Shakeology Peanut Butter Cups

Easter is Tomorrow and we all know there will be many temptations after the Easter Bunny fills our baskets.  BUT...there is a way to "indulge" and still stay on the healthy train.  

Who says you can't have Peanut Butter Cups if you are eating healthy?!?!

Well do I have the solution for you...Shakeology Peanut Butter Cups!!!!

Here are 2 variations of the Shakeology Peanut Butter Cups for you depending on your goals. The second one requires that you buy PB2 and will also be much lower in fat as well

Shakeology Peanut Butter Cups
shakeology peanut butter cups8 oz. water
2 scoops Shakeology 
2 Tablespoons peanut or almond butter
1-2 packets of stevia, or a few drops to taste  (Not really necessary unless you like it sweeter - personally I leave this part out)
Blend in blender. Spray mini muffin pan. Pour or spoon mixture in cups. Freeze until firm. Pop from pans and store in ziploc bag in freezer. This makes 18 mini cups

Alternate Shakeology Peanut Butter Cups
1 scoop/packet chocolate Shakeology
12 tablespoons chocolate PB2 (low fat, high protein powdered peanut butter)
4 tablespoons unrefined coconut oil
12 mini foil cupcake holders
In a microwavable dish, melt coconut oil. Stir the PB2 into the coconut oil and set aside. In another small dish, place Chocolate Shakeology and gradually add water to get the Shakeology into a thick, pudding-like consistency. Now, take the foil liners and put a tiny amount of the PB2/coconut oil mixture on the bottom of the foils. Next, add a layer of the Shakeology. Finally, top off with another layer of the PB2/coconut mixture. Pop in the freezer for at least 30 minutes and enjoy!
