Crustless Spinach Quiche

Now that the chickens are laying eggs I am looking high and low for recipes that incorporate eggs!  I never really had much quiche growing up so this is something new to me.  This particular recipe intrigued me because of the addition of spinach.  I love spinach!! 



 Crustless Spinach Quiche

Ingredients...
1 teaspoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 link Italian Chicken sausage
12 egg whites
1/2 cup shredded cheddar
1/2 cup frozen spinach, thawed and drained VERY WELL or 1-2 cups fresh spinach 
salt and pepper to taste

Directions...
1. Heat oven to 350 degrees
2. In a large skillet heat olive oil, onion, and garlic.  saute until lightly browned
3. Cut sausage into small cubes and set aside
4. In a large mixing bowl, whisk egg whites
5. Add cheese, sausage, spinach, sauteed onion and garlic and salt and pepper
6. Lightly spray a 9 inch glass pie dish with non-stick cooking spray and pour mixture into it. 
7. Place dish in oven and bake 40-45 minutes until center is no longer liquid.
Makes 4 servings

If you use frozen spinach your cooking time may take longer, I know mine did so that is why I started using the fresh spinach.  

You can have this recipe for dinner or breakfast. I am stuck on it for dinner but then we have the leftovers for breakfast (well usually my husband does, he loves it!!)

Clean Eating Pancakes

Had a plan all in place for my kids' breakfast this morning (also my morning snack).  I was going to make them homestyle waffles (clean eating version of course) but they had their minds set on PANCAKES!! Well what my children didn't know is that mommy forgot to get the ingredients for pancakes the last time I was out at the grocery store.  I make my pancakes from scratch anymore.  I am so done with the boxed varieties.  Most have too many other non-clean ingredients and it is less expensive to make your own batter. 

Oh what to do, what to do...google search for a clean pancake recipe  using the ingredients you DO have on hand.  Voila - recipe found, made, and loved by ALL!! 

Clean Eating Pancakes




Ingredients...
1 1/2 cups oat flour (or flour of your choice)
1 tablespoon demerara
1 tablespoon Baking Powder
1/2 teaspoon Salt
2 teaspoon cinnamon 

1 teaspoon vanilla extract
4 egg whites
1 - 1 1/2 cups almond milk (or milk of your choice)

Directions...
Preheat griddle to medium heat.
Mix oat flour, demerara, baking powder, salt, and cinnamon in a bowl.
Whisk together egg whites, vanilla extract, and milk.
Add wet ingredients to dry ingredients and mix together.
Spray griddle with non-stick butter spray.
Scoop batter onto griddle. Cook 3-5 minutes per side.

Makes 12-14 pancakes.

I had mine with peanut butter and blueberries.  My kids had theirs with pure maple syrup and blueberries.  I love love love knowing I am providing myself and my kids with nutritious foods.

Picante Frittata

As I stated  yesterday I am following a modified version of the Eat Clean Diet's Stripped program.  One of the recipes included in the meal plan is the Picanta Frittata.  Last week was my first attempt at making a frittata and that one was awesome so I was up for the challenge of trying another new frittata recipe this week.  This recipe comes directly from Tosca Reno's Eat Clean Diet Stripped book, page 289.

I was very happy with this dish although I have to say the Be a Master of your Own Frittata recipe from last week is still my favorite Frittata.  This one was good don't get me wrong and it took a whole lot less time to prep than the other.  Time saver - Bonus!! I will definitely be adding this to my recipe box.

Be A Master of your Frittata

I made this scrumptious breakfast on Monday even though I was suppose to make another type of Frittata I goofed and made this one. It was a great mistake let me tell you because the flavor in this meal was AMAZING!! I got this recipe from Tosca Reno's Eat Clean Diet Stripped book (pg. 205). 


I am doing a modified version of the stripped plan this week. I am happy with my weight where it is but I am not happy with some of my actions lately.  I have not been making the best decisions and have been giving in a LOT more.  I need to whip myself back and so I thought this would help.  

Regardless if you want to lose weight or not this breakfast is something to talk about.  You have a lot of choices on how you want to make it and it is great for breakfast or any other meal of throughout the day.  

Be A Master of your Frittata

Ingredients...
First you start with your base:
1 egg
5 egg whites
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
clean eating cooking spray

Frittata 
Choose 3/4 cup to 1 cup of Veggies, Protein, and starches

Veggies (these can be raw or cooked):
Asparagus, bell peppers, chili peppers, greens (arugula, kale, mustard, spinach), leeks, mushrooms, scallions, yellow squash, zucchini

Proteins (cooked):
Bay shrimp, prawns, chicken breast, lean pork, salmon, trout 

Starches and Grains (cooked):
Potatoes (baby red, yukon gold, or russet)
Quinoa
Brown rice

Choose 1 teaspoon of chopped fresh herbs:
Basil, chives, cilantro, dill, parsley, tarragon

Directions...
1. Move rack in oven to second highest position. Preheat to broil.
2. Whisk together frittata base ingredients except cooking spray. Chop selected veggies into one-inch pieces.  Chop precooked proteins and potatoes into one-inch pieces. Chop herbs if using. 
3. Heat an eight-inch non-stick, oven-safe saute pan over medium heat and coat with cooking spray.  Add veggies to pan and saute for two minutes until they start to soften.  Add remaining ingredients (proteins, starches/grains) then pour egg mixture into pan.  Sprinkle in herb of choice and stir with rubber spatula.  Cook for 2 to 3 minutes, or until egg mixture is set on bottom and beginning to set on top. 
4. Place pan into oven and broil for two minutes, until lightly browned and fluffy.  Remove frittata from pan and cut into four wedges. 

