Apple Cinnamon Baked Oatmeal
Ingredients...
2 cups old fashioned oats
1/4 cup light brown sugar
1/4 cup ground flax seed or wheat germ (optional)
1 tablespoon cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups unsweetened almond milk - plain or vanilla
1/2 cup unsweetened applesauce
1/3 cup egg whites
1 tablespoon vanilla
1 large apple diced into 1/2 inch cubes
1/2 cup golden raisins (optional)
Directions...
- Preheat oven to 350 degrees
- Mix all dry ingredients in bowl and stir
- Mix all wet ingredients in bowl and stir
- Add the dry ingredient mixture to the wet ingredient mixture and stir
- Mix in apples and raisins - stir
- Put into 8 x 8 baking dish that has been sprayed with cooking spray
- Bake for 30 minutes
You can also let them sit overnight in the refrigerator and they will become more solid. Your preference. I ate these delicious squares both ways and loved them each and every time!
So the recipe makes 16 squares. I had 2 to 3 squares as a serving.
