This one is a favorite of my daughters.
I make the meat filling ahead of time and then store in fridge or freezer.
When she is in the mood for a quesadilla she puts it together and voila dinner or sometimes a snack is served!!
Ingredients (makes ~ 4 quesadillas)
Meat Filling
- 1 lb lean ground beef
- 1 tsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ cup water
- 4 cup diced onion
For serving
- tortillas
- shredded cheese (our fav is Mexican cheese blend)
- salsa
- guacamole
- tortilla chips
- shredded lettuce
- diced tomatoes (or homemade pico di gallo)
Instructions
Cook the meat filling
- Heat olive oil in a skillet over medium heat.
- Add onion and cooke for ~2-3 minutes
- Add ground beef and cook until browned, making sure to break into small pieces
- Stir in chili powder, cumin, garlic powder, paprika, salt, and water.
When it is time to build your quesadilla:
Fill quesadilla with meat, sprinkle cheese and any other inside toppings.
- Cook 2-3 minutes per side until crispy and cheese melts (have patience here, you want the cheese to melt throughout).
- Slice into triangles.
- Serve with remaining fixings
