Ah, finally a Mexican recipe I can make at home that is also CLEAN!!!! I made this last week and I am just finishing up the last couple bowls of it. My husband and I both are enjoying it! I love, love, love Mexican food and I miss it dearly since we moved from Los Angeles. It just does not taste the same here in Philadelphia!!!! Please if you ever come across a CLEAN Mexican recipe let me know!Ingredients...
1 pound ground Turkey
1 tablespoon olive oil
2 cans rinsed and drained kidney beans
2 cans (14 ounces) chicken broth
2 cups frozen corn
1 cup clean salsa
1 can (4 oz.) chopped green chilies & tomatoes
1 tablespoon chili powder
Cilantro for garnish
Directions....
- Brown 1 pound of ground Turkey in skillet, drain.
- In a large sauce pan, add Turkey, 1 tablespoon olive oil, and kidney beans. Stir.
- Add chicken broth, frozen corn, salsa, and chopped green chilies & tomatoes, and 1 tablespoon chili powder. Stir.
- Bring to a boil; cover and simmer for 10 minutes.
- Serve soup topped with fresh cilantro
Makes 6 servings
Oh and did I mention, this is super easy and quick to make!!!!
