Ultimate Reset Quinoa Salad

Tasty Tuesday and oh my do I have a tasty recipe to share with you today!!

If you had been following me the past few weeks you know I was doing the Ultimate Reset. This program has taught me so much and I will continue to share with you my journey (be on the lookout for Week 3 Recap later this week!). But for now…let’s talk FOOD!!

Delicious, nutritious, wholesome FOOD!!

My menu has been full of tasty recipes from the Ultimate Reset. The recipe I am sharing with you today comes from this program, the Ultimate Reset!!

NOTE: THIS RECIPE calls for COOKED QUINOA and also has a MARINATE TIME!!

Here you go…

Ultimate Reset Quinoa Salad

Ingredients….
1/2 cup COOKED quinoa
1/2 medium tomato, diced
1/2 medium cucumber, diced
2 tablespoons pitted kalamata olives, chopped (oh my these olives are so darn tasty!!)
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped mint leaves (I leave these out - I like it better without)
1 tablespoon EVOO
1 tablespoon fresh lemon juice
Himalayan salt; to taste
1 teaspoon Bragg Liquid Aminos

Directions….
Combine quinoa, tomato, cucumber, and olives in medium bowl
Combine EVOO, salt, lemon juice, and Liquid Aminos
Pour EVOO mixture over quinoa mixture and toss.
Gently fold in parsley and mint
Cover and let marinate in refrigerator for 2 to 3 hours before serving.

Last step of course it to enjoy!!

I have had this Quinoa salad for lunch, for a snack, and for dinner. I have eaten it at home or on the go (if you eat it on the go, don’t forget your FORK!)

Had this for lunch today with slices of Avocado.
Sometimes instead of avocado I'll top with hummus!!
(and why am I making a duck face - I DON'T KNOW!!)

Mediterranean Chickpea Salad

When you read a magazine do you tear out pages or dog ear things you like?  I tear out pages.  As I was reading my one magazine a few weeks ago I tore out this recipe that sounded right up my alley.  I loved all the ingredients and most I could get fresh.  I particularly loved that the recipe included Chickpeas. LOVE those little things!! and they are so darn good for you!!

Anyway, I have a huge stack of recipes that I find places and always plan on trying but have yet to do so.  Well not this one.  This one made it to the top of my pile.  I actually  made this for the first time last week but have been having it again for lunch this week.  It is a wham bam packed salad - complex carb and protein all in one!! Oh and this is vegetarian too!!

Mediterranean Chickpea Salad




Ingredients...
1 can low sodium chick peas, drained and rinses
1/2 pint cherry tomatoes, quartered
1 cucumber, seeded and chopped
4 ounces mozzarella cheese, cut into 1/2"' cubes
1/4 red onion, finely chopped
2 tablespoons coarsely chopped fresh parsley
1 tablespoon lemon juice
Adobo all purpose seasoning with pepper, to taste
1/4 cup EVOO

Directions...
1. In a medium mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, cheese, onions, and parsley until combined; set aside.
2. In a separate bowl, stir together lemon juice and Adobo. Using whisk, add olive oil in slow steady stream, whisking constantly until oil is well incorporated.
3. Toss olive oil-lemon dressing with reserved vegetables until coated completely.
Serve chilled or at room temperature.

Serves 4, Prep time 15 min, Total time 20 min

Today I had this over a bed of spinach and it was awesome!!

Edamame, Tomato, and Feta Salad with Fresh Basil

Edamame was always a favorite of mine but this recipe takes it to a whole new Level!!!!  I even got a new salad dressing to use on my everyday salads from this recipe!!!!


So, when I found this recipe, it was listed as an appetizer.  I personally have it for lunch.  It is light, refreshing, and it can be taken on the go.  My husband loves it too and even has my father-in-law asking for more!!!!






Ingredients...
3 tablespoons olive oil
2 tablespoon red wine vinegar, or to taste
1 tablespoon water
1 clove of garlic, minced
3/4 teaspoon table salt
1/4 teaspoon black pepper
1 pound edamame (shelled) cooked
10 medium plum tomatoes seeded and chopped
1/2 cup basil, fresh, cut into ribbons
1 small uncooked red onion finely sliced
1/2 cup crumbled feta cheese

Instructions...
Dressing - In a small bowl, combine oil, vinegar, water, garlic, salt, and pepper, set aside.

In a large serving bowl, combine edamame, tomatoes, basil, and onion.
Toss mixture with dressing and sprinkle with cheese.  

Serving size - 1 cup per serving
