Leeann's Pork Loin Recipe

My family loves pork loin and before I started eating clean I would always buy the pre-seasoned roasts that you can get at any grocery store.  Well let me say not all are created equal - a few (very few) I will continue to buy but I was surprised to see what I thought would be your normal seasonings in others was a whole lot more and unfortunately it included a lot of JUNK!! Now my mom always seasoned our meats herself but yes I got lazy and enjoyed not having to prepare and then on top of that wait for the meat to marinate.  NOW my story is different - I will make the time to do it at home because my health and my family's health matters!! 

Bring on my dilemma though - I could never find a pork loin recipe that we all enjoyed.  I found many my husband and I enjoyed but not the kids.  I believe in making one meal and we all eat it.  I am not into making separate meals for individual family members. Thankfully a challenger of mine had seen my one weekly meal plan I created and I noted I needed to find a pork loin recipe.  This is where Leeann comes in...Leeann is a friend of mine from college and she is now currently in one of my challenge groups.  Leeann saw my note and commented that she had a great recipe that was delicious and easy.  so I call this recipe Leeann's Pork Loin recipe because well that is who it came from.  

Leeann's Pork Loin Recipe

1 teaspoon olive oil
1 teaspoon balsamic vinegar
2 teaspoon low sodium soy sauce
1 tablespoon red wine vinegar
1 tablespoon minced garlic
1 pound pork - chops, roast - I've used this marinade with all

1. Place all ingredients in zipper plastic bag and mix. 
2. Add pork to bag and mix around so pork is coated.  
3. Marinate for 2 hours in refrigerator.
4. Cook on the grill over medium heat for 20-25 minutes or bake in the oven on 375 degrees for 40 minutes (personally I prefer the grilling option). 
5. Slice and Serve!!

We had this for dinner tonight and I served it with Mashed Sweet Potatoes and fresh Green Beans from our garden that I steamed.  Love this dish and so did the family. All our plates were cleaned tonight!!! 

Eating healthy really does not have to be a chore like so many people make it out to be.  I could have prepared the meat the night before and left it in the fridge to marinate until we were ready to throw it on the grill (have one in there now to make tomorrow night so that I can freeze it for a quick grab and go meal when we need it).  If you take a few minutes and plan for your meals you can and will see a big difference in your waist line, your appearance, and best of all how you FEEL.
