Cinnamon Apple Muffins

Here we are again, another week and another 
Fabulous, Tasty, and Clean recipe to share with you all!

I don't know how many people actually look at my posts 
but for those that do I have to say 

YOU WANT TO TRY THIS RECIPE!! 
It is scrump-didly-umptious!!


Clean Cinnamon Apple Muffins, clean eating, healthy eating, clean desserts, clean muffin recipes, healthy snacks, clean snacks

Ingredients...
2 cups whole wheat pastry flour
2 teaspoons baking soda
2 egg whites
1/2 cup honey
1/4 cup extra virgin olive oil
3/4 cup milk
1/2 cup unsweetened apple sauce
1 medium apple, peeled and well chopped
1 tablespoon cinnamon

Directions...
1. Preheat oven to 350 degrees
2. In a medium mixing bowl, blend flour, baking soda, chopped apples, and cinnamon.
3. In a large mixing bowl whisk together egg whites, honey, oil, milk, and applesauce.
4. Mix dry ingredients in with the wet ingredients and mix well
5. Fill lined muffin tins with mixture and place in oven for 15-20 minutes or until cooked through

As most of you know I like to make recipes that not only my husband and I will enjoy but also my kids. All approved so this recipe is going in the recipe box!!



It was a rainy windy day here so my kids and I spent some time watching movies, playing games, and COOKING! I love to get them involved with however I can. Here is a glimpse into some of what we made - We the Cinnamon apple muffins, waffles, and this other egg bowl thing (will post this one soon too!) All were clean eating recipes because not only do I want to eat healthy but I want my family to as well!

Oatmeal Cookies with Chocolate Morsels and Toasted Pecans

Who doesn't love cookies?   Well I guess not everyone does but my Horcher clan sure enjoys them! The only problem though is that most store/bakery bought cookies contain all kinds of junk. Well today I am sharing with you a cookie recipe that is not only a healthy recipe but also is in a Fitness Nutrition Plan called the 21 Day Fix (for more details about the Fix - click here). In this program you follow a workout program but you also learn proper portion control by using a color coded container system. Needless to say I am very thankful for the program because these cookies are GREAT!! 


So, here you go a new recipe to add to your recipe box!!


Oatmeal Cookies with Chocolate Morsels and Toasted Pecans

Ingredients...
1 cup old fashioned rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1 cup unsweetened applesauce
1/4 cup semisweet chocolate morsels
1/4 cup toasted raw pecans, chopped

Directions...
1. Preheat oven to 350 degrees
2. Lightly coat baking sheet with non-stick cooking spray, set aside
3. In a medium bowl combine oats, cinnamon, and salt; mix well
4. Add applesauce, morsels, and pecans; mix well
5. Drop 1 tablespoon of mixture onto prepared baking sheet, flatten with back of spoon
6. Bake for 14-16 minutes or until firm

These cookies were a perfect snack for myself and my family!!
We all loved them which is always a huge bonus!! I did find that they were still a bit gooey after the bake time but as I let them sit out they got harder. 

and if you are following the 21 Day Fix program, in the 21 Day Fix Eating Plan Guide 2 cookies is equal to 1 yellow container.
