Baked Chicken with Tarragon and Dijon Mustard

When your kid asks for seconds at dinner you know the recipe is a KEEPER!! 

I kid you not, my son Leo asked for Seconds of our dinner tonight!! This was a new recipe I was trying out so honestly I think my mouth hit the table!! New recipes as you know can go either way with the family!! Not everything we try we like but tonight this chicken dish was a HIT!!


Any mom would love to hear 
1. her child is eating their dinner with no complaints 
2. her child asking for more!!

This is a healthy dish that I am proud to serve my family!!
I give you the recipe for...
BAKED CHICKEN with TARRAGON & DIJON MUSTARD

Ingredients...
4 tablespoons EVOO
1/3 cup Dijon Mustard
2 tablespoons chopped fresh tarragon or 1 tablespoon dried tarragon
1/2 teaspoon ground pepper
6 chicken breasts or 12 chicken breast tenders
1 cup dry breadcrumbs

Directions...
1. Preheat oven to 425 degrees
2.  In a shallow bowl add EVOO, Mustard, Pepper, and Tarragon. Mix until combined
3. In a plastic zip baggie add the bread crumbs (or you can do another shallow dish of bread crumbs)
4. Take chicken and place in shallow bowl with mustard mixture and coat well. Then transfer chicken to either baggie or dish of bread crumbs and coat. 
5. Transfer well coated chicken to roasting pan or large baking dish
6. Cook for 35-45 minutes or until cooked thoroughly.
7. Serve immediately and ENJOY!!

Tonight as I said this is what we had for dinner. I paired it with a serving of green beans which I steamed.

Chocolate Yogurt Shakeology with Berries

Often I find myself having a hard time coming up with healthy snacks for my kids.  In the past they had all the typical sugar loaded fruit snacks, cookies, etc. But since I have learned more about clean eating and adopted the principles for myself I of course have incorporated these ideas into their daily diet too. Not all snacks I find or make for them are a hit so I am always open to new ones.  Lately I have been looking for snacks where Shakeology is used.  My daughter loves drinking my Shakeology shakes but I thought if I can start incorporating Shakeology in their diet on a more consistent basis I can do wonders for their bodies.  This led me to today's recipe - Chocolate Shakeology Yogurt with Berries.


Ingredients...
1 scoop chocolate shakeology
1 cup Greek Yogurt
drizzle honey
1/2 cup fresh berries

Directions...
Mix the yogurt and shakeology together until a pudding like consistency is reached.  
Fold in fresh berries and a drizzle a bit of honey on top
Enjoy!!

A delicious "treat" without the guilt.  Another Kid Tested, Mom approved recipe!!

Cauliflower Pizza Crust

Many times I have seen this recipe and I always thought there is no way my family will eat this - they want the real thing - the real pizza with the bread crust.  Well let me tell you, pizza tastes so much better with this type of crust, it has a big YUM attached to it!!


Cauliflower Pizza Crust
here crust has a Spinach Basil Pesto sauce on it


Ingredients...
2 cups cooked, cauliflower
2 cups shredded mozzarella cheese
2 eggs, beaten
2 teaspoons dried oregano
1 teaspoon crushed garlic (fresh is best)
1 teaspoon garlic salt
olive oil (optional)
Pizza Sauce, shredded cheese and choice of your toppings

Instructions...
1. Take the cooked cauliflower and add to food processor.  Pulse until it looks like a grain. Do not over pulse or you will puree the cauliflower.  
2.  Preheat oven to 450 degrees. Spray pizza tray with non-stick cooking spray or use a pizza stone and then no spray is needed.
3. In a medium bowl combine egg and mozzarella, mix.  Add oregano, crushed garlic, and garlic salt. Mix.  Add in cauliflower. Mix

4. Transfer mixture to pizza tray or pizza stone.  using your hands, pat out cauliflower dough to fit our tray/stone.  
Optional: brush olive oil over top of mixture to help with browning
5. Bake at 450 degrees for 15 minutes
6. Remove from oven
7. To the crust add sauce, toppings, and cheese. Place under broiler at high heat until the cheese melts (~ 3-4 minutes)
Note: Toppings need to be precooked since you are broiling only for a few minutes.  

I have to be honest, this turned out far better than I expected!! I do believe next time I need to cook the crust for bit longer to see if I can get it more firm.  The edges were great but the middle was a bit mushy.  Trust me, it was still delicious, not complaining at all.  I had to use a fork and knife and my kids don't like to do that when it comes to pizza.  hello you try explaining crust to a 4 and a 2 year old : )

Chicken Fingers and Fries

Finding clean recipes that my kids will love is not always the easiest thing to do. Dinnertime at our house can either be a success or a battle.  This recipe was won over by half the crew, the other half is still on the fence in particular about the fries.  Me personally, I could have eaten the whole batch of fries!!!!

Chicken Finger and Fries


Ingredients...
Ezekial or Whole Wheat Bread
1/4 cup parmesan cheese
garlic powder
onion powder
Italian seasoning 
4 Egg whites


Directions...
1.  Preheat oven to 350 degrees. 
2. Toast bread, break up into pieces and put in the food processor. Add 1/4 cup Parmesan cheese, garlic powder, onion powder, and any other spices you like.  Process until fine.
3.  Cut chicken breast into strips.  
4.  Beat 4 egg whites in shallow bowl.
5.  Dip chicken strips in egg and then in bread mixture.
6. Bake at 350 degrees for approximately 30-35 minutes or until cooked through.

We had this for dinner tonight and I think my family thought I fell off the healthy eating wagon...little did they know they were eating a CLEAN RECIPE that I found. I also paired the chicken fingers and fries with a side of green beans and carrots.  This was a very easy dinner to make and did not long to cook.  There is no excuse for not eating healthy!!
