Meal Planning - Dec.2-8, 2013

Hi There!!

I have decided I am going to make things super easy and just simply post my meal plans each week in their own separate post.  

Here you go...

Tomorrow starts Today!!

Tomorrow is a big day as my little guy will be starting school again.  This year he will be attending a full day preschool program and I have to say I am quite nervous.  I am nervous about how he will do and I am nervous about our normal routine will now be changed.  My kids are very  much like me - we like knowing what to expect so routines work well for us. Tomorrow we enter into uncharted waters.  

I have confidence though the planning I have done today for tomorrow will pay off.  My first step was to get our meal plan in place.  On my meal plan below I am doing a Shakeology 3-day cleanse starting Monday.  My children and husband of course will not be following the cleanse so I will be making meals separately for them.  Plus  my son will now be having his lunch at school so we will need to pack that and his snacks for the day.  I love that schools follow the eat every 2.5-3 hours eating rule!! 



Next was to make sure I had all my son's paperwork done for school.  Even though he is PreK goodness there is a still a lot of paperwork to fill out.  All of course which is necessary so I am not complaining one bit.  I would rather the school be over prepared than not prepared enough.  

Ahh and now the part that I would not think my 5 year old would care - his first day of school outfit.  I choose an outfit that I thought would look adorable on him but he wanted something more cool.  He wanted something plain so he said until I found out he wanted his Skylander's T-shirt.  No Way, not for first of school photos.  I don't know why but I like my little guy to be in his 3 button collared shirts for school. He just looks so darn cute.  

Well there you have it, my planning will hopefully set us up for success as we head to school tomorrow.  
All I will hopefully have to worry about is if he gets out of the car.

Chicken Fingers and Fries

Finding clean recipes that my kids will love is not always the easiest thing to do. Dinnertime at our house can either be a success or a battle.  This recipe was won over by half the crew, the other half is still on the fence in particular about the fries.  Me personally, I could have eaten the whole batch of fries!!!!

Chicken Finger and Fries


Ingredients...
Ezekial or Whole Wheat Bread
1/4 cup parmesan cheese
garlic powder
onion powder
Italian seasoning 
4 Egg whites


Directions...
1.  Preheat oven to 350 degrees. 
2. Toast bread, break up into pieces and put in the food processor. Add 1/4 cup Parmesan cheese, garlic powder, onion powder, and any other spices you like.  Process until fine.
3.  Cut chicken breast into strips.  
4.  Beat 4 egg whites in shallow bowl.
5.  Dip chicken strips in egg and then in bread mixture.
6. Bake at 350 degrees for approximately 30-35 minutes or until cooked through.

We had this for dinner tonight and I think my family thought I fell off the healthy eating wagon...little did they know they were eating a CLEAN RECIPE that I found. I also paired the chicken fingers and fries with a side of green beans and carrots.  This was a very easy dinner to make and did not long to cook.  There is no excuse for not eating healthy!!
