Chocolate Peanut Butter Cups

Chocolate + Peanut Butter = HEAVEN!!

Ahh this combination is one of my favorites!! Growing up and well into my adulthood I have always been a sucker for those little chocolate and peanut butter cups. Unfortunately the traditional peanut butter cups are not all that good for you - sorry to be the bearer of bad news!!

The great news is that I now have a  healthy alternative for you!

You can thank me later when your kids start to beg you to make these and you don't have to worry about all the chemicals they are putting in their bodies!! The Chocolate Peanut Butter Cup recipe I have to share with you is made with Shakeology, natural Peanut Butter, and Coconut Oil - that is it!!

Get ready for your mouth to water....

Ingredients....
12 tablespoons coconut oil (divided 6 tablespoons each)
3 packets or scoops of Chocolate Shakeology (divided 1.5 packets/1.5 scoops each)
12 Teaspoons natural peanut butter, divided

Directions...
1. Place 6 tablespoons coconut oil in a microwave safe bowl. Microwave for 30 seconds or until oil is liquified
2. Stir in 1.5 packets or scoops of Chocolate Shakeology. Mix well
3. Using a 12 muffin tin, divide the chocolate mixture evenly between the 12 spots
4. Place muffin tray in freezer for 5 minutes
5. Take the muffin tray out of freezer and on each solid piece of chocolate place 1 teaspoon peanut butter. Spread evenly over each chocolate piece with a knife. 
6. Melt the remaining 6 tablespoons coconut oil in microwave for 30 seconds. 
7. Stir in remaining 1.5 packets/scoops Chocolate Shakeology. Mix well.
8. Now on top of the peanut butter evenly divide the chocolate mixture. 
9. Place the muffin pan in the freezer for 30 minutes. 
10. Remove from freezer and the Chocolate Peanut butter cups should slide out nicely. 

Enjoy!! 

These for sure are a keeper and a great alternative to the traditional peanut butter cups!!

Note: Best to store the chocolate peanut butter cups in the freezer or refrigerator.

Peanut Butter Chocolate Chip Granola Bars

Whether you are a clean eater or not, I have a recipe for you that you and your family will love!! I made this recipe today and it was a huge success for my entire family.  You know I love the recipes that are kid tested, mother approved!! Keeping my family healthy and happy are at the utmost importance to me!! 

What is also important to me is answering the questions I get from my challengers.  Lately I have been hearing a lot of questions regarding healthy snacks and snacks that will satisfy a sweet craving.  My #1 answer to this question is SHAKEOLOGY because it can be a snack and it totally satisfies my sweet cravings (plus I have less and less sweet cravings when I do drink Shakeology).  
But if you need something else then here you go. This snack is also great to wrap up individually and use for on the go! Delicious, convenient, and clean - now that's my kind of snack!! 

Peanut Butter Chocolate Chip Granola Bars





Ingredients...
1/2 cup natural peanut butter
1/3 cup honey
1 egg
2 tablespoons extra virgin olive oil (I bet coconut oil would be amazing in these!)
1 teaspoon vanilla extract
3 1/2 cups old fashioned oats
1/2 cup demerara, turbinado, or sucanant sugar
3/4 teaspoon salt
1/2 cup dark chocolate chips

Directions...
1. Preheat oven to 350 and lightly spray a 9x13 pan
2. Mix the peanut butter, honey, egg, oil, and vanilla extract until well blended
3. In a separate bowl combine oats, sugar, salt, and chocolate chips. Add this to the peanut butter mixture and mix until combined.
4. Press mixture into the 9x13 pan
5. Bake at 350 degrees for 12-15 minutes. Let the bars cool completely before cutting.
Makes ~15 bars

Clean Eating Snacks Ideas

What do you eat for your snacks? Do your snacks leave you feeling full? or wanting more? A tip I learned when I was first introduced to clean eating was to always pair a protein and a complex carbohydrate at eat meal.  This helps sustain your energy and blood sugar thus preventing a crash which often leads to binging!!  You also want to aim for 5-6 meals per day consisting of clean healthy food! You also do not want to forget to keep your portions in check. 




Here are a few ideas for healthy snacks...

apple slices and handful of almonds
Protein shake
sliced veggies (2 cups) and hummus (2 tablespoons)
medium banana and peanut butter
2 hard-boiled eggs with tomato and basil
string cheese and fruit
1/2 cup Greek yogurt and 1/2 cup fruit
Fresh fruit popsicles
Clean granola and peanut butter
salad loaded with veggies and sprinkled with feta cheese and/or nuts
1/2 cup cottage cheese with 1/2 cup berries
Yogurt Parfait
celery with peanut butter (if kids are home add a few raisins for Ants on a log)
Shakeology
apple slices and water packed can of tuna
egg whites with feta, sliced tomato, and spinach
whole grain crackers and nut butter

We all need to eat but if we choose to eat healthy foods then we are setting ourselves up for success.  Planning is key too. If you lead a busy life then having snacks and meals planned and prepared ahead of time will keep you control of what you are eating.  Each week I meal plan and I have to say it has saved me many times!! I follow my plan and stay on track!!