Serves 2

Clean Eating Home-Style Waffles

My family loves BREAKFAST especially when I am making it!! Aw heck, my family loves to eat anytime of day as long as I am making it!! One of our favorite breakfast meals though is waffles. We have had a waffle iron for years now and I seriously love it!! So of course if you have a waffle iron you should use it.  In the past we used it all the time but over the past year we got away from it.  Why?  I use to buy the packaged waffle mix and once I started to look more in depth at the foods we were eating all those easy waffle mixes had to be thrown out. If you have never looked then I highly recommend you look at the ingredients on those packages.  There is a whole lot of extras that our bodies just don't need.  This unfortunately meant no waffles at the Horcher house.  


I have not let that get me down however and I have been on the lookout for a waffle recipe that was clean.  I have tried several and well none of them were really all that great.  I was searching thegraciouspantry.com's site (love her site by the way, if you are a clean eater I would highly recommend) and what do I find but her very own recipe.  Hello why did I not check there in the first place!! I should have known if it was on her site it would taste great!! 

Well another kid, mommy, and husband tested recipe and of course high approval rating on the clean ingredients!! Like I said this recipe is from thegraciouspantry.com.  I did make changes to the amounts of ingredients however based on our own preferences. I have been playing around with the recipe for a few weeks now.  Here is what we ended up with:   

Clean Eating Homestyle Waffles


Ingredients...
1 1/2 cups whole wheat pastry flour
1 1/2 cups skim milk (or any milk you like to use)
2 egg whites
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon baking powder


Directions...
1. Preheat your waffle iron. I lightly sprayed my iron with cooking spray or you can brush on olive oil.  If you do not have a nonstick iron and choose not to spray or use olive oil these will stick to your iron.  Let me tell you it will turn into a whole big mess.  Trust me!! 
2. Mix all the ingredients in a bowl and let sit for 5 minutes
3. Laddle the mixture onto your waffle iron and cook until golden brown
4. Top with pure maple syrup, Greek yogurt, fresh fruit, peanut butter. nuts, honey, etc.  

My rule of thumb is to always pair a complex carbohydrate and protein at each meal sitting so in my case I have been having these with natural peanut butter and some type of fresh fruit.

Note: An alternative is to have these waffles for lunch too. My son loves making his peanut butter and jelly sandwiches with these waffles now.  I thought it was strange at first but then I tried it too and it gives it a little something extra rather than the whole wheat bread we normally use.

Iced Mocha Shakeology Style



Vanilla Shakeology has me so excited because it is so much fun to try all these amazing new recipes and be loving every single one of them.  Today I wanted to change up my Vanilla Latte that I have been having daily and so I decided to have a Iced Mocha...but get this...it is also done Shakeology style.  









ICED MOCHA SHAKEOLOGY STYLE

1 scoop Vanilla Shakeology
1/2 cup unsweetened almond milk
1/2 cup brewed coffee, cooled
1 teaspoon chocolate Shakeology 
(recipe called for Cocoa but I use Chocolate Shakeology in place of cocoa anymore)
ice to taste
blend & serve


Ooh La la - 
move over Starbucks and Dunkin because there is a new Mocha in town!!

Pepper Egg Scramble

Love  me some eggs - love them so much that I even got chickens so I can have access to eggs all the time.  Are you an egg fan? Well here is another great egg recipe that is good for breakfast or a snack.  

Egg Pepper Scramble

Ingredients...
1 bell pepper
1 tablespoon olive oil
4 eggs
sea salt and black pepper, to taste

Directions...
1. Cut the bell pepper in slices from top to bottom, to resemble rings (usually you get 4 rings).
2. Prepare a skillet with 1 tablespoon olive oil and heat over medium to low heat.
3. Add pepper rings and increase heat to medium
4. In each ring crack an egg and allow it to spread out evenly in the ring. Season with salt and pepper to taste. (personally I used only the egg whites of the egg and discarded the yolk). You can either leave the egg go for a sunny side up version or scramble it a little while in the pepper. (I scrambled mine a bit)  
5.  Cook for 3-5 minutes for softer eggs and 6-9 minutes for harder eggs (I like mine a big harder so I was able to flip during cooking). 

1 serving is 2 bell peppers

Last but not least enjoy with some hash browns made out of Jicama.  Yes all these recipes follow the clean eating principles that I live by.  Enjoy!!
