Tex-Mex Quinoa Bake

Each month when my Clean Eating magazine comes in the mail, I can't wait to dive into and see what new recipes they have for me!!

Easy right, we need quick and easy!!


Well fast forward to the present day and I can tell you I LOVE to COOK!!


It does sometimes take longer than I would like and yes I still on occasion enjoy going out (no drive-thru for me though!!) but no microwave frozen dinners live in my house anymore!! 
Nowadays I look for healthy and simple quick meals to make and if it is a quick one that is a bonus!!

Tonight I want to share with you a recipe I got from Clean Eating Magazine and it is filled with so much flavor my husband went back for seconds and my kids finished their plates no problem!
(parents you know this is huge when there is no whining or nose snubbing at the dinner table!)

I made only a few adjustments to the original recipe

Ingredients...
1 cup quinoa, rinsed
1/2 teaspoon plus 1/8 teaspoon sea salt, divided
1 teaspoon cumin
2 teaspoon EVOO
1 small sweet onion, chopped finely
1 small red bell pepper, seeded and chopped finely
1/4 teaspoon ground black pepper
1 cup frozen corn kernels
1 15oz can black beans, drained, rinsed
5 oz. shredded Mexican cheese blend
1/4 cup fresh cilantro leaves

Directions...
1. Preheat oven to 350 degrees. Mist an 8 inch square baking dish with cooking spray. In a medium saucepan on high, bring 2 cups water to a boil. Stir in quinoa and 1/2 teaspoon salt. Cover, reduce heat to low and simmer for 15 minutes. Remove from heat and let rest covered for 5 minutes. Pour quinoa into a a large mixing bowl. Add cumin and stir to combine
2. While quinoa is simmering, in a large skillet on medium-high heat, add oil and heat. Add onion, bell pepper, black pepper, and 1/8 teaspoon salt. Cook stirring until lightly browned ~ 8-10 minutes. 
Add corn and cook until corn is heated through ~ 3 minutes.  Add beans and cook until heated through ~ 2 minutes. Each time you add new ingredients be sure to continue to mix in the pan. 
3. Add onion and bell pepper mixture to quinoa and mix to combine. Stir in 3 oz of cheese. 
4. Transfer quinoa mixture to prepared baking dish and sprinkle with remaining 2 oz of cheese over top. Bake until cheese is melted ~ 10 to 12 minutes. Let sit for 5 minutes, sprinkle cilantro on top and serve. 

So easy, so delicious, and so good for you!!

Meal Planning Monday June 1-7, 2015

Is it really Monday already?
Is it really June already?
Are both my kids really finishing school this week?

Well the good news is that I LOVE Mondays!

A day to hit the restart button should you need it and another day to remember we are blessed with LIFE!!

June means Summer will officially be here and Summer is my favorite season!! 
Sun, warm weather, more time with my family, cookouts...ahh Summer is so darn wonderful!!

I remember when he was born and now he is getting ready to move onto First GRADE!! Insert tears from momma here - bittersweet tears!! I am so happy for my kids to be growing up, learning, and enjoying life but I am also sad my babies are no longer babies!! 

I can't say it will be an easy week but for sure it will be a memorable one!! 

Well whether I am crying, smiling, or exercising you know me I like to go into my week with a plan in place for my nutrition and exercise routine!! I can tell you when I don't make my plan Sunday I start off Monday grazing. It is crazy how having that piece of paper (my meal plan) in the kitchen and my office totally keeps me on track!! When I don't I either don't eat (which isn't good) or I choose not so healthy options (also not so good). 

What's a girl to do then? Well MEAL  PLAN of course!! So today that is exactly what I did!! 
Here is my plan for the week....
I finished my 8 week hybrid schedule on Sunday and I plan on repeating it starting next week. Turbofire, Chalean Extreme, and PiYo - my Chalene Johnson hybrid I should call it!! 
It totally rocked!!
This week is my Fitness Fun week so I am mixing it all up!! 
Food wise I am trying a few new recipes - 
quinoa crunch yogurt parfait, tex mex quinoa bake, and grilled honey lime chicken.

Homemade Chicken Nuggets

Anyone's kids like chicken nuggets?

My kids have always loved chicken nuggets but finding a homemade recipe they liked was tough. This one is super simple and they seriously cheered when they sat down for dinner tonight!




Ingredients...
4 boneless skinless chicken breasts
1 cup whole wheat flour
coconut oil

Directions...
1. Preheat oven to 450 degrees 
2. Cut your chicken into bite sized pieces or strips depending on what you prefer. 
3. Put your flour in a sealable plastic bag and then add chicken pieces and shake until chicken is covered in flour.
4. Heat coconut oil in a skillet on medium-high heat. 
I had a very thin layer of oil. 
4. Once oil is hot, place chicken in skillet and brown chicken pieces in oil (all sides) and then transfer to baking sheet
5. Bake in oven for approximately 10 minutes.
(Note: you can also skip the baking step and continue cooking the chicken pieces in the oil until baked through). 

Voila your chicken nuggets are now ready to eat!! 

I usually have to make extra because the one batch is devoured within minutes!!
