Our Favorite Quesadillas

This one is a favorite of my daughters. 

I make the meat filling ahead of time and then store in fridge or freezer. 

When she is in the mood for a quesadilla she puts it together and voila dinner or sometimes a snack is served!! 


Ingredients (makes ~ 4 quesadillas)

Meat Filling

  • 1 lb lean ground beef
  • 1 tsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ cup water
  • 4 cup diced onion

For serving

  • tortillas
  • shredded cheese (our fav is Mexican cheese blend)
  • salsa
  • guacamole
  • tortilla chips
  • shredded lettuce
  • diced tomatoes (or homemade pico di gallo)

Instructions

  1. Cook the meat filling

  • Heat olive oil in a skillet over medium heat.
  • Add onion and cooke for ~2-3 minutes  
  • Add ground beef and cook until browned, making sure to break into small pieces
  • Stir in chili powder, cumin, garlic powder, paprika, salt, and water.

      When it is time to build your quesadilla:

      Fill quesadilla with meat, sprinkle cheese and any other inside toppings. 

      • Cook 2-3 minutes per side until crispy and cheese melts (have patience here, you want the cheese to melt throughout). 
      • Slice into triangles.
      • Serve with remaining fixings
