 teaspoons EVOO (extra virgin olive oil)
Himalayan salt to taste

Directions...
1. Preheat oven to 400 degrees.
2. In a large bowl, toss all ingredients together.
3. Spread on a cookie sheet and bake for 40-50 minutes or until tender, turning once or twice to prevent burning.

Serves 1

Serve with your favorite meal as a side!
